The Debate Continues

Woke up to the age-old debate this morning: Democrat or Republican…..er….. I mean: breakfast or gym first? I put on my workout clothes, came downstairs, and quickly chose breakfast since tomorrow will be an early gym day 🙂

I whipped up this great bowl of pumpkin trail mix oats

  • 1/3 cup muesli oats (oats with fruit and a few almonds from EarthFare’s bulk bins), milk, water
  • Salt, vanilla
  • FORGOT my banana!!!
  • 1/2 cup pumpkin, stirred in at end
  • 2 tbsp wheatberries
  • 1 tbsp flax
  • Some Nuts Over Raspberries TJ’s trail mix
  • Pumpkin butter smothered layer
  • Spoonful Butter Toffee PB

Joining The Masses: Barney Butter Debuts On KERF

CONTEST ALERT!!

So I think by now we’ve all heard the rumor that Barney Butter Almond Butter is A.mazing, but how about the chance to try it for yourself!!? Jennifer has offered to award 5 KERF Readers with a jar of Barney Butter. All you have to do is leave a comment on this post today and share your favorite way to eat nut butter. I’ll be using the Random Integer Generator again to pick the 5 winners 🙂 I can’t wait to taste it myself!

Recommended Reading

I told my foodservice professor about the Great Thanksgiving Challenge yesterday and she recommended this book – More With Less – as a great resource for healthy and frugal cooking. It includes 500 recipes from Mennonite kitchens. I’m going to check it out the next time I’m in a bookstore and add it to my Christmas list. Apparently over 80 people swear by it on Amazon!

Gina’s Treats

Lastly, here are Gina’s recipes for the Banana Bread + Macaroons 🙂

100% Whole Wheat Banana Bread

(adapted from http://www.lowfatlifestyle.com/breads/breadrecipes/wholewheatbananabread.htm)

Servings: 48
Makes: 2 loaves

• 4 medium ripe bananas, mashed
• 1 cup plain nonfat yogurt
• 1 egg
• 1 1/4 cup Sucanat (or brown sugar of your choice)
• 1 cup golden raisins (I like using them instead of walnuts.. lower calories and more sweetness!)
• 2 1/2 cups whole wheat flour
• 1 teaspoon baking soda
• 1 teaspoon salt and 1 teaspoon cinnamon
• 1 teaspoon vanilla and 1/2 teaspoon nutmeg

Preheat oven to 350°F. Spray glass loaf pans (2 – 8.5 x 4.5 x 2.5) with cooking oil spray.

Mix the dry ingredients, then add the wet. Stir until blended but don’t overmix. Pour into loaf pans.

Bake 50 to 60 minutes or until inserted toothpick comes out clean. Cool in pans on wire rack for 5 – 8 minutes. Remove from loaf pans and cool completely. Slice and serve. Wrap with plastic wrap keep moist.

Raw Blonde Macaroons

(Borrowed from Gina’s friend Chef Megan!)

Servings: 24-36 cookies

3 cups dried, unsweetened coconut flakes
1 1/2 cups finely ground almonds
1 cup maple syrup
1/3 cup coconut oil
1 tbs vanilla (or 1/2 tbs vanilla, 1/2 tbs almond extract)
1/2 tsp salt
*Combine in a large bowl. Using a small icecream scoop or tablespoon, spoon rounds of dough on dehydrator screens. Dehydrate at 115 degrees for 12-24 hours until crisp on outside, chewy on inside.
**For chocolate, replace almond flour with 1 1/2 cup cocoa powder (preferably raw).

    Kashi go lean waffles are definitely my favorite vehicles for nut butters! Particularly crunchy peanut butter. I haven’t tried Barney Butter yet, I hope I win!

    nut butter is my favorite right off the spoon…especially if it is crunchy! but other fabulous ways that I incorporate it in my life (ok ok i may have a minor addiction), in the oats, with bananas, apples, crackers, and even sometimes in yogurt… but really it’s the best just plain off the spoon!

    I like nut butter with everything. Everything. But I suppose on toasty banana bread probably takes the cake. (Or bread. Ha.) One of my fave desserts is also PB, honey, and chocolate chips on a tortilla, warmed up and melty.

    My two favorite ways to eat nut butter include chocolate! As a nod to today’s historical election, I’ve named my concotions the Obama Pop and Barackatizers.

    Obama Pop:
    Take a big, messy spoonful of nut butter and plunge it in a bag of dark chocolate chips. Remove and enjoy your Obama Pop.

    Barackatizers:
    Slice a banana and lay each slice flat on a plate. Put a dollop on nut butter on each slice and top slices wtih one chocolate chip.

    I will also second the recommendation for the More with Less Cookbook. We had it in my family growing up and I have my own copy now. In addition to good recipes it also has a lot of interesting information in the front about nutrition, shopping etc.

