Time To Unwind

This afternoon was work, work, work! I put together two information sheets on Infant and Toddler nutrition, which took most of the afternoon. Tomorrow is 5-11 year olds and adolescents! (Sorry I can’t share these or R.D.’s would never get paid, yo!)

I broke at 5:00 for a snack – soft serve banana ice cream with a little Cacao Bliss on top! I swear my food processor nearly jumped off the counter with this one!! I used only 1 small frozen banana, so the report is that you can make this in a small portion.

Oh, and some cinnamon almonds from OhNuts! They are good, but they’re no cranberry pecans…

Dinner tonight was from Health Magazine

Moroccan Lamb Salad With Carrots and Mint

How good does this look:

And here’s my version:

I stripped two giant carrots with my veggie peeler –

And used Oikos, cinnamon, cayenne, lemon (like the recipe says, but a little less for half the portion) and raisins and cinnamon almonds and mint from the garden –

It could have used a bit more dressing, but this was GOOD!! Loved the cinnamon and spiciness combined with the yogurt.

I also thawed out this single piece of grass-fed beef we’ve had frozen for a while. Neither of us was that hungry tonight, so the portion size ended up being perfect

And the beef was DELICIOUS! The carrot salad was quite carrot-y, so make sure you love them if you try it.

Lastly I had a nub of the new Blue Cheese Walnut Rye loaf Matt brought home! With a little bit of butter

I would have loved to have a glass of red wine with this meal, but we’re going out of town in 2 days and opening a bottle for a small glass didn’t seem very practical

    Hi Kath!! I love your blog and have been lurking for about two months while I start my journey of becoming more fit! I LOVE to cook and bake and have tried some of your recipes already!!

    The Banana Soft Serve looks so delicious, but I don’t have a food processor, do you think a blender would work just as well?

    I think I’ve seen a few people make it with a blender, but you really don’t have enough liquid to do it. Give it a try and let us know.

    Wow, that salad looks yumalicious! Hahah. Salads are great for summer nights when you don’t want something too heavy or HOT. It’s just too hot to cook this time of year!

    I have got to make some banana soft-serve! Soft-serve is my favorite type of ice cream by far, and I LOVE bananas! To the freezer!

    Man that carrot salad looks great! I make one with hummus, but I’m definitely trying that version with yogurt. And you’ve definitely increased my craving for that soft-serve…which I amazingly haven’t tried yet! 😮

    Your version looks soooo good too! Yum!

    P.S. Stacy, I tried it in my blender (because my food processor is annoying to clean), I just added a little almond milk to start it up. Ex. 1/4 of the banana and 1/2 T. of almond milk, then add the rest of the banana and a little almond milk as needed. I guess that doesn’t really make it ”raw” but still really good (esp. with unsweet vanilla). My mom tried it too, and added plain yogurt, but she’s not big on sweet so the tangyness was fine with her.

    A few weeks ago I made “healthified” chunky monkey ice cream by adding a frozen banana, pecans, and chocolate chips to my blender. It needed a little extra milk to bind together, but it was delicious!

    My friend calls her version of the banana softserve BTIC–Better Than Ice Cream.

    She and I both use a bit of soymilk to help the food processor get going. It doesn’t have to blend so long that way, and stays more frozen.

    I have made it with a variety of fruits, but using bananas and/or peaches yields a creamier texture. Either is delicious with berries mixed in. I mean, processed in.

    Banana soft serve with cacao bliss sounds amazing! Did you find that the cacao bliss hardened a bit on the cold bananas (forming a shell)? I poured some on yogurt the other day, and it hardened a bit. It still tasted FAB, but I was just curious if this has happened to anyone else!
