Unwind, Rewind

Great relaxing night tonight!! I didn’t get very much studying done today, which means I have some stuff to do tomorrow, my free day 😥 But hopefully I can knock them off in the morning. I finished my projects around 6:30 and started on dinner. I asked myself what I was in the mood for while in Trader Joe’s this morning and tortilla chips came to mind, which made me crave Taco Salad . I put some lean ground beef in the cart and dinner was underway.

I cracked open a Cottonwood Pumpkin Ale and turned on my favorite weekend cooking music: Taylor Hicks’s CD! His season was the only American Idol season I’ve ever watched, and I just loved his style. His CD is awesome! I think some of my happiest moments come on Friday nights when I sip a drink while listening to music and cooking something special.

Our taco salads were quite the assembly. While they had lots of parts, it really wasn’t that hard of a meal to cook –

  • Romaine lettuce on the bottom
  • Then a pile of ground beef (with chilli powder, garlic powder, paprika, cumin, oregano, and red pepper flakes) with some frozen corn, fresh tomato, fresh green pepper and jalapeno.
  • Then a pile of homemade guac – avocado, tomato, cumin, lime juice and jalapeno.
  • Then some homemade queso sauce made with nutritional yeast (Recipe here – it’s great!)
  • Then a dollop of greek yogurt and some hot sauce on top
  • And lastly, some flax tortilla chips

Taco salad night is perhaps my favorite meal my mom used to make when I was in high school. She taught me to put plain yogurt on instead of sour cream for more nutrients!

Since it was movie night, we started Then She Found Me with dinner. It was still romantic!

Unfortunately the movie was HORRIBLE . I hated it. Boring plot, bad characters, blah. Now I really wish I’d taken all of your advice and gone back for another!

I had the last big meringue for dessert – but I got a tub of tiny ones at TJ’s today – and also had a few of those!

Not sure what’s in store for the rest of the night. Maybe a little House Hunters! I’m getting tired though – I’ve been up since 5!

    omgomg i was actually in LA on vaca with a friend when they were filming that american idol and i met Taylor Hicks!!!! he was SOOOOOOOO nice and let us take lots of pics with him 🙂 yay!!

    pumpkin beer seems to be the new thing! i need to try some soon!! i love the decor of your house by the way. and hubby looks too cute on the sofa 😉

    I love that you ate by the coffee table with a movie! Too bad the movie didn’t turn out so great. Yay for your dinner! It doesn’t happen often, but I was in a Mexican-style food mood today too and had two variations of beans + tortilla + guac fix for lunch and dinner…

    Don’t stress too much during your free day tomorrow! It’s always disappointing to not get as much studying done as you’d like, though.

    Hey Kath!! Great news, the “stress fracture” wasn’t a stress fracture after all. My flat feet were just causing me problems. I got custom orthotics and if you want to plan a run this fall, I’m up for it!!

    Some wonderful recipes here, I think I’m going to be a regular.
    So many older blogs to look at.

    I love listening to him.

    Yep, I too got your blog through a Taylor Hicks Google Alert. Love the man’s music and love to watch him perform, but I am also going to come back here and check out the recipes. I think Taco Salad may be on the menu for next week.

    I do like Taylor Hicks, but come on, you live in North Carolina and the most amazing AI lives there–Mr. Clay Aiken! Been following him around (to his concerts, and Spamalot, etc) since he started his journey.
    Also, just wanted to tell you that I LOVE your black and white furniture!
    And love your taco salad, minus onion! I made taco pizza last night with the same things you used, but put it on thin whole wheat crust. It was good!

    Love the Cottonwood pumpkin ale, but I thin it’s only available in NC since it’s brewed just north of Charlotte.

    This is what I said on the topic last week:
    I did see the HFCS commercial and rolled my eyes, because of course the whole campaign is sparked by the quest for money. But I agree with scientist that HFCS is really just sugar syrup – it’s not like trans-fat (which HAS been proven to have negative health effects) or artificial sweeteners (which MAY have potential side effects). But I think the lesson learned is that whole fruits have none of them 🙂

    I’m not a Clay fan because I didn’t watch that season…But Kellie Pickler is also from just down the road!! I saw her sing her song about going to Nashville before some concert (can’t remember the headline) and it was sooo emotional and good live knowing she was from the area – she started bawling and could barely finish.

    I just caught this–I saw that movie and expected it to be so much better; it seemed like an interesting idea and a friend of mine really liked it but it was not good. I did read the book (after I saw the movie), which was good and completely different from the movie.
