The Fiesta Continues

Until I got to the car place 🙁

Kelsey and I showered to look presentable and then she went on her way. I spent some time with Middlesex and then made a quick leftovers lunch before heading uptown to take my car to be examined. It’s been making a funny noise in the tires

I know this is my FOURTH Mexican meal in 7 days, but the cuisine is just the best!

I piled a bunch of veggies and leftovers on a very unhealthy tortilla leftover from the beach trip. Peppers, cucumber, corn, black beans, corn salsa, cilantro, 2 tbsp brown rice, and fiesta cheese.

IMG_5737 (1024x768)

Leftover filling –

Eaten with a few chips

Once at the car place I got the bad news that I needed new back tires. They were all worn, most likely an alignment problem. He showed me the underside of Marge (my car) – how embarrassing for her!

Kelsey, my hero, picked me up so I wouldn’t have to wait at the car place and we are now at Caribou enjoying a hot beverage and our books.

I got Mango black tea. We’ll be waiting for the car place to give me a buzz to go pick Marge back up.

I had planned to do some fun cardio class for a workout tonight, but Karen is coming for dinner and it’s raining, so right now I’m leaning towards skipping it.

Adios!

I feel your pain. I hate car repairs, and tires cost an arm and a leg!

Your Mexican meal looks great! I agree, it’s one of the best cuisines out there. 🙂

I don’t blame you. I’ve been loving on some Mexican inspired salads recently too. I think the weather’s making me do it. Bummer about new tires, but maintenance like that is generally cheaper than waiting until it causes a bigger problem.

I heart mexican food, right know my wholefoods has a vegan mexican bar. SO BEYOND YUMMY, I had to take Mia, (jeep cherokee) aka missing in action, to the doc’s a lot when I first got her. She has been renamed cinnimon, cause she’s sweet and spicy.

    Kay ,
That would be the shortening, i.e. trans-fats. There’s nothing wrong with white flour! But whole wheat is better. Trans-fats, however, are proven to be bad for health.

I think definitely go with the smaller print — it’s modern and elegant at the same time and looks beautiful with the chair frame!

I loved the pics of the Mexican food. I always have tortillas on hand, and make quesadillas for my grandchildren frequently. I can wrap up lots of stuff into a tortilla for a quick snack, or use those same ingredients (leftovers) and fold them into an omelet.
