The Lunchbox

Amazing lunch that took 2 seconds to pack!!! Leftover Spiced Millet Salad 🙂

    I so badly want to cook that millet thing, it looks YUMMY!! I WILL do it this week…
    What’s the homemade pumpkin butter made out of, besides pumpkin? I’ve never seen anything like that over here.

    I’m sometimes very bad at hitting all the good groups. I’m such a grab and go person that I forget oh yeah I need some fruit, or protein, or grains. Then inevitably I’m left feeling hungry 🙁

    Looks delish! Maybe you’ve answered this before, but where do you buy chia seeds? Didn’t see them at TJ’s… Whole Foods maybe?

    Hey Kath! I was wondering whether since you’ve been running extraordinary amounts (congrats on the half marathon!), you have been losing weight recently? I know you don’t keep track of your weight…have you just been eating more to compensate for all the high calorie expenditure or do you feel like its just evened itself out naturally?? Just curious! Thanks 😉

      Hi!

      I have lost some of my Summer 2009 weight gain this spring, but I really attribute it more to cutting back on my intake than the running. Because I’ve been taking more rest days before and after the long runs (which I wouldnt’ have needed doing easy cross training workouts) and eating the same amount on those days. But I have intentionally lost a few pounds by cutting back on desserts and alcohol and traveling and therefore eating out less. It’s all about the squiggly line

    Hey K,
    3 questions for you….
    Have you ever tried cocoa nibs in your oatmeal?
    Have you given up your nut butter kept on the spoon style? Or do you stir it in now?
    Have you ever made your own yogurt? greek yogurt? (amazingly easy!)

      -Yes

      -Like it to melt on top now

      -No – too much work and you have to buy the milk anyways!

      -And below, I haven’t heard of that specific diet, but I think low-fat diary is probably best. The fat doesn’t provide any nutrients so it’s kind of empty. But I do think some fat is good so I don’t really like fat free. But if you like full fat, then have some – just compensate in other ways

        I had a certified nutritionist tell me to go full fat on dairy and that there are, in fact, many nutrients in the fat. I’m making the full fat yogurt because whole milk is the closest to its natural state. I buy organic non homogenized milk. There is something in that process that changes how your body absorbs the fats. Really, you should give making it a try some time. Its not all that much work and you can make a serving for about half of what it costs to buy. I put the strained whey in my smoothies : )

    mmmm i bet that yogurt is good with those mix-ins.

    I had greek yogurt for the first time this week. I loved it, but I dont think I will be able to eat it regularly. Made my tummy all…well…no good. (Lactose intolerance, how you take all the fun out of life!)
