Typical.

Holla from the office! I’ve been catching up on some of the competencies for my internship. There’s a whole lotta stuff they want us to do that we just have to sit and do on our own. Blah.

But I’m sportin’ your typical KERF lunch today 🙂

Crofter’s + Organic Valley Sharp White Cheddar of Flax Oat Bran. Best sandwich ever and ingredients we had on hand after a weekend away.

A bed of the last of my spinach topped with brussels leftover from Thursday night (I planned this knowing we’d be out of veggies upon returning from Davidson)

    Crofters makes good off of you! I need to get some gluten free bread and try that. I love cheese. I love jam. Both must be good, right?

    I love jam + cream cheese on goat cheese. I eat rice bread with goat cheese and fig jam every morning – it is to die for!

    oh.my.gosh…what a great lunch! i’m so jealous 🙂 i really want to try the crofter’s spread, but i can’t seem to find it anywhere! i think i can handle just about anything with great cheese though 🙂

      I just thought I’d throw it out there that I think all Crofter’s are really good but my favorite so far has been the North America one. To die for!

    I had a very similar sandwich last week…pressed (so no extra oil!) SUCH a good combo, warm or cold.

    You were totally right about my fav bread at the Palm being the Dakota. The Husband and I picked up a loaf at the GH off of Rea road Saturday and it was delish!!! I seriously love this bread!

    I’ve never been a cheddar girl–(Cream cheese and jelly? That’s amore)–but I feel like white topped with JAM might convert me 🙂 Great harvest bread might have some pull, too…

    I still need to try jam and cheese sandwich. But I love it when someone makes baked brie for a party with jalapeño jelly so maybe I will try the sandwich version soon.

    what a nice lunch! looooooove brussel sprouts

    when i was little my grandma put chocolate chips in brussel sprouts so i would eat them. i thought that was gross. i still do

    That sandwich is so simple but probably amazing! Yesterday I had a great sandwich with just Avocado, beefsteak tomatoes, and grilled chicken breast on toasted multi-grain! Maybe the bread makes these so good ha!

    Just catching up on the weekend- Congratulations on celebrating and not feeling yucky the next day. Special events are hard for me too, but with time and practice I am getting better too (I think?). There is just something about being happy and celebrating that makes me want to overeat! Oh, and the delicious food too! Anyway, great job!

    Hey Kath, I just had to tell you that I took the plunge and tried sardines today (inspired by you). I made a “sardine salad” over greens and was pleasantly surprised. They’re good!! And I feel so healthy!! 😉
