Ticking Minutes

Workout was great! More than the nice sweaty breather , I was glad to have a moment of time to myself this week. I did 30 minute s on the Stairmaster (nice and sweaty) and then 10 minutes of free weights . I walked into the locker room to shower, get dressed, and lightly reapply make-up at 4:39 and was walking out at 4:55 . Not bad! I love women’s locker rooms. They make me feel like a jock.

15 minutes later I was at EarthFare gathering these goodies off the salad bar!

On top: The Goodies

  • 3 pita chips
  • BBQ tofu (SOOO GOOD!!!)
  • Curry tofu
  • Chickpea salad
  • KALE!!
  • Carrot salad
  • Wheatberry salad
  • Seaweed salad
  • Cabbage salad
  • Kalamata olives

On Bottom: The Veggies

  • Spinach + mixed greens
  • Sprouts
  • Bell peppers
  • Carrots
  • Mushrooms
  • Zucchini
  • Blackberries
  • 2 honeydew pieces
  • Drizzle plain balsamic vinegar

And 15 minutes after that I was eating them at a picnic table on campus.

15 more and I was in class.

It was a whirlwind 2 hours, but I enjoyed them!

Class was OK tonight and dinner held me over well.

Once home, I had a TJ’s Molasses cookie 🙂

Not sure what the workout status is for the AM, but I’m SO GLAD I don’t have Food Lab tomorrow!!

    Why am I such a loser? Tofu – I don’t have the guts to taste it, not even for a small, insignifiant bit… Help me understand that tofu is good and tastes good.

    Tofu doesn’t really have a strong flavor. Try cooking it with some yummy flavors, such as in Pad Thai or with barbeque sauce. It will take on the surrounding flavors!
    For me, it’s more the spongy texture that takes some getting used to….

    @Steph – You know what? You are right. That’s what’s not appealing to me either. It looks bad, and I first eat with my eyes, my beautiful blue eyes… 😉

    I can usually only do tofu out at restaurants. I don’t like the way I do it when I try to cook it myself. Baking, frying, whatever, I follow the rules on pressing, etc. and it still sucks compared to certain restaurants. I dunno.

    I love love tofu! my bf and I started making tofu sloppy joes (yumm!) about a month ago and we make them once a week! its so easy…just press the tofu in a dish towel with a plate on top for 30 minutes, cut into pieces, saute in a little olive oil, add veggies (we like peppers and onions) and when tofu is brown (ish) add sauce and scoop onto ww bun!! try it!

    Korin- im totally with you. Ive tried so many times to do it myself and it just doesnt turn out the same. thats ok, ill gladly let someone else make dinner for me

    wow Kath, I’m glad someone likes women’s locker rooms. Mine is filled with naked old women! San Francisco is very, uh, free.

    I love fresh salad bars, when you can get like 2 bites of 15 different things.

    It always comes back to TJ’s in the end doesn’t it? Their peanut butter gets me through the day.

    Hey everyone,

    I’ve started making overnight oats and really like them. I wasn’t sure of an exact recipe so I’ve been putting 1/2 cup oats, 1/2 cup milk and 1/2 cup yogurt in the fridge and letting it sit overnight. In the morning I add a sliced banana and any other fruit I have (like blueberries or strawberries). Do you all add yogurt the night before or in the morning?

    BethT, your comment is super funny. I’m in L.A. and I recently became a member of a YMCA and the scenario is the same I thought it only happened at my gym… and it’s only the older women, i dunno maybe cause they’re more comfortable with their bodies.

    Kath, am now totally obsessed with your blog! I read it everyday now – total addiction. I love the fact its all about your everyday life and how you fit in healthy eating – its real. The only problem is that I can’t get all your ingredients in the UK.

    Anyway, I was wondering if you had any good recipes for tofu – that BBQ tofu sounded good. I have something bought “flavoured” tofus – ie. basil or smoked tofu which helped give it a bit more flavour. I just need some ideas for spicing it up a bit.

    I have no idea what EarthFare is, but they must have the best salad bar ever… kale? BBQ tofu? Nice!

    Sidi- if you don’t want to jump in and try the tofu “chunks”, you can always start out by blending the silken variety into smoothies and creamy salad dressings (look for recipes online). It’s a good thickener that adds protein- and as Steph said, you can’t really taste it.

    Laurel, I was doing the exact same thing (same measurements, then adding fruit and flavor in the morning.) But it just felt too liquidy for me. (I hate when things are swimming in milk! Even as a kid, I ate my cereal and milk separately.) So I tried making it with one cup of nonfat Kefir and 1/2 cup dry oats overnight and it’s perfect. In the morning, I add vanilla, cinnamon, and little maple syrup or Splenda, then top with fruit.

    I think it’s important to mix it up the night before so the oats can absorb some liquid and chill, but I’m sure you could do it first thing in the morning and let it sit for an hour or so.
