Reader Sighting!

Here I am just blogging in the EarthFare cafe and two readers come up and introduce themselves!!! How cool! They are nutrition students too, and we made plans to have lunch here next Thursday 🙂

I knocked off some studying this morning – whew. The first round is always the hardest, after that it just gets easier and easier to go over the material. I think I’m good with functional groups, orbitals, hybridization, naming alkanes and alkenes…..you get the point!

Lunch was awesome. We’ve got a beautiful fall day and I wanted to celebrate with a cup of soup. I wanted the Shrimp + Corn I had last time, but I decided on the Black Bean + Chorizo instead.

I asked if they had any whole grain rolls, but they didn’t, so I had some stone ground Akmak crackers instead –

And of course I had to have a salad for some veggie bulk. I promise someday I’m getting a sandwich! I kept it lighter on the protein and salad toppings today because of my soup.

  • Greens/spinach
  • Sesame kale
  • A piece each of broccoli, red cabbage, orange pepper, carrots, cooked parsnip and eggplant
  • 4 little crackers
  • A handful of roasted sweet potatoes
  • A sprinkle of blue cheese
  • A sprinkle of soy nuts
  • 2 pineapple chunks
  • (I had dressing on the side but didn’t need it.)

Plus my own H2O bottle to save money + waste (I turned down a bunch of cool drinks.

I’m off to Foodservice, then workout, then making a fun dinner, then more studying! Can’t WAIT for some relaxation this weekend. I’m planning to do a little back-to-school clothes shopping, since my mom sent me a little money!! Thanks mom!

    First of all, I have to say that you do a great job with the blog, Kath. I definitely enjoy reading it everyday 🙂

    I also wanted to ask everyone what kind of Larabars they recommend. I was pleased to see them at my local grocery this morning and was curious to see which ones everyone liked. Thanks!

    My mom still takes me abck to school shopping too, and I’m not even in school anymore. I think its just a hard habit to break. 🙂

    Brittney – I love the Apple Pie and Cherry Pie Lara bars. I think those are my favorite. The Peanut Butter cookie is pretty good, too. But, really, I like them all 😉 I always have a hard time choosing.

    Hi Kath, I know you tend to call yourself a “volume” eater and I like the idea of getting to eat a lot of food for not a lot of calories but I find it takes me forever to digest food – not sure if I have a slow metabolism or what but if I eat big salads and soup for lunch I still feel too full to workout after work without feeling sick. Do you ever have that problem? And does your body just adjust or is there anything I can do to help it or is this because I have a slow metabolism?

    Back to school shopping is so much fun! Especially when it is a gift from mom. It is so much more fun when we get to shop with them though :).

    I’m not an expert, but I wouldn’t think that your slow digestion=slow metabolism. I was having some digestion issues, and went to see a GI Doc, and he told me that I just have slow motility, ie: foods are moved through my system at a slower rate than normal. I don’t know if you can “adjust” your body if that is sort of the case for you too, you may just have to be more careful at how much of a volume eater you become! Hope this helps! =)

    Oh how I wish there was an earthfare near me…or a whole foods…or anything cool for that matter. Perhaps there is one in Chicago i could visit when I am there next week….hhmm….

    You should freeze a couplle of bananas..they are AMAZING frozen and then you won’t have to eat so many…and Matt won’t have to have a meal. =]

    Mmmm! Another yummy salad, i wish we had EF!!!! Also, is that a Lauras wholesome junk food bite i spy! Those are some good eats right there! And, i must agree, frozen bananas are always nice to have handy for a snack (think frozen grapes.. 🙂 OR instead of ice in a smoothie, and recipe backup of course! I like to slice them and top w/ some PB or chocolate (or a little of both…! ) For a sweet little snacky! I love me some naners! Take care!

    Oh, and to ashley, my fave Larabars are the Peanut butter cookie, Apple pie, gingersnap, and Chocolate hazelnut 🙂
    Hope that helps! You really can’t go wrong with them, i have yet to come across a Larabar that i couldnt finish!

    Not bad! But I think if I had a whole tub of little chunks it would be hard to stop eating them…

    I often can feel salads and high protein/fat meals in my stomach for 4pm workouts – which is just another reason I prefer morning workouts. I can usually do machines in the afternoons, but I find it hard to run with all the jostling. I guess you just need to give it a little more time to digest. Are mornings an option for you?

    If you have a hard time digesting large meals, try smaller, calorie dense meals. Add things like avocado, cheese, peanut butter, olive oil and nuts to things to add nutrients and calories without adding too much volume to meals. Watch how much fiber is in your food because fiber slows digestion so you don’t want to over do it. You should also avoid filling up with fluids while eating meals, keep fluids for between meals. Hope this helps!

    Hi Theresa, Kath and RD2be, just wanted to say thanks for the responses. I’m glad I’m not necessarily doomed to a slow metabolic fate. I’ll try incorporating your tips. I’m a terrible morning person and haven’t had much success with morning workouts but I’m training for a marathon (Philly) and need to get my runs in so I may have to start now that it’s getting darker earlier and earlier at night!

    I have to agree with Laura, i think this is such a positive blog, and political ads of any sort (either candidate) just put a divide. BUT, I know this is YOUR blog, so I guess who am I to say it doesn’t belong here. I would probably be tempted to put one up if I had a blog (other candidate though :-p )
