Twins

We had a guest speaker from Lance come talk to our Food Science class today about Research + Development jobs. She brought us these cool hats! I am not a hat person, but this one is super soft and maybe I will become one.

Things Kelsey and I have in common:

  • New hats
  • Blonde hair
  • African spoons (I brought her one)
  • Veggies for lunch
  • Matching lunch boxes
  • Yoga Jam water bottles
  • Sony SD880 cameras (as of last week!)

IMG_3675 (800x600)

Here’s our friend Lauri in her hat

IMG_3680 (800x600)

And here’s her guest lunch post of a chicken, spinach + boursin cheese sandwich on Great Harvest bread (she’s a supporter!), grapes, and popcorn plus a pear for a snack

IMG_3678 (800x600)

On to What Kath Eats:

Pumpkin Butter + Tempeh on GH Rice Bread (obv. my favorite sandwich of the year)

IMG_3670 (800x600)

No need to cook the tempeh – just plop it on.

IMG_3674 (800x600)

A pile of veggies

IMG_3669 (800x600)

With a greek yogurt + sriratcha dipping sauce (really good!)

IMG_3667 (800x600)

Fruit, which I saved half of for Foodservice entertainment

IMG_3671 (800x600)

Peach Chobani

Greek yogurt and sriratcha??? Really? I’ll take your word on it. Well, strawberries in balsamic vinegar sounded really odd to me before I tried it, so I guess I’ll have to try greek yogurt and sriratcha for myself!

I am trying that yogurt/sriracha sauce combo asap. I am obsessed with that hot sauce. Makes sense that it’d be good since plain yogurt is a great sour cream sub.

Now the question is, would I be able to make it and serve it to the boyfriend without him seeing what’s in it? He just doesn’t believe me that plain yogurt tastes like sour cream heehee.

I 100% approve of this entire lunch!! I have yet to try raw tempeh(ok thats a lie I always sneak a bite when I’m cooking it) but I think it may need to make it’s way into a sandwich. I was just concerned always about the moldy bits and thinking maybe I had to cook them for food safety purposes?

Hi! I’ve been reading your blog and this will be my first comment. Since you’re studying nutrition, I was wondering what your thoughts are on the Master Cleanse. My thought is that it would help me kickstart a new healthy eating plan (one that will be permanent). However, I’m not sure if the Master Cleanse is a good way to go about it. I don’t want it to throw my body into starvation mode and end up slowing down my metabolism and hoarding any calories it comes across.

    JENNA + Kelly + Ansley ,
I like the three-grain kind by Lightlife. It tastes kind of like rice, because this one is made from grains – barley, rice and millet. It’s pretty mild. Maybe with a slight fermented taste, but not strong. I could see how rubber glove might not be too far off though… 🙂

    Sarah (lovINmytummy),
All the nutr. people don’t eat as healthy as you would expect! But I don’t see many of them eat, so I don’t really know.

    Jessica ,
I usually cut the tempeh block into thirds and then cut those thirds in half long-wise. So each sandwich slab is 1/6 of the original block.

    Lisa D,
I think the packaging says that those dark spots are harmless. They are def. not mold!

    pumpkin ,
My favorites are in this order: Flax Oat Bran, Whole Grain Goodness, High Five Fiber, Dakota, Honey Wheat. Be sure to check your store’s calendar because they don’t make all of the breads on the same day. You also should be able to get a sample right there on the board in the store.

    charity ,
I’m not really sure what the Master Cleanse entails, but it sounds like something I would definitely not recommend. The body is designed to detoxify and cleanse itself with the organs you were given. Give yourself whole foods and plenty of exercise and you’ll get a great kick start to weight loss and health.

    Jennifer ,
This pumpkin butter is one my parents got at a local shop, but I love Trader Joe’s brand. it might only be available in the fall though.

    pam ,
    Sounds awesome!

    Kath,
I made a yummy dinner and I thought of you when I sat down to eat it!
I chopped a head of cabbage, tossed with a little olive oil and roasted for 20min at 500 deg. I removed from the oven and tossed with goat cheese(!!), grape tomatoes, fresh cracked pepper, and hot sauce(Cholula chili garlic). The goat cheese made it so creamy and delicious.
I thought of you because you love goat cheese and you roast veggies a lot. I think this is a great clean eating type recipe, filling and low cal too!
    Pam 🙂
