The Flavors Continue…

Another flavor-packed meal! My power walk was great – I thought an hour was going to be so long, but it felt like 15 minutes with a good magazine! I walked for 75 minutes in a big loop around our neighborhood. Such pretty sunshine too, but unfortunately it’s not nearly as warm as yesterday.

Trip to the grocery store was successful! I managed to make out under $50, although we did buy our Easter ham yesterday so add $11 to that. No guessing to our meals this week!! But quite a few will involve ham leftovers 🙂

  • Bibb lettuce
  • Lemon
  • 2 mangos
  • 2 pears
  • 2 fennel bulbs
  • An orange
  • Bananas
  • Split peas
  • Dried porcini mushrooms
  • Polenta
  • Red potatoes
  • Zucchini
  • Strawberries
  • Fage
  • Salad bar veggies for lunch
  • BOGO free Ziplocks
  • Carrots
  • Celery
  • Bell pepper + poblano pepper
  • Asparagus
  • Eggplant

For lunch I was craving fresh veggies, so I decided to cheat and get a variety of pre-chopped from the salad bar. Included:

  • Broccoli + cauliflower
  • Green pepper
  • Snow + snap peas
  • Mushrooms
  • Broccoli slaw
  • Beets
  • A tiny bit of wheatberry salad

I combined the veggies with some bibb lettuce and some raw zucchini and tossed it with some homemade honey mustard dressing. Sometimes I just don’t want any vinegar on my salads!

  • 1 tsp honey
  • 1 tsp mustard
  • 2 tsp lemon juice
  • pinch salt

Shake in jar:

THEN I topped the salad with 1 tbsp capers, 1 blob of lemon-yogurt hummus (I SWEAR this tastes like a lemon cookie!!), 1 tbsp ground flax (which added a great dimension to the salad!) and a re-heated-in-the-oven chickpea cutlet. So many great flavors in every bite!

This lunch was about 500 kcal, 10 grams fiber, and 25 grams protein.

    What are BOGO ziplock bags?

    Also what is the difference b/w sugar and snow peas?

    Also, I find things like red pepper only last a few days…..do all your fresh veggies really last a week? or do you ever go shopping mid week?

    just curious what everyone’s easter traditions are? i know the historical reason for celebration, but what does the holiday mean to you/your families in 2008?

    Wow, your Easter food looks great so far! It’s definitely a lot more balanced than mine, I’ve been roughly the exact opposite of healthy today! It’s been wonderful though, with a huge, homemade breakfast courtesy of my boyfriend’s grandmother and a wonderful late lunch out with my family (plus homemade fudge pie at home, mmm), but my stomach is definitely looking forward to a return to healthy eating 🙂

    Happy Easter! My favorite part of today was walking around the neighborhood and seeing the flowers that are sprouting up… but the leg of lamb was pretty good too!

    And BOGO = buy one get one free, don’t you all watch those payless commercials??

    Congrats! I never even heard of Davidson till you and now it’s all over the news 🙂 That’s great that a small liberal arts school is so good in sports!

    Sorry to add one other thing how do you dry that tiny jar when you are done? It seems so small!

    Sugar snaps are the fat ones, snow peas are the flat ones.

    Our red peppers usually last at least 5 days or so, depending on how soon we cut into it. It will last longer whole.

    I don’t really remember the breakdown, but it was almost 200 kcal worth of hummus. Yogurt was another 120 kcal, crackers another 80-90, kiwis are usually 50 or so. Carrots and strawberries filled in the rest.

    Ham and asparagus 😉 And I have to listen to “Jesus Christ is Risen Today” at least once. I’m not religious, but I grew up with the song on Easter Sunday and think it’s a beautiful tune.

    Happy Easter! I was supposed to join my husband’s family dinner. I couldn’t make myself go, even for his sake. His sister assaulted me verbally and physically at a family wedding last year. I’ve not gotten to the point where I feel able to go to any family gatherings with her there. She drinks profusely, but has always been very sour tempered, for example when I was her maid of honor (she has no close friends/her mom pressed me into service), she called me the c word, cancelled a shower I put significant time/money at my expense into, and at another family wedding last year she came at me unprovoked, scratched my arms, made a very rude ethnic joke, after I walked away, came at me again and tried to physically twist my arm and told me how much she despised me. You can’t change anyone but it makes me sick that she did this to me and that no one ever gets her the help she needs/or calls her on her bad behavior, absolutely pathetic for a 33 year old woman/mother of an toddler. Her mother waits on her hand and foot, she has her own home but hangs out with her mom all day and lets my mom in law tend to raising her child/straightening up after them. I guess whatever makes them happy. I guess I just have to wait until my husband and I have our own kids/we’ll have our own family dinners.

    ~glumthiseaster-what a sad story.
    But you have your own family now. Until you have kids take time to work through these issues so you’re free from these people.
