Weekly Dose

Breakfast held me over so well! I was surprised because I didn’t have pumpkin or cottage cheese (my key players) but I did have a little extra fat from coconut butter and flax. You lose some, you gain some [satiety] 😉

Just broke for a noontime lunch of….

SARDIIIIIIIIIIIIIIINES!

IMG_8612 (640x427)

I opened those “fancy” $2.50 sardines – Mediterranean flavor – to make a simple sardine salad for lunch. Gotta get in my weekly dose of omega-3, vitamin D and calcium!

Chopped up carrot, celery and sun-dried tomato –

IMG_8605 (427x640)

One tin of sardines [DON’T LOOK!] I decided sardines remind me of clams and butter. They are really buttery!

IMG_8609 (427x640)

With added olives, capers, mustard and a tsp of light mayo –

IMG_8614 (640x427)

Served over baby spianch

IMG_8615 (640x427)

I haven’t had Popchips in ages!!! I figured my salad was dense enough that I could have a side of air 😉

However, just noticed soy lecithin in the ingredients list. While it may be “all natural” and a healthy when eaten in whole form, added processed soy is not cool Popchips, not cool.

IMG_8618 (640x427)

And some fresh organic strawberries I picked up from Earthfare!! Sadly, they are not quite up to par yet. And about 25% of my container was rotten 👿 But still good once I cut away the bad spots.

IMG_8611 (640x427)

Have a terrific Tues!

Technically tofu is processed soy, but I still consider it a whole food.

Soy added to foods that are not from the soy bean doesn’t make sense to me.

    Kath,
thanks for bringing the health benefits of sardines to the limelight! They are a bit intimidating/strange/ugly in the can, but seeing you try them out and vouch for their taste/nutrition helped me overcome their less-than-ideal looks. And boy, do they taste good !I used them as a substitute for canned salmon in your “Dinner-In-A-Flash Salmon Pasta” recipe. Sardines make a great substitute and taste amazing! Who’d a thunk it? Thanks for demystifying these little nutritional powerhouses for the rest of us!

I like sardines, but I can’t stand the bones. It’s hard to find boneless sardines around here and picking out the bones just seems like a hassle. Question… do you eat the bones? or pick them out?

For some reason crunching on a bone just grosses me out a bit.

      Lux,
The bones in sardines would be impossible to pick out. They don’t crunch at ALL and you really can’t even see them or know they are in there. Perhaps you are talking about a different fish?

Lecithin is actually a really GOOD thing- it’s a phospholipid ! Not that the amount in pop chips would mean much supplementally, but it protects cells from oxidation, and is composed mostly of B vitamins, phosphoric acid, choline, linoleic acid and inositol. I know you’re somewhat anti-supplement, but it’s a very beneficial thing to take, especially for the brain.

I just don’t like it as an additive – and soy is in enough things already! If it were egg lecithin I probably would be more forgiving.

Haha- I know what you mean, and yeah, the soy form is used because it’s cheaper. I think soy is completely overused and overrated as a food- I’m still a closet tofu-eater sometimes, but in my work, I try to steer people clear of consuming so much of it, cuz it’s allll over the place now.

I’m SO with you on the soy lecithin. Organic products don’t even have to use organic soy lecithin which is just sickening b/c it’s all GMO. It’s in almost ALL chocolate..even the good brands and also in KIND bars. I noticed it’s in POP chips too and really don’t eat them anymore…I know people say it’s such a small amount, yada yada..but all those “exceptions” add up. About the only exception I continually buy are the KIND bars…and I probably average eating 1 every 3 weeks at most. I have found a few brand of chocolate that don’t contain it. Anyway…..hehehehe 😉 You know my disdain for processed soy! Sorry bout the strawbs..hopefully they’ll get better soon. I haven’t tried any out yet. One year I found a FROG in the container…it was ALIVE…luckily I was still at the store when I noticed…INsane!

Since you brought up the soy lecithin in the popchips, I have a question about this. My favorite green tea (Bigelow Green Tea with Lemon, either natural or decaf) has only three ingredients: (1) green tea, (2) lemon peel, (3) natural flavor (soy lecithin). I’ve always wondered about the soy lecithin part of this, since it’s apparently used for flavoring. Should I be concerned about this? Should I avoid it?

Hmm that’s a tough call. I think it depends on how much you love the tea and how much soy is in other products you eat. If that’s the only one, don’t worry about it (kind of like me with ketchup and HFCS)
