The Tables Have Turned

First wasps, then..squirrels? Too many creatures are eating their meals on our outdoor table!

I went to Body Pump today to hang with Vanessa and Sarah (missed you Katherine!). Class was extra hard today – definitely had to take a few breaks during biceps!

Back home I showered and made a killer [wasp] salad –

Spinach, olive oil, roasted squash (LOVE cold squash on salads!) and fennel, chips and…coconut black bean dip!

The only difference was that this time I used cooked beans, which I made with garlic. I did not love it as much with the faint garlic taste, but since it’s halfway a savory dip, it was OK.

Couple more things to do this afternoon…then it’s the weekend! Compared to the last month, we have relatively few things to do this weekend!

    squirrels! my dad calls them “rats with long tails.” 🙂 they freak me out b/c when i was a tour guide in college, one fell OUT OF A TREE and landed in the middle of our tour group. terrifying. i cursed really loudly (because i’m so professional) and have been scared of them ever since!

    mmm leftover cold squash and other roasted veggies are surprisingly tasty. Even tastier than when warm in my opinion. I love low key weekends once in a while too. This weekend will be lots of catching up for me too and I’m excited about it!

    Yum for leftover roasted veggies of any kind!

    As for critters, we seem to have some bats living in our outside walls. Once in a while when I go out to sit on our deck, I notice a bunch of bat droppings in the floor. Yuck! 🙁

    Long time reader, first time commenter 🙂 Sometime, I’d love to see a picture of your salad when you’re half way through it. Your salads are always so pretty, and no doubt delicious, but I have a hard time imagining how exactly they get eaten. Do you mix it all up? Cut the veggies into smaller pieces and then dive in? Just a few thoughts I had. Thanks for inspiring me to eat real!

      I just stuff it in my mouth!! haha.

      I just kind of eat through it – I often eat bowl meals from left to right so I get the good toppings and the boring unders equally throughout the meal.

    Mmm I love squash in my salads. They’re so nutritious and perfectly sweet, usually. And gosh I love that wooden table–it’s so story-like, which I think is really fun. And the squirrels must love taking food pictures too! 😉

    I also had roasted squash on spinach as a salad for lunch! Although mine also included chickpeas, avocado, sliced beets and Annie’s ginger lite dressing. Soooo addicting!

    I just ate a delicious salad with goat cheese, almonds, nectarine, and broccoli slaw with Panera’s poppyseed dressing. SO good! I love me a good lunch 🙂

    I missed being at Pump! I did Kettlebell yesterday and didn’t want to lift again today, but ended up not doing anything… I guess it isn’t too late! Haha! I need to tweak my workout schedule a little bit. I need another Pump in there!! I plan on being there Monday. 🙂

      haha I do crave oreos sometimes, which is why I bought a pack the other day. I think they just remind me of being a kid.. oreos dunked in milk was my afternoon snack 🙂

    Mmm mmm, lovin’ the cold squash this time of year. Butternut, acorn, spaghetti, it’s all so tasty. I even had some cold cubed squash with my eggs this morning in leu of the gf-toast! Good combo, I can attest. I hate pesky pests that linger – you have a good attitude. I can’t STAND cats, awful, I know. I’m just a dog girl! And wasps, well, no thank you! Squirrels don’t bother me too much, haha. By the way, your new home looks just so lovely!

    I have to say, you have inspired me to dive into pumpkin a little earlier than I usually do…. I have to share my overnight oats for tomorrow morning because I am SO excited for them!
    1/4 cup yogurt
    1/2 cup pumpkin
    cinnamon/vanilla/nutmeg
    1/3 cup oats
    1/4 cup applesauce
    1/2 of a small apple diced up
    4 small ginger snap cookies crumbled up (there’s a really great brand at whole foods that doesn’t have much sugar in them at all and are really small and yummy!)
    sprinkle of chia seeds
    1/3 cup skim milk
    1 tbsp crunchy barney butter, melted a bit and drizzled over the top

    I cannot wait to try these! Thanks for your fall inspirations this week!
