Wednesday’s Finishing Touches

Kelsey and I packed up and trekked to campus around 2:30. I packaged up some more fresh fruit to continue my fruit feud, but Tasha hasn’t been bringing her big mixes! Nevertheless, fresh, sweet fruit is SO GOOD in the middle of class.

I ate most of the fruit in Foodservice around 4:30 and saved the rest for Clinical at 5.

I had snack #2 at 5:30 (it was a hungry day!) LaraBars are also doubly delicious during class!

Class got out a little early tonight!! After our long FREEZING ride back to Charlotte, I came home to find a bag of homemade croutons! They were so good and hit the spot. I had about 6.

Then I had a real dinner of leftover Tofu Quiche (still amazing)

And a bunch of steamed broccoli (microwaved in about 2 tbsp of water for 2 minutes) tossed in some Country Bob’s Spicy Sauce!

And one of my aunt’s frozen Coconut Cranberry Oat Cookies. I would kill for this recipe – they get better each time I have one!

    I just wanted to let you I bought kiwis this weekend and decided I would try eating them with the skin on (just like you do) and I love it. I cant believe I have been throwing them away for all these years!!

    I love everything you prepare and the photos. This one has me stumped however. Why bother with using tofu in the quiche when you’re putting all that cheese in? At that point, might as well just spring for the eggs.

    I’ve got a question for ya’. I’m fairly new to your blog, so sorry if someone has already asked you about this. You always have such beautiful veggies in all of your meals, so I was wondering what your secret is. Do you have to go to the store a lot so your veggies are fresh? Do you typically plan ahead the veggies that you’ll need, or do you stock up on things you like knowing you’ll be able to incorporate them into whatever you decide to cook? And finally, is there a list of “veggie staples” you always like to have on hand that are easy to incorporate into recipes?? I typically keep bell peppers around, but I’d love to know what some other good veggies are that are great to keep on hand.

    I bet you would like these yummy cookies too. They have lots of the same ingredients cranberries, oatmeal, coconut….

    Loaded Oatmeal Cookies

    Ingredients:

    1 cup granulated sugar
    1 cup brown sugar, packed
    1 cup butter, melted and cooled slightly
    2 vanilla beans (optional, I had them already)
    1 tsp vanilla
    2 large eggs
    1 tbl oil
    2 cups flour
    1 tsp baking soda
    1 tsp salt
    1 tsp ground cinnamon
    3 cups oatmeal
    1 cup raisins
    6 oz white chocolate chips or chunks
    1/2 cup dried cranberries
    1/2 cup packed coconut, toasted
    Additional granulated sugar for rolling the cookies in

    Directions:

    Preheat oven to 325 degrees. Once heated, toast coconut till lightly browned, remove and set aside to cool.

    In one bowl, combine sugars and vanilla bean seeds. Pour in butter, eggs, vanilla and oil. Stir until smooth.

    In separate bowl, combine the remaining ingredients (flour through coconut) and mix well with fork.

    Combine the wet and dry ingredients in one bowl. My flour bowl was larger, so I added the wet ingredients into the dry. The batter will be thick. I ended up finishing the mixing using my hands.

    Use a tablespoon size cookie scoop to prepare evenly sized cookies. Roll each cookie in sugar and place at least two inches apart on parchment lined cookie sheet. Bake for 11-13 minutes, or until the edges begin to brown. The centers will still be pale and moist. Cool cookies on cookie sheets until the center is set. Cool completely and serve.

    Makes about 36 cookies.

    There are so many reasons to use tofu – the taste, texture, benefits of soy, etc. It doesn’t have to be all or nothing.

    Great question. I plan our meals for the week, including the vegetables we’ll need for dinners. But then I also always get a salad green (romaine, spinach, etc.) and 2-3 “salad topper” veggies, usually carrots and a bell pepper, perhaps tomato. Inevitably we have some veggies leftover from the dinners that I can steal for salads or spontaneous meals too.

    I love watching Sex and The City while eating dinner. I’m alone for dinner a few nights a week while my boyfriend works at a pharmacy so it’s those nights I pull out SATC while eating.
