The Probability of A Good Lunch

I’ve got Stats on the brain, can you tell!? It’s getting much easier because the textbook is now teaching me formulas, which I LOVE!! This class is 100% self taught, so forumlas make everything much easier. I am done with my online assignments for this week and it feels good.

The probability of a good lunch today was 99%!!

I had leftover Butternut Squash and Turkey Soup with Kale – it was just as good as it was the other night for dinner!!! Usually in a recipe there is one or maybe two ingredients that stand out, but in this one ALL of the ingredients were amazing: apples, squash, turkey, kale, carrot, cinnamon – YUM!

Also had 2 slices of focaccia bread (2 oz). I wanted Kashi crackers (of course!) but I knew bread was a better choice today since we have a lot on hand and I’m SO glad I chose it. I toasted it for a nice crispy bite!

I also had a carrot cut into pieces. Raw carrots used to make me gag but now I think they are the perfect side dish and snack!

    Hey Kath! I have a random q- do you know how long egg beaters last? I have a container and I noticed the other day, it says sell by Jan 7, but I think they still taste good! haha! jjust want to make sure I'm not going to get sick!! thanks- Keep up the great work on everything!!1

    Mine say to "use within 7 days of opening" but I've been on the same carton for about 3 weeks now. I'm not too worried about it though. Eggs generally last a long time.

    Matt's page is fantastic – love the photo of you two at the end.

    I just baked up a butternut squash and the thing yielded almost 8 cups, after cooking (the big pre-school week cooking evening … )! Bigger than my head, it was massive … I love the idea of combining it with kale – I think the texture contrast would be awesome, serving it over some boiled chickpeas to round everything out.

    You'll be fine with stats – the harder it gets, the easier it gets, if that makes any sense at all. 😀

    Yum on the squash! Chickpeas sounds like a great combo. The kale is a great texture – chewy and smooth and SO healthy tasting on the palate. Both superfoods too!! I get what you mean about Stats – it's already easier!

    I love snacking on carrots. Sometimes I take them out when I'm making dinner so I if I have the urge to take too many tastes, I can reach for a carrot instead.

    Kath do you count lettuce for calories?

    Also, I noticed you don't typically snack unless you have a smaller/lighter lunch. How do you make it until dinner? Also, sometimes I found that when I have a 150 snack for example it makes me more hungry. Any advice (I don't want to have to cut back on my meal calories by making my snack too big)

    For the flax in your oatmeal, do you grind it yourself of buy it ground? I read that flax can spoil quickly once ground, do you worry about that?

    Also, what kind of tea would you recommend for a non-tea drinker? I'd like to try some but have no idea what to expect.

    i bought a bulk bag of ground flax from a little mom and pop shop awhile ago…( 3 months +) its been in a tupperware container and i used some today- It seemed just fine.. how do you know that its "spoiled" ???

    c) the best thing about this blog is that it has honestly made me SO un-emotional about food. I dont know why–something about it. I seriously feel like it has changed my relationship with food.

    Great tip about having carrots on hand while cooking. Bell peppers would work well there too! I love how the carrots are subtly sweet – I think the satisfy a void that other veggies don't.

    I don't really "count" lettuce when it's a leaf or two on a sandwich, but if I have 2-3 cups of it in a big salad I put it into my food diary for the nutrient record, at least. My food diary has the ability to produce reports on fiber, calcium, sodium, etc. so I like to send the lettuce into the equation for those.

    Days when I don't snack I am likely eating a pretty late lunch (1:30-2:30 p.m.) because I ate a late breakfast! On the weekends I usually have breakfast at 10 (after working out) lunch at 2, and dinner at 6-7. So I'm not going longer than 4 hours without eating. Because I'm just up for less hours I need less fuel, but when I get up at 5 for the gym, I have breakfast at 7:30, lunch at noon and definitely need something between lunch and dinner – usually around 3:30 to 4. My best advice would be to plan a well-balance snack for when you think you need it most (for me I don't really need one at 10:30 a.m. but I'm getting really hungry by 3:30 p.m.). If your 150 calories aren't holding you over, look at the ratio of carbs to fat to protein and see if you can have a little from each group or something that's considered a whole food rather than a bar. Example would be plain yogurt with fresh fruit vs. a granola bar. Or fruit and trail mix vs. just the fruit.

    We bought ground flax last time and are still using up the bag, but we plan to buy whole and grind our own a cup at a time when this batch is gone. I have read that about spoiling too and that it tastes kind of rancid. We do keep it in the fridge, which should help, and the "extra" in the freezer. As for teas, get the ones that seem like desserts! Candy Cane Lane, Vanilla Hazelnut, Almond Sunset, French Vanilla – I like them all much better than the "fruity" ones like Raspberry Razz or lemon.

    I think it would taste bad, but Dr. Weil says it oxidizes a little bit everyday so it's never as good as it was the first day you bought it. Is there any way to buy less at a time more frequently? Or grind your own? We're going to finish our bag as well, but we plan to grind our own on the next one.

    On the subject of ground flax, the new issue of Self had a recommendation to buy these "flax packs." Each were a single serving (50 cals) of ground flax. Somehow they weren't supposed to go bad as fast because they were individually sealed. They just seemed so expensive, $9 for 12. Buying it ground and storing it in the freezer seems like a good idea too though.
