What We’ve Been Eating

While we’ve been doing a mix of cooking, takeout, and freezer meals, I am really starting to miss restaurants! I miss the ambiance, excitement of going out, and delay between courses. No matter how many times I try to recreate this it’s just not the same at home! I wonder if we could get Mazen to play restaurant and be our server….that’s something he might like! Here’s a recap of my meals from the past week…

Date Night In with Pippin Hill

We had as close to a meal out as possible with a special treat from Pippin Hill, one of our local farm vineyards. On Thurs, Fri and Saturdays they are offering a takeaway Sliders Party Pack including local beef sliders with pepperjack cheese and herb aioli, a chefs choice shared side (ours was a roasted potato, artichoke, and olive salad!) and a bottle wine, of course.

Taco Night x2

Cook once, eat twice! It’s clearly our favorite meal these days. Mazey too!

Breakfast For Dinner

When you are almost totally out of food, breakfast for dinner always works! We snuck all the bits and bobs of leftover veggies into omelets and had frozen JM Stock biscuits to go with.

Shrimp Scampi

This is my favorite recipe to cook these days: Gordon Ramsay’s Shrimp Scampi! We’ve made it at least 5 times this year. Thomas braved the grocery store after 14 days and I was craving fresh shrimp!

Takeout from Mas

A classic Cville restaurant! We ordered the smoked roma tomatoes (my FAV!), a mango and pinenut salad, the giant shrimp and tuna with aioli x2. Plus some manchego and jamon as an app. It was the perfect Saturday night at home!

Leftovers

A less exciting Sunday night – leftover quinoa cakes from Plenty, frozen roasted broccoli I prepared using the Eating Bird Food method with sesame oil and sesame seeds, and a Bold Rock rose cider! The portion looks small because we ruined our appetites eating leftover Pippin Hill cheese board :mrgreen:

On to some lunches!

Arugula salad with quinoa cakes and homemade ranch. I took a stab at making the Plenty ranch dressing which calls for sour cream, mayo, lemon juice and a bunch of herbs. It was very good! I an arugula salad and added carrots, peppers, and marcona almonds, plus two of the quinoa cakes I had in my freezer. Thumbs up!

Daily Harvest Flatbread

This purple monster is the kale + coriander flatbread with sweet potato, red cabbage, kale, cauliflower and spinach. This really is the best new way to eat a salad’s worth of veggies! I added some cheese on top because I love cheese. (Try some with $25 off).

Breakfast Time!

I’m happy to report that the Sheet Pan Pancakes froze + thawed beautifully! 60 seconds in the microwave and they were good as new.

We had biscuits from The Pie Chest (via Plenty) and JM Stock in our freezer – that’s why you’re seeing so many! So, so good!

T Daddy Surprise

We got a knock on our door this weekend and opened it to find a pizza box full of Insomnia Cookies! Thomas had ordered them to surprise the rest of us. Mazen and I were thrilled!

    The food from Pippin Hill looks absolutely incredible, as does the sheet pan pancake! I’ll definitely be trying out that sheet pan pancake soon!

    I went on a huge grocery shop this week and am hoping to get 3-4 weeks of meals out of it. For the most part, I enjoy the creativity of seeing what is in the fridge, freezer and pantry, and then making something delicious. On days I have no imagination, I have leftovers! I have found that I enjoy cooking at lunch more. By dinner time I’m tired and just want to eat. So lunches have been very gourmet. And I’ve taken to plating them nicely and sharing them on IG – as a creative outlet for myself, and inspiration for friends.

    The idea of mazen playing server sounds so cute! I bet he would be thrilled to host you for a meal. Maybe he can cook too, lol!!

    Curious how you’re handling split custody with the stay at home order — is M with you full time for the duration? I know it’s so tough to figure out how to handle it with divorced parents since going back and forth drastically increases contact with more people! But thank god we live in an era with FaceTime!

    I’ve made your sheet pan pancakes using Pamela’a gluten free pancake mix and it came out awesome! Everyone loved it, even the people in my family who are not gluten free. Thank you for the recipe!!!!

    Looks good. You guys are having quite a different isolation experience than we are in Boston. Some people are getting takeout still but my bestie is an ER dr and she recommended only hot food coming in is safe not the containers, so twice in 6 weeks we have gotten pizza, brought a tray outside, taken out the slices and then put the box into the outside bin washing hands right after. It’s so stressful! I miss not cooking but I think I’m just too paranoid to treat us to even one night of takeout. I’m high risk though. I hope I start to feel differently in a few weeks Cuz I am stir crazy!

        I got a Petit Verdot 2015, Sauvignon Blanc 2018, Zero White 2018. I normally stick to red wine, but I have been cooking a lot of chicken and fish recently, so wanted to try two of their whites. The petit verdot sounds really special!

    I’m glad you tried out and posted about the DH flatbread! I wasn’t sure about them at first, but I do have some extra cheese. I’m also wondering about their bowls – they have a unique way of picturing them with the whole ingredients, but I am figuring that’s just to show what is in the bowl, not how it is prepared. DH is on my list to try after I’m done trying Splendid Spoon (thanks to your intro! I needed more veg in my life). Excited to try all the smoothies!

      So glad you like SS! The DH bowls are similar to the SS ones – it’s not the prettiest when it’s all cooked up and mixed, but the taste and nutrition are there.
