Type My Brain

This afternoon I wrote while munching on Chocolate Food Should Taste Goods and a decaf tea

I wrote over 3,500 words about my journey to become a Registered Dietitian! I’ve been meaning to write the post for ages (I’m still sending inquiry emails a canned response that uses the present tense!) and it’s 80% done. I need to add links and photos and edit it through.

Be prepared to read an essay – I have a lot to say about 2.5 years!

For dinner tonight we had pizza on the menu and I had a craving for Faith + Tate!

They joined us for a casual meal – such fun! I always love their conversations.

Jefferson Petit Verdot – yum!!! Conversation starter 😉

Pumpkin Chipotle Pesto!?! I’ve had it frozen and just thawed it out. It was everything I had hoped. Bring on Fall!!

We had tomato, cheese and basil pizzas with the pesto underneath. They were ooey gooey fluffy good! Great Harvest Cville crust is the best!

On the side: okra fries mixed with green beans.

I just baked the two together covered in olive oil, Liquid Smoke, Garlic Gold nuggets and salt for 15 minutes at 400*. Served with ketchup!

GAH the pizza was good! I had 2.5 slices!

For dessert we demolished half a watermelon.

It was everything I had hoped for.

Going to catch a wee bit of SYTYCD and then get in bed! It’s been a long day.

    Wow that pizza looks good! Bet it would be great on cheddar garlic dough-picked some up today. I think I’ve been at least 3 times this week to GH-just for lunch and bread and almond butter 😀 Had watermelon today too, its so perfect for summer!

    I haven’t had cheddar cheese on a pizza in a while. I went into a cute bakery today and they had the most beautiful home-made pizzas laid out. Apparently they make whole pies to go in the later evening – so I’ll definitely be going back for my “take out”!

    I’m so looking forward to the essay. Is it meant just for the blog or are you writing it for other publications? I would love to spend time to really write more meaningful stuff to post and whatnot – but it feels like a waste of my time if I’m not being paid for it. Time is money for me I guess. That’s my issue with even trying to write a book that I’ve always wanted to do!! The fear of it being a waste of time that gets nowhere.

    Okay okra question for you…I LOVE okra fries but sometimes when I roast them in the oven they stay really tough and fibrous no matter how long I cook them for. Usually I find this happens with larger pieces of okra. Does this ever happen to you?

      I have had that happen before and I think it’s overripe okra. The smaller the pieces, the more likely it will be tender. I don’t think there’s any way to tell though

    That pizza looks amazing. You are definitely a southern girl with those okra fries! I tried cooking with Okra a while back and it got too gooey on me…You will have to explain how you make the okra fries…its everywhere in NC right now and I always feel bad that I don’t give it another chance:-(.

      The slime is NORMAL!!! Embrace it. It’s like flax + chia seeds – just a part of the plant. I love the slime! It makes the okra have a wonderful mouthful – like butter/oil without the fat.

    No way am I ready for fall. Summer in Boston lasts about 6 weeks…Yes, fall is gorgeous up here but I am not ready for it!! Don’t rush my summer away :))

    Ugh bring I’m fall no way. Fall equals winter. I know this 100 degree heat and humidity sucks
    ( from Philly so similar weather). Def take this heat over the cOld.

    holy moly that’s ALOT of words!! And you cranked it out in record time if you just started working on it today??!! Yes, it was in the making for a couple years but actually putting pen to paper, or fingers to keyboard, that’s different than just warehousing the story in your gray matter 🙂

    I know that the bakery’s recipes are, of necessity, a closely held secret but any hints on that pizza dough would be appreciated – it looks fabulous!

        Cheers! I take it that means that a hint on the actual ingredients is off limits then … although looking at it more closely now it doesn’t look as multigrainy as I thought earlier.

          The crust is just 5 ingredients: yeast, water, honey, salt, flour. Plus some herbs and I think some olive oil. The reason it’s so good is because we grind our own flour at the bakery and our wheat is so delicious!

    I’m so excited to read your essay-length RD post–I’ve realized that I want to have some sort of career dealing with food, nutrition, cooking, and agriculture post-college, but am not quite sure what form that career would take. Becoming an RD is one of the paths I’ve been looking into, so I’m very much looking forward to hearing your perspective on the process and the degree.

    One more quick question, Kath–I’m looking to get a commuter bike, and you seem to love yours. If you don’t mind me asking, what kind of bike do you have and how did you decide upon it?

      I have a Trek 2.0 (I think!) and love it. It was about $600 but it’s a good bike and I sure use it all the time

    I can’t wait for your post about becoming an RD!! I’ve actually been thinking about doing it myself lately… I’m a product manager at a healthcare company and one of our biggest products is wellness programs. After fixing an entire power point by one of our staff RDs, my marketing coordinator mentioned how awesome it would be to have someone with dietary and business/communications expertise so we wouldn’t have to re-do everything before sending it to the client, and that got my wheels turning… my mom was a research nutritionist so I have a lot of knowledge but nothing official. Anyways, enough rambling, can’t wait to hear about your journey 🙂

    My oh my that pizza is totally calling my name! Oh and i am SOOOOO excited for your post on becoming an RD, it’s the perfect timing! I am in a real pickle i finally have the opportunity to go to college after having kids and torn on what to do, my true passion is anything nutrition and health related it seriously is my life, but i am unsure on if it is a really well paying job so was looking into teaching which pays quite well. I know you should just follow your heart and do what you love but i’m a single mum with two young girls to raise so i need to earn enough to support us all. Gah decisions decisions

    I am sooo wishing I had a Great Harvest around here (Rhode Island)! When I first started reading your blog, (maybe 1.5 yrs ago?), I googled to see if there was one around and there was!     How do you make your Okra not be slimey?? I always end up throwing out any okra I make because it’s seeming to emit this slimey gel. I know there’s got to be a secret I didn’t learn growing up since I’m a Yankee… And now that i live in the south (Roanoke, VA), everyone else’s okra seems slimeless!

    I just bought Okra at the farmers market this morning. I was about to Google how to cook it, I have never had it other then deep fried before! I LOVE your Kale Chips, so I am sure I am going to love these Okra chips! Thank you, thank you!

    I’m the GM of the GH in Burnsville, MN and we sell both our wheat and white doughs frozen as pizza doughs for DIY pizza crusts. If you’re interested, I’ll email you the size/price and our pizza on the grill/pizza in the oven recipes! Love the blog 🙂

    Okra gets such a bad rap! I grew up on okra cooked as a stew with tomatoes. It was my favorite hot or cold! Yet, my sister intensely disliked it. Go figure. Once In a while, I’ll make a batch for myself. The natural effect of the cooked okra makes it so comforting! Okra without slime just wouldn’t be okra!

    I die a little inside every time I see that pizza dough – it’s just the dough to top all doughs in my book (and I haven’t even tasted it!) Do you guys sell it in store?

    I’m excited for that post!!! 🙂 Why did you become a RD and then run a bakery instead of seeing clients/patients? I might want to be an RD, is it possible to become a pediatric RD?

      Because RDs can do anything related to food and nutrition. To assume that an RD must work in a hospital is like assuming a piano player must only play classical music!

    i can’t wait to read your RD post! i’m applying to medical schools right now, but if that doesn’t work out for any number of reasons, becoming an RD is one of my backup plans. i actually wish i could just do all my plans and work somewhere different everyday! 😉
