Worming My Way Through Emails

Totally freaking out by how many emails I have to respond to [and blog] in the 40 minutes I have before bedtime. Time is being sucked out from under me!!

But at least I had a good day!

I was a hungry, hungry hippo this afternoon. I think just the soup and produce wasn’t enough bulk! Or those 8 miles are still hanging out on my metabolism.

I made a decontructed trail mix for a snack – almonds, dried raspberries, a brazil nut and a Hershey kiss. [Plus a few xtra almonds!]

Sorry for the crappy iPhone photo!!

Photo (1)

And some dried peaches from the Foodbuzz fest! LOVED these Frog Hollow Farm treats. They tasted fermented and were so good after a good chew!

Photo (2)

After work I headed straight to the Charlotte Dietetic Association meeting! Tonight’s topic was composting and growing vegetables at home. Fun!

We got to check out a WORM farm!

IMG_0082 (640x480) (2)

IMG_0081 (640x480) (3)

Wheee!

IMG_0080 (640x480) (3)

The session was more of a Q+A but I came home with some really great handouts that I am tucking away for when we have another plot of earth to dig into someday in a new city.

Dinner was provided from Salsarita’s!

[If you’re wondering, I’m proud of my blog and just snap photos and say "I have a food blog!" Most people get it 🙂 ]

IMG_0068 (480x640)

All the condiments

IMG_0071 (640x480) (3)

Los chips

IMG_0073 (480x640) (2)

Fruit for dessert!

IMG_0072 (640x480) (2)

I made an awesome salad with all the ingredients. Love "assemble yourself" meals!!

IMG_0075 (640x480) (2)

I passed on the tortillas and shells in favor of salad of rice and black beans with lettuce, tomatoes, salsa, sautéed squash, a dollop of sour cream, a blog of quac and a few chips. Plus fruit for my palate-cleansing dessert.

It was a full plate, but so nutrient-dense!

IMG_0067 (640x480)

I came home to discover that we have a NEW SHOWER DOOR!!!!

IMG_0085 (480x640)

I can already tell what a great investment this will be because our old shower door was 100% 1982 (and filthy dirty with scum I could not get off!)

[This photo is from the sellers’ images from 2006! Note how we have a new toilet in there too now – a fix from 2007!]

Bath

We have a new floor too! Our old one was torn.

IMG_0086 (480x640)

We’re just replacing a few more neon gold fixtures and the house will be all ready!

OK, on to my email list!!!

xoxo

    Hey Kath!

This question may sound RIDICULOUS, but I just made kale chips last night for the first time and may be obsessed already 🙂 and was wondering whether you think I’d be successful trying to make a variation with other lettuce family leaves (i.e. spring mix, romaine, etc), or if the potato-chip-ish taste is unique to kale?

I don’t think so…. Kale is so thick and chewy and the other lettuces would probably just wilt.

    Hi Kath or Anyone Else,

I was wondering if anyone could tell me about the Vitamix machine. I keep hearing things about how much better it is than other blenders, but it seems SO EXTREMELY expensive!

Is it worth spending so much money for?

    I entered HEAB’s Vitamix giveaway a few weeks ago, but of course I didn’t win. 🙁 🙁

    Thanks for any advice!

      Anon,

I told someone else the other day – if you use your blender daily, then I do think (based on using it once) it would be a good investment. However, if you rarely use a blender then I wouldn’t bother. Kind of like the Garmin and running. If you love to blend, I think you will be very very impressed as how powerful and thorough the Vita-mix is. And how versatile. And lightweight. And easy to clean. HTH!

Hello! I too agonised, then took a deep breath and bought a Vitamix a while ago- its a really great appliance, amazing power, and I think it can, potentially save one alot of money- e.g. making your own nut butters/powdered nuts/flour/soups/smoothies etc- I think it has cut down on the number of other tools I need in the kitchen, so I’ve got some money back from ebay that way! On the downside for me is the NOISE… it was terrifying before I got used to it, and my family still haven’t got used to it- and now I’m renting somewhere else again, I’m too reticent to use it unless I get an angry neighbour knocking on my door. It is also quite a big appliance, but if it gets rid of some of your other kitchen tools, although I do have a mini food processor because sometimes its easier to get things out of its bowl, rather than around the VMs blades ;P… hope that helps just a little?

          Hi anonymous,
Sadly you probably won’t check back to see this! I wanted to tell you that Chocolate covered Katie is also having a vita-mix giveaway right NOW, so even though you didn’t win Heather’s (I didn’t either) you still have another chance!
As I said, I know this is probably too late for you to see. But I thought I’d leave it just in case!

Supper looks delicious. I love making a salad instead of eating the chips/tortillas.

We have a cloth shower curtain with plastic liner just because we had so many awful shower doors when we rented! Of course this is on tub/shower, not a dedicated shower which requires a door…..

Sounds like you guys have lots of excitement lined up for the spring – selling a house, starting a new business, moving…..

The bathroom looks great! The new door is a huge upgrade:)

I’m glad you mentioned that about taking photos of food. I’ve been really wanting to start my own food blog lately but I’ve been thinking about times when I’m out eating and how I’d feel weird taking pictures with people looking at me. I guess it’s best just to tell them exactly what you’re doing and you may even find yourself a new follower!

Good morning Kath! You brightened my day yesterday by reminding me of my best holiday ever- after staying in Washington D.C. we drove down to the Shenandoah mountains and walked along the Blue Ridge trails? We stayed at such a nice lodge- the Sky lodge (I think?), and had deer by our front door in the morning… no bear sightings though, not sure if we were happy or relieved 😉 So thank you! I’d love to live around that area, you must be very excited. Btw another skew on oats in a jar I did a couple of days ago was… oats in a pumpkin tin can (3/4 empty)!! It was good, despite the oddness of what I was doing. Hope the commute goes well 😉
