The Summer Apple

Our sun is OUT!!

We’ve been having tons of these gloomy mornings that turn into beautiful days. I’ll take it.

I did some sit-down work, then 1.5 hours of housework, then more sit-down work.

The middle of that sandwich was exhausting! I scrubbed baseboards and the kitchen floor on my hands and knees, among other tasks.

This required hydration replenishment!

After a nice shower, I made a simple lunch.

Garden greens in vinegar and oil plus smoked salt and a torn slice of High Five bread

And a tropical bowl of Siggi’s Coconut (which I like a lot) topped with fresh pineapple and chocolate sunflower seeds! An interesting combo that worked really well.

    Your garden looks fab Kath! Very lush and green! I also love pineapple in my water and went through tons of it this weekend. So much better than plain. Have a great time at your book club!

    You are lucky that the sun is out! We haven’t seen the sun since the afternoon on Sunday. I miss it! I love the chocolate covered sunflower seeds! They make the pineapple look so festive 🙂

    I recently read that to keep blood sugars level throughout the day you should pair a fat/carb, protein/carb, or protein/fat/carb combo in every meal. From the RD prospective, is this what we should be looking for to create balance? I notice you have some meals like this where its not all in one dish, but a surprising combo.

    bahhh it looks gorgeous outside! Those weather patterns remind me of Calgary. It starts off being a little blowsy and cold but then ends in a gorgeous hot sunny day. It’s fine but it is hard to know what to wear when you go to work in the morning!

    i can do a skimpy salad, but i pretty much always need some cheese or avocado on there to spruce it up! go you for being able to enjoy straight-up lettuce.but then again, your lettuce comes straight from your garden, so it probably tastes better than store-bought? i find when i splurge on spring mix at the farmer’s market, the lettuce tastes way herby-er and nice. enjoy the sunshine!

    I only wish that coconut water was a taaaad cheaper- I love the stuff and think it really does hydrate- especially while pregnant.

    I’ve been drinking coconut water as well but I found one that was much much cheaper in the asian supermarket and it wasn’t even the type that had added syrup or anything! Loveeee coconut

    When the husband and I were on Maui our resort had a giant container filled with water, ice and Maui Gold pineapple (only pineapple still grown in HI). I drank more water on that trip than ever before…..soooo good!
