Toasty + Roasty

The high here today was in the 60s!! It’s just like March (well, a North Carolina March!) when you walk outside. I didn’t even need a coat, and that’s saying a lot. Costco was successful. I only bought the bare minimum: paper towels, TP, walnuts, dishwasher cubes, some organic spring mix, bananas. Although one of my bananas was rotten 😡 Yeah, yeah, I should return the package, but it’s such a trip to Costco that I didn’t have the energy to go.

I ate 2 tiny cheese samples while there and snacked on a few walnuts for a snack when I put them in their canister –

Dinner tonight was a roast fest: tofu, sweet potato + brussels sprouts. I had planned a sweet potato + cranberry hash recipe, but when I looked at it it called for all these complicated steps and I didn’t have the energy. So I just put all of the below in the oven at 400* for about 35 minutes. The SP + BS got olive oil and salt and the tofu got a rub with Bone Suckin’ Sauce.

This was Azumaya Firm Tofu and I liked it a lot more than the kind we usually get. It was sweeter and more like soy milk.

Note: These brussels were frozen/thawed and were not nearly as good as fresh. And the sweet potatoes, while they might look crispy, were perfectly soft tonight. I cut them a little thicker so they’d be soft and not get too burnt/thin.

The husband had a rough day so we ate in the living room and watched a little more Arrested Development.

He’s working at the bakery tomorrow so I might just call it a night too and read in bed for a long time. Sounds cozy 🙂

    60 degrees? That is amazing! Our high today was 6 degrees- low of negative 20 with wind chill… This former Cali girl is not a happy camper at the moment…

    It was 60 in Boston today too! But in true New England fashion it won’t last long, we are supposedly getting snow Wednesday 🙁

    wow that looks yummy!
    I’ve never really thought of using tofu for anything else, other than Pad Thai. The tofu looks yummy though, so I’ll make sure to buy some on my next grocery shopping trip.

    I know someone brought this up in a previous comment, and I don’t want to start controversy, but as someone who tries to be socially-responsible and environmentally friendly (at least that’s how I perceive you from reading this blog day in and day out), do you have reservations about shopping at Walmart? Their business practices have done harm to so many communities…just wondering what your thoughts were on this.

    Hey, I have a question for everyone. I would like to purchase a lunchbag in an effort to bring my lunch with me more often. My main concern is that I want to bring stuff like meat , veggies and yogurt and I wont necessarily have access to a fridge . I also want it to be functional and take the least space possible.I have no idea what brand to purchase. Any recommendations would be really appreciated ! Thanks …

    Walnuts from Costco are the best deal. We buy all our nuts there. I know they’re not organic, but I eat too many. I would go broke!

    just wondering…what is so wrong with walmart? when I’m at school I shop at trader joes but when I’m home I tend to shop at walmart and I don’t know what all the fuss is about? but I’d like to be informed thanks!

    The burssles look delicious. I haven’t had any in a while. Maybe I’ll have some with my dinner tonight. I love deciding what to have for dinner after checking out your posts. I seriously do it all the time, and it’s great. “What’s for dinner?” hum…KathEats.

    My hubby had a long day too. He wants to do some cardio when he gets home. So he gets the bike and I’m heading to the gym.

    Hey Kath!

    Your dinnner looks so delicious (as always!) I LOVE tofu and have a problem with eating almost a whole block of it at a time! I know that is too much but I am having a hard time with the serving sizes. I am curious to know how many servings of tofu your portion was. I am so bad at just “eye balling” it.

    Also, I am wondering what people think about eating tofu and/or soy products every day. How much is too much? Is there a limit to how much one should be consuming?

    It was unseasonably warm here too! I got to go running OUTSIDE! It was GREAT! Too bad it’s nasty again now. Hope you enjoyed it!

    hey Sarah,
    I usually eat half a block of tofu at a time – I usually cut the block into 4 large strips or 6 smaller ones and bake all of it them put the remainder of the block in the fridge (or my bf eats eat)! but I feel like its a good portion! I could eat the whole block too! haha~ I eat it two to three times a week b/c I try not to overload on soy from things Ive heard but I’m not sure how much is too much

    This pretty much looks like my dinner last night except I had fish instead of tofu! I think I might actually have some tofu tonight though.

    The whole Wal-Mart ethics thing seems rather subjective to me depending on what source you read. I don’t think there’s anything wrong with buying canned goods and staples at Wal-Mart when I support other grocery stores often.

    I recommend the Built NY lunch bags. They are very roomy inside (can stretch to fit any tupperware size) and can be stored flat and stuffed into things when empty. They are also machine washable, which was a huge priority for me since my other lunchboxes always ended up smelling horrible. They are probably not the top insulated cooler type lunchbox out there, but with a few icepacks my lunch stays chilled until lunch:

    I like the firm (verses extra firm) because it is a bit less calorie dense. And I usually split the block with the husband so I usually eat half a block at a time. It is pretty easy to gobble down though!
