Too….Much….Oatmeal….

For some reason today I could barely finish my oatmeal I was SO full!! Maybe it was the mug of with it coffee? Although during my run this morning my stomach was kind of cramping. Hmmm.

Speaking of my run, we got up early to run before we left. It was hard getting up, but as always, 2 minutes into the run I was happy. We did about 4 miles or so. It’s amazing the difference in running in the summertime before the sun rises. Too bad the summer is sleep-in season as well!

So today’s oatmeal is titled Nutty Oats. There was an emphasis on nuts today. The husband put some peanuts on his so I put a few on mine. A lovely addition. A few walnuts too and I went a little heavy on the spoonful of PB as well.

The Combo:

  • 1/3 cup dry rolled oats, 1/3 cup 1% milk, 1/3 cup water
  • 1/2 banana
  • Pinch salt
  • Vanilla bean paste
  • 1/2 cup blueberries
  • 1/2 tbsp flax
  • Sprinkle peanuts, walnuts
  • Touch of brown sugar
  • Spoonful PB – probably a full tbsp today

Plus Coconut Cupcake Coffee! It was good, but not out-of-this-world good like the Spring Blend. I think it needs lots of milk + splenda to be out of this world and I didn’t want to over do the mix-ins. The husband made his iced and it was really good – I think because it was half milk! Can’t wait to try the Tiramisu!

I need to catch up on my Olympic watching – the men’s gymnastics final was last night and we’ve got it DVRed but I won’t get to watch it until we get back. Do you think I can stand not to cheat and look at the results online!? I hope we can watch some of the women’s in the mountains tonight.

The husband ran to the grocery store while I blog for our dinner ingredients we’re cooking for my parents. You’ll have to wait and see what we come up with! We’re leaving soon for our mountain trip. I’m not sure when my next post will be, but I’ll make an effort to put something up tonight, or tomorrow at the latest.

    Every night I convince myself that I’m going to get up pre-sunrise to run, and yet it never EVER happens and I end up running miserably in the heat. Ugh.

    Also, LOVE the hair cut – its very stylish! It looks great w/ your face shape – the layers are great.

    We have tiramisu coffee, as well. I really like it, I think it is my favorite with the exception of the Outer Banks Blend Carolina Gold. Mmmm. good stuff, no mix ins needed.

    Travel question!

    Is anyone here from or familiar with Boulder, CO? I will be traveling through on a Saturday and would like a recommendation for where to stop for lunch. It will just be me, and while I wouldn’t mind sitting in a regular restaurant alone, any kind of “order at the counter” type place would work, too.

    Kath – thanks so much for the tip about Bob’s Red Mill – I was beginning to despair! And they even ship internationally – yay!

    A couple of questions:
    1) there seemed to be a couple of types of wheatberries – hard red ones and soft white ones – do you get the latter?
    2) which are better – rye berries or spelt berries or is worth getting both?
    3) Does anyone recommend any of their cereals (I LOVE cereal – granola, crunchy stuff especially) – I thought that if I’m paying for international postage I might as well make it worth it!
    4) Any other recommendations from the site?

    I had the exact opposite problem today-I couldn’t stop eating! I had a 2.5 egg omelette, 2 pieces of toast (with peanut butter and jam) and a bunch of fruit! I think it’s because I ran my farthest ever yesterday (I ran 6.6 miles-and when I first got on the treadmill I was like-ok, I really am not feeling this, maybe I’ll just walk-and then the longer I stayed on the more motivated I felt) and I strength trained this morning!
    Does anyone else ever have those days where you know you should’ve stopped eating about 10 minutes ago but your body still feels hungry?

    Sara F: some days I feel super hungry and it might not even be a day that I worked out a lot or anything.. first I try to drink a little but if i am still hungry I eat and as long as it is healthy i dont feel badbecause I feel like it is my body talking to me to be fueled!

    Hi Kath!

    The coffee might actually be the reason for the cramping, it can be very dehydrating, that insta-dose of caffeine, whereas tea is more like a time-release capsule. If I do a run in the morning after coffee I try to down a big glass of water before I go.

    Hi Kath, I have a quick question…I know you are busy, but I was wondering-did you always have a taste for vegetables and healthy foods? I grew up in a meat, potato and junk food kind of family and have been having trouble “enjoying” the more healthy foods in life.

    ADVICE NEEDED!!

