Whole Lunch Goodness

Another good one! I have yet to despise packing my lunches again. When I used to work full time it was the bane of my existence. Now I actually look forward to packing my lunch because I somehow have so many more fun options: sandwiches, salads, leftovers. Having a well-stocked fridge helps a TON!

The Lunchbox

A goat cheese + Crofter’s sandwich on Whole Grain Goodness mini slices with arugula for some pretty greenery

Fresh VEG. Simple and easy. [Veg said like Jamie Oliver!]

    I LOVE packing my lunches!! Then I know I can get exactly what I want, and it’ll be healthy too – no random E numbers in sight 😀

    Yummm lunch! I had a spinach, raspberry jam, white cheddar sammie yesterday – inspired by YOU! I’m liking the looks of this combo. …and Oikos, enough said. I just wrote an entire post about it – give me Greek ; )

    Having great things to choose from makes a HUGE difference in packing lunches!!! My packed lunches usually end up better than my at-home lunches because I’m forced to actually think about shopping for them!! 🙂

    I love bringing my own lunch (and breakfast and snacks) to work….but I still don’t like to pack them. 🙁 It just seems to take forever!! One week I did a lot of prep work on Sunday, and that seemed to help. Maybe I should try that again!

    It’s definitely easier and more fun to pack a lunch when your pantry is well-stocked. Now I don’t mind it but as a student I always complained and ended up in the food court. Bad choices.

    Yum, yum, yum!!! You have me craving my nemesis – Goat Cheese!!! It’s really not that big of a nemesis because a little goes a long way, but I’m dying for it now. I love it so much and haven’t had it in ages. That combo looks great!

    I’m wondering if you’re every concerned about your carb/protein/fat ratios? And I’m also wondering what your view is on the best ratio to have daily? Your foods are all great choices, but lots of your meals seem high on the carb percentage. It’s not necessarily a bad thing; I’m just curious 🙂

      I doubt my foods are high carb – I bet I’m right around 50-60% carbs. They are just not super high in protein -rich foods like chicken, turkey, and meats like the typical american diet. And I do eat a good amount of healthy fats. But I really don’t care what my percentages are so long as I’m eating real food and from a variety of food groups.

        Thanks for your response, Kath.

        I think the typical American diet is actually very high in carbs vs. being high in protein. I don’t think you eat the typical American diet at all, and that’s why I was wondering what your take on the ratios were, especially since you’re almost officially and RD.

        I was also interested to learn if they were pushing the typical American guidelines (although poor, IMO) for you to use with your patients.

          I’d agree that it’s high in refined carbs vs. carbs from fruits, veggies and grains for sure. But there’s a huge difference between those in nutrient density (as I’m sure you know 🙂 )

          I don’t think ratios matter at all. If you look at native populations across the globe, they all have varying macronutrient ratios and low levels of chronic diseases. Most are at healthy weights. Most are based on a starch – corn, millet, rice, yams, etc. – with low levels of meat and moderate nuts, seeds, fats. But I don’t think the specific percentages matter much so long as they are balanced out so that one group isn’t drastically high or low.

    I remember when I first got healthy I suddenly loved packing my lunch because my fridge had so many fun options. I used to hate lunches and always packed a frozen meal.

    Nice idea for the sandwich! I bought goat cheese for the first time last night and have been trying to think of applications for it other than pizza! I had some in my lunch salad. Maybe a sandwich will be in my near future!

    mmmmm….i have some gouda, great bread, and fabulous preserves at home and am thinking i will make a cheese and jam sandwich in the future! i love packing lunches…if it’s done right you have something to look forward to!

    I totally said veg in my head like Jamie Oliver when I read it! Too funny! I finally picked up some Crofters this weekend–I got the North American, so I might have to try this sandwich combo out. Have you been watching Food Revolution? If so, what do you think of it so far?

I feel like eating with pretty silverware and dishes makes it all the more enjoyable. Not to mention your bread looks so hearty and good.

    I’m a full-time mom and I STILL pack my lunch every day. I make everything up ahead of time and put it in my special corner of the fridge. It keeps me from snacking mindlessly, it’s ready if I need to eat in a hurry and it’s just plain fun to have a packed lunch. 🙂

    Where in the world do you find all of these cute spoons?!?

    My new favorite way to have crudetes is to puree cottage cheese in the food processor then add ranch powder (a natural variety..no msg) then I have a full 1/2 cup with my veggies and get 14g’s of protein.

    That sandwich looks great! About how big are your mini slices of bread (in inches maybe?). It’s hard to tell from the photo. Just curious. I like eating sandwiches, but I have bread guilt.

    Don’t you say Veg in America? It’s often “fruit and veg” here in Australia, or “veggies”… but we Australians are known for shortening our words, I guess! 😛

    Packing lunch is much better than buying and eating in a fast food because you can never save money. It’s proven, plus, lunch pack is affordable, healthy and easy to make. But of course you should also consider what pack lunch container are you going to use? Not all containers are safe. If you want a stylish and has easy re-pack and stack, durable, also eco-friendly, then a pyramid party tiffin carrier or an insulated tiffin bag is suitable for you. You can enjoy your food and taste it at its best!
