The Urge

I arrived home at 4:00 today and despite the gorgeous weather, I had zero urge to go exercise. So I decided I wouldn’t go. I talked to my sister, checked emails and blogs, had a snack of a blueberry Stonyfield yogurt, GL Crunch, and H2H….and did my Organic homework…..

…..and as soon as I closed my textbook, it came: the urge to get out of the house and into the sunshine and get out some energy beat down by chemistry! I wonder if the snack is what created the spark of energy in my blood?

So I suited up, put on my helmet and biked away – at 6pm! (The husband wasn’t due until 7:30). I decided to bike the longer way to the gym to maximize my time outside. I wish I could have gone running, but I need to alternate running and machines because of my foot (and the yogurt was sitting heavy in my stomach). So I did a quick 20 minutes on the Stairmaster to work up a nice dripping sweat, did 2 sets of upper body weights, and headed home. It felt so good!

Once home I put dinner in the oven and showered.

We had baked tofu covered in coriander, allspice, maple mustard, garlic powder and S+P. We put it in with the sweet potatoes (coming up!) and only baked it for about 35 minutes, so it wasn’t quite crispy yet, but we were hungry and didn’t care.

We topped with with a tiny avocado slice and a drop of hot sauce for more flava.

Plus fantastic baked sweet potato rounds? Fries? Slabs? They were perfect.

And some blanched snap peas with a little Annie’s Maple Ginger dressing on top –

I had a leftover Coconut Cupcake for dessert. And I ate the top off the other one 😳

    Yum, I’m having sweet potato tonight too, with my fake “fried chicken”!

    Has anyone use the ‘lite’ firm tofu? Do you notice any differences in how it cooks?

    kath – when you do the stairmaster what level do you usually do? also…do you do intervals or keep a steady pace??

    so cool that you had MORE celeb sightings today 😉 dinner looks deeeelish. tofu equals love.

    Yum! The tofu and sweet potato fries are making my mouth water =)

    I had the same feeling about exercising tonight, I started and had no desire to continue…so I am now relaxing instead. hehe

    love the closer. too cute! I’ve been looking for some good linen fragrances, I am not sure if any one has ideas. I like really fresh scents, like grass and lemon.

    I love sweet potatoes pretty much any way, but not sure I’d put ketchup on them.
    I really need to try tofu, it looks so good. I know I’ve tasted it before, but man you make it look good and I’ve really hardly ever had it. I’m not a huge meat eater, especially red meat, so I love other proteins.
    You sure are a great motivator of exercise!

    I read the first graph and thought, “Wow, Kath might be human!” But then I came back to earth and realized you would not blow off a workout. 🙂

    Just messing with ya, but I literally could not keep up with you. You sure are a machine lady, do you ever slow down?

    The tofu looks great. I’m not usually a big fan of tofu when it’s prepared in large pieces (as opposed to in a stir fry or whatnot), but with the avocado and hot sauce, this actually looks quite tempting.

    But not as tempting as the wee coconut cupcake!

    Oh my gosh, you’ve nailed my three favourite dishes! I am definitely going to copy your baked tofu recipe… lately I’ve been marinating squares in soy & ginger salad dressing, drizzling with Montreal steak spices, and baking, which is really delicious but I could use some new techniques. Thanks for the idea!

    I thought you might actually take the day off when I read the first part! Of course I was wrong! Man, you make me tired just reading about your day, and I have 2 kids and pregnant with the third. I guess you just can’t relax and sit still for a moment!

    This one was just about a pound in weight (it was pretty huge so I weighed it to see), and I baked it for 35 minutes at 425* with just some cooking spray on it after slicing it into rounds.