    Kath, I know you are away but I’m hoping some some readers might have some thoughts…

    What do you guys do when you have to eat a late dinner? I live with my boyfriend and due to his crazy job he usually doesn’t get home from work until 8:30-9pm, but a BIG part of our relationship is cooking and eating together so I really try to wait for him. But I work out in the morning so I eat breakfast and lunch pretty early and even with a big afternoon snack I am ravenous by 8:00. Many times I’ll end up eating too much snack food and being too full for dinner, OR I will eat dinner too and feel like I’m eating more food than I need.

    Anyone have tricks, tips, suggestions?

    Kath, your oatmeal looks divine this morning! I wanted to share what I mixed in to my bowl of oats this morning as well – it was fabulous.

    1/3 cup oats
    1/3 cup water
    1/3 cup 1% milk
    Banana
    1 teaspoon peanut butter
    Approx. 2 teaspoons no sugar added strawberry jam

    Topped it all off with some extra milk and it was like a dream. Really brought me back to my childhood what with the P&B/jam combo. Yum!

    Question– obviously the message is out: High Fructose Corn Syrup is BAD! But I don’t know whyyy? What will it do to your body? I’m having trouble justifying not eating foods with HFCS because I don’t understand why it’s so “bad”. I’ve tried googling it but it just confused me and I even found articles saying it was not “bad” and the same as any sugar. Can someone ease my confusion? What’s your opinion on HFCS?

    The Bob’s Red Mill Mueslix is wonderful! oats and sunflower seeds and dates and raisins and almonds (lots of “ands” going on there). Definitely worth adding to your order. I like to soak it in vanilla soy milk overnight.

    i have a second job at night and often don’t get to do dinner til 10:30pm… so i split my lunch in half and eat half at noon and half around 4. not ideal, but it seems to help.

    Did you run after the coffee? I love coffee, but have to drink it after running or I feel sick.

    Actually, it’s not dehydrating. It has a slight diuretic effect, but the amount of water that you take in by drinking coffee more than counteracts the water that you lose.

    Kath,
    I was just wondering why you have cut your oatmeal portion down to 1/3c? A few months ago you were eating 1/2c. Maybe because of adding some other form of grain in with your oatmeal mixture? But for today’s breakfast you really didn’t have another grain besides the oats. I was just curious because I eat 1/2c with the same kind of mix-ins as you and I feel totally fine with that amount. I couldn’t imagine having less than that. I would be so hungry…I should actually try it one of these mornings and see.

    My boyfriend also works late nights (and I have the same routine as you do) so what I’ve gotten into the habit of doing is spreading my lunch out-so I eat the main component during lunch, then the veggies at about 1, and then a piece of fruit or something sweet around 2:30 or 3. Then when I get home (around 6) I have my snack. I’ll then do all the prep work around 7-so starting to defrost the meet, maybe chop the vegetables, etc but I won’t do any of the actual cooking until he arrives.

    That way we still get to cook and eat together but I’m not grouchy/starving when we eat.

    Another suggestion is you could work out after work instead of before-I do that sometimes as well and then have my snack at 4:30. By the time I get home and shower it’s already 7:30 and then I only have to wait a little bit (and I’ll still start the prep work then).

    Kath has actually answered that question before. She said she cut down to 1/3 a cup since she’s adding other stuff and she’s eating breakfast later so she doesn’t need it to keep her for full for as long. She added that she’ll still have the 1/2 cup if she has fewer add-ins or if she needs to be full for a long time.

    I feel you on the 1/2 cup. I tried the 1/3 cup and was ready to eat my arm off by the time lunch came around. I eat 1/2 cup and stay satisfied for 4-5 hours

    In regards the the coffee/running…I almost always have coffee before I run! It doesn’t bother my stomach at all, and I’m glad because there have been a number of studies done on how coffee is actually supposed to be good for you before a run because it helps reduce soreness post-run. Go coffee!

    Jenny, I am also trying to do what others suggested – eating smaller mini meals throughout the day to help with a later dinner. But I do feel like I am just eating more food generally that way!

    Kath, I noticed you have cut down your grain servings a lot lately (for example, not eating grains at dinner very often) – just wondering if this is intentional, and if you’re trying to reduce calories overall?

    How does your husband get so much time off? I remember he just started his new job this past spring? I don’t mean this as a jab, for real- I’m genuinely curious! I started a job in finance around the same time he did and have quite a long time to wait before I’ll earn/can take my vacation days, blah….

    I made oatmeal for breakfast this morning – the first time EVER that I’d had homemade and not instant. Sliced in some banana and fresh blueberries. Delicious! Your constant odes to oatmeal are truly inspiring. Think I’ll try one of the contest winning oatmeal recipes tomorrow morning. I love that there are so many people who get this excited about oatmeal!

