Three Lunchketeers

Carrots | Apple | Sandwich 

All the bases are covered! Three lunchbox components that are easy to pack, filling and delicious:

I made a sandwich with black bean dip and goat cheese – plus a little spinach for green color!

Carrots and apple equal more healthy, colorful produce and a bit of crunchy fiber.

Just got to Gram’s! Made a pit stop at IKEA for a few essentials I’ve since realized we need (closet rail, light connecter, one more drawer..) Trip went fine except I. Hate. 495!

    Glad you made it to Gram’s and survived both an Ikea pit stop and the Interstate. Hopefully you can cut back on trips to your second home, i.e. Ikea, now that you’re getting a bit more settled in the new house. I always find I live at Bed Bath & Beyond the first month after I move into a new place…haha!

      Haha you and me both!! I love that store! And it’s a good job there’s no Williams Sonoma or Crate & Barrel nearby.. that’d be bad news for my wallet!

    I think I might steal your wine rack idea – we need one and I loved yours! You got it at IKEA right??

    Wouldn’t it be great if every kid had this in their lunch box? I pretty sure this is what I ate when I was in grade school. There might have been a cookie or two on gym days, but mostly it was healthy. Did you eat this way in your lunch?

    I think you’re going to Baltimore, right? Coming from Richmond you could take 295 all the way up once you cross the Wilson bridge into Maryland. Then it hooks up with 695. No need to deal with 495! Signed, A Baltimoron who hates traffic

          Hi Kath,
          A fun (but about an hour slower) way to get from Towson to C-ville could involve White’s Ferry: http://en.wikipedia.org/wiki/White’s_Ferry. I have fond memories of ferrying with my Dad on weekend adventures when I was a kid. The road between Towson and the MD/VA state line at Leesburg should be discussed with someone who knows the area well (for example, stay off 270 and 370 and North of Gaithersburg, MD if you can) but it should be scenic and a fun challenge for your navigator. Bonus: you can hit the outlets in Leesburg on your way home!

        I love a good, crunchy apple – the mushy/mealy ones are so gross (AKA red delicious…) – guess that’s why Granny Smith are my fav 🙂

    I literally eat an apple every single day of the workweek. EVERY DAY. Why? they are the perfect snack! I slice them up and put them in a baggie so that I’m not obnoxiously munching on one in class! (aka having juice drip all down my hand…)

    Your lunch made me laugh (and made me feel validated!) cuz that’s pretty much what I send to school with my kids everyday for their lunch — sandwich, carrots, apple. Not too exciting, but something we all agree on.
