Let’s pretend that we’re still on vacation…

Pancakes certainly help make dreams come true! Kodiak cakes (~1/2 a cup of mix) topped with seared bananas, almond butter and chia seeds.

    Haha I like the pretending – during my breakfast (apple cinnamon eggwhite oats – so good!) I pretended it wasn’t finals time and I could just relax and enjoy my breakfast. Aaaaaand back to studying.

    Its raining in NJ too, I made some sweet potato fries yesterday to take with me at work, but when I woke up and saw that is raining outside I just had them for breakfast, I mean its a orange vegetable so maybe it help me shine if we don’t get any sun today!! 🙂

    I made Kodiak cakes this morning too! I topped mine with the faintest hint of peanut butter and some mini dark chocolate chips. I dreamed about chocolate chip cookies so I just gave into the craving 😉

    I know what you must feel like Kath! During the last 8 days it’s been raining for 7 days (in the UK) and on top of that I’m in the middle of exams so some sunshine would really make things a tiny bit better! Should probably make pancakes tomorrow and see if they cheer me up a little!

    Its raining in Minnesota too! And I’ve been on a mini vacation since Friday, and took today off from work to acclimate to being home. Although I’m not making pancakes for breakfast. I’m going out for bagels and coffee!

    I know the mere thought of pancakes brings a big smile to my boys’ faces! Pancakes are a great way to surprise them for dinner too! It rained here yesterday afternoon…looks like it wants to rain again…managed to squeeze my walk in before I gave it a chance to! lol

    YUM! I tried to make believe this morning that my maple almond butter on an English muffin, eaten at my desk, was homemade pancakes with maple syrup…your breakfast puts mine to shame!

    Bummer that it’s raining there. Sometimes though when I need to be inside doing tasks I almost LIKE that it’s raining so I don’t feel like I’m missing out.

    I think pancakes, or waffles, really help set the mood! I love topping my Kellogg’s Eggo FiberPlus waffles with bananas – never tried them seared either, so I think I might just have to do that.

    I LOVE Kodiak Cakes thanks to you :). I was wondering though, how do you cook them? Do you use butter or oil? Your pancakes always look like they have a nice sear to them with the edges a little crispy, which is just how I like them!

      I just put them in a non stick pan that I dot with coconut oil or butter before – that’s probably the crisp!

    Kath..you’re so amazing. i’ve never seen this website before today and i just think that you are incredible. i’ve never seen someone make food look so beautiful. i especially love your photography because i’m pretty sure my two favorite things in the world are food and photography. anyway, sorry to babble on, i just wanted to say that you’re a true inspiration.
