Twinkle Toes

There and back again from yet another study session. Biochem studying went well, and I feel pretty good about it. In a way, final exams are easier than the original tests because they are much more broad. Most of my professors say they test us to challenge us and stretch our brains on the semester tests and the final is more a recap of topics. Plus, you’ve already learned the material once! It’s just refreshing rather than learning.

While at the coffee shop I got an iced decaf coffee with a shot of sugar-free vanilla and a splash of half and half. I didn’t really want it at all, but I felt I needed to buy something for being there and didn’t want plain water (esp. since I had a water bottle with me!) But I ended up drinking all of it, and it did taste good.

I asked the Queen Of Nail Polish if she would let me paint my toes with one of her colors since I decided I don’t have the time or money for a pedicure before my beach wedding weekend. She provided a wonderful selection of my request: coral-y pinks.

IMG_5276 (1024x768)

I decided on Opi’s “Lunch at the Delhi” – a bolder pink than my usual corals 🙂

IMG_5278 (1024x768)

Would you believe that I haven’t painted my own toenails since ….middle school maybe???! Mostly because I just don’t own any nail polish! I usually get a few pedicures each summer and my toes are hidden and boring all winter!

It was quite fun though, and I love the color. (My feet are gross!)

IMG_5286 (1024x768)

Dinner tonight was Plain Jane Spaghetti with fancy Napa Valley Bistro sauce!

IMG_5283 (1024x768) (2)

IMG_5281 (1024x768) (2)

We cooked up some whole wheat spaghetti, sautéed a pint of mushrooms and half a zucchini in some olive oil and heated last night’s sauce in a saucepan (how appropriate!).

Garnished with fresh oregano and Kelsey’s goat cheese –

There was indeed spaghetti underneath!

After another hour of studying, my brain had used up its glucose and was ready for more in the form of the perfect evening snack: a small bowl of cereal with milk.

I had some Uncle Sam’s with TJ’s High Fiber worms mixed in in soy milk .

IMG_5290 (1024x768)

I read the Uncle Sam’s box while munching and was quite impressed with the stats on this cereal. Whole grains, flax, barely any sugar, low sodium, no preservatives. High fiber and protein, naturally. I like it!

IMG_5288 (1024x768)

I had to go back for just a taste of my Mix My Granola to finish off the milk :)  I almost always use granola as a topping because of it’s energy density, but gosh is it good in milk!!

Love the choice of polish Kath! I can’t believe you don’t own ANY! Kelsey needs to take you shopping for polish sometime 😉

I just love the classic whole wheat spaghetti and sauce. I like how you added in your own veggies to amp up the nutrition!

Sounds like you have a busy day ahead of you tomorrow. Good luck on the exam!

I usually have cereal/granola dry, until about a month ago my boyfriend served me a bowl of his homemade granola with soymilk. Yeah. I went back for seconds.

So smart amping up the veggies in the sauce to counter-act the pasta. I’m so bad about going heavy on the noodles…gotta throw in zucchini next time I make pasta 🙂

Cereal is a controversial health food–the high heat extrusion processing they use on it kills all the beneficial phytochemicals and vitamins found in the grains (and have to be fortified back into it!). Basically you’re getting empty carbs/harsh colon-eroding bran fiber from the stuff, although it’s certainly comfort food. 🙂

I’m a nutrition junkie, too, and enjoyed reading your success story! You’ve certainly found what works for you. Inspiring!