    HFCS is bad because 1) its an artifical product 2) there is a lot of evidence your body doesnt recognize like HFCS like it would recognize real sugars. There is a lot evidence it is tied to the country’s general weight gain as well.

    So this morning I was talking to my grandma, and I asked her if there was one thing in her life that she would do more. Do you know what she said? Eat more dessert! She said that when she was in her 20’s she was so worried about her weight and eating too many sweets. She said now she just realizes that, although she is happy that she lead a happy healthy life, she wished she would have just relaxed a bit more a not worried about those 5 extra pounds she thought she had to lose. I just love that!!!!
    Eat more sweets! I am going to have a bag of M&M’S TODAY!

    The reason I asked about HFCS is because I’m in college and will be eating from a dinning hall. It’s a waste of time/money not to eat what they provide but the only bread they have has HFCS and they only have Yoplait brand yogurt (with HFCS). I love yogurt and bread and they are staples in my diet. Should I really be so concerned with HFCS to avoid these food? I’m not overweight but I’m concerned that I’m putting an unhealthy chemical in my body :/ any advice?

    diane — personally, i really struggle with eating breads from shops, etc. that i suspect have HFCS. i just really don’t ever want to eat that kind of stuff. if i happen to eat it every now and then, whatever.

    but if i felt the way i do now when i was in college, i prob wouldve bought my own yogurt to keep in my dorm fridge and skipped the breads from the cafeteria… or better yet, you could start a petition to have non HFCS breads served!!

    any suggestions for what to do with lots of frozen spinach, green beans, and broccoli? anyone have a recipe that would mix all three together?

    Hi everyone,

    Kath’s oatmeal (and all the entries from the contest) always looks delicious but whenever I try to make oats they don’t taste good. I have to add a lot of brown sugar or peanut butter to get them to taste decent but then doesn’t that defeat the purpose of a healthful breakfast (adding in lots of sugar and fat)? Is there something else I might try?

    Laurel, Maybe you could try adding fruit that adds sweetness but not additional sugar. Vanilla or other extract might help, too. I understand not wanting to add sugar, but I love adding PB to my oats!

    Laurel – do you use salt when cooking oats? If not, maybe that’s affecting the taste. I much prefer oats prepared with salt added. On the other hand, maybe you just don’t like oats. Rather than forcing yourself to eat oats, you should find something to eat for breakfast that you like and enjoy.

    Oh darn, I was hoping you’d say that flavor of coffee was real good, because I was contemplating ordering some either online or finding a store in town with that brand! I think I’ll hold off for now since I’m not really a coffee drinker 🙂

    The hard red winter wheat are the ones I use. I think the rye and spelt berries all taste the same (like wheatberries) so I’d just pick one. There’s a slight taste difference but not much. I actually might just go with spelt or rye because they don’t need to soak. I haven’t tried their cereals (but sounds like that one another reader recommended would be great!) but I have their pilaf and amaranth and millet and have enjoyed cooking with all of them!

    No, I definitely have not always liked veggies, especially raw ones. I grew up liking corn, potatoes, cooked broccoli, and a few more and my palate has grown up a lot. I’d say I learned to like them in restaurant dishes with sauces and then eventually liked their taste for what is is. So my recommendation would be to try new things in sauces you like (eggplant in tomato sauce, etc.) and work on them that way. And….”A spoonful of sugar helps the medicine go down” 🙂

    My recommendation would be to push back lunch, so you can push back your snack. I personally can go much longer between breakfast and lunch than lunch and snack/dinner. So experiment with the timing of your first 2 meals – maybe you don’t need as much or as often as you think and you can eat more when you need it more.

    I think the big “bad” things about HFCS is 1) that’s it’s artificial and many health conscious people are becoming purists with foods and 2) It’s in things where it doesn’t need to be (You don’t need HFCS to make bread so why consume the excess sugar?) But I think of all of the big headlines (trans-fats, preservatives, etc.) it’s probably the least evil (and also the most common).

    We’ve never been grain people at dinner in terms of rice or pilaf on the side, but I’ve eaten plenty of grains with dinner – hamburger bun, kashi crackers, pasta x2 this week. Not trying to do anything intentionally or I’d let you all know.

    Cait- I live in Boulder and there are tons of great spots!
    For a quick lunch- The Pita Pit is great (Jenna from eatliverun.com always has it).
    I would go to the West End Tavern though. It is located on Pearl St, which is a great area to see. Their salads are wonderful and they have a nice roof top deck.
    If all else fails, just wander down Pearl St. There are tons of options!

    I grew up eating off the dishes you had Thursday night dinner on. My parents still use them daily. I have never seen anyone with the same ones!