    I think the better question is “what DON’T I like to eat nut butter with” I love it in my oatmeal, on crackers, on rice cakes, on banana bread, on bananas, on apples…I think you get the picture! And when I’m not spreading it on something, I am eating something peanut butter flavored! I just LOVE this stuff!! And I love KERF!!

    My favorite way is to melt peanut butter with a few chocolate chips in the microwave and use it as a dip for apples. So delicious!

    And of course, I think oatmeal tastes bland without it. 🙂

    TracyJ: I thought I was the only one who did that. And check this out. Someone at work brought in a bottle of sugar free Caramel syrup for coffee. I hate coffee, but what I really want to try is hot chocolate, peanut butter, and that syrup. It’ll be like drinking a Snickers.

    I love peanut butter, but I’ve never tried Barney Butter – and I can’t wait to finally try it!
    I love a grilled nut butter sandwich – Kath, you have to try this! Take two slices of bread, fill them with nut butter, then grill it in a pan like a grilled cheese! It’s hot, melty, gooey, ever-so-crispy peanut butter bliss!!! You and Matt will love it!

    May sound strange but my favorite way to eat nut butter is with oatmeal AND orange juice. I really like the combination of nut butter + OJ.

    Actually, it was your blog that got me turned on to putting peanut butter into my oatmeal. I tried it in cereal for the first time today and LOVED it. I don’t think I can go back to eating either of those things without PB anymore!

    Plus there’s nut butter on bananas, apples, toast with cinnamon on top, alone, with chocolate… The list goes on and on.

    I have countless ways to eat nut butters, and I love it on almost everything: on yogurt, waffles, with cereal, oatmeal, apples, banana, pancakes, toast, kashi crackers…the list goes on. I’d love to give barney butter a try though!

    My university knows the importance of nut butters… For example: peanut butter, sunflower butter, macadamia nut butter and some type of soy butter are all served. However, we don’t have almond butter… Put a tbs of nut butter in a bowl and microwave until its melted. Then take a toasted bagel and brush the butter on top. It’s great in this form.

    I LOVE making grilled nut butter/jam sandwiches.

    Make a pb&j, almond butter & j, OR nutella & j sandwich and grill like you would a grilled cheese.

    The nut butter gets all hot and melty. It is SO good with a glass of cold milk.

    Well I am a complete PB FREAK!!! My favorite old bad habit was a jar of soy PB topped with honey kept in the freezer. Jar+spoon equals HEAVEN…and some extra lbs:(

    These days I have to be careful with PB.

    I put almond butter on everything. Just had some in my Irish oats. Also love it with baby carrots or slapped on a warm grilled chicken breast. It melts and makes a nice alternative to sugary peanut sauces.

    I have never tried Almond Butter, but would love to! My favorite way to eat peanut butter is sandwiched between a whole wheat tortilla with banana slices. I fold it over like a quesadilla and microwave for 10 seconds. Perfect!

    I’ve actually never tried any nut butter besides peanut butter, which is all I can find in my small-town grocery store. I need to branch out though and try some other kinds! Right now my favorite is making PB&J sandwiches using frozen waffles!

    I’ve always loved peanut butter on bread/fruit/celery/ pretty much anything… but am not an almond butter lover. Don’t get me wrong, I buy it and force myself to use it instead of peanut butter occasionally, but it’s not my fave. So I would REALLY like to try the Barney Butter since everyone loves it so much!!

    Confession: I can hardly EVER get nut butter of any kind ON or WITH anything else. My spoon has a mind of it’s own and before I know it, it’s gone. I’m addicted. According to Urban Dictionary, a peanut butter addict is…someone who loves peanut butter more than anything else in the world. Will eat any amount of peanut butter to satisfy their crazy craving for the stuff. Similar to a crackhead needing more crack.

    I’m humbled. That’s me. And no, freezing it doesn’t work. I just chisel it out of the jar. 🙂

    Well my favorite way was in my oatmeal, but after trying it with TJs Greek yogurt and a spoonful of jam and Go Lean Crunch that is now my very favorite way to eat nut butter…especially almond butter. Love it!

    I absolutely love your blog and check in at least daily. I love eating peanut or almond butter on most anything – even plain! I especially like eating it with bananas and honey!     Years ago I saw this recipe for a peanut butter, sliced apple, and bacon sandwich. It sounded interesting so I just had to try it. It was absolutely delicious. The combination of textures (crispy/crunchy/gooey) and tastes (salty/sweet/tart) is a winner in my book. Good peanut butter, juicy apples, and crisp bacon are the keys to an awesome sandwich. The first time my husband saw me make one, he looked at me apprehensively and said, “Are you pregnant?”

    Thanks for the banana bread recipe. I use an almost identical recipe with these differences:
    1 cups oats and 1 1/2 cup WW flour instead of 2 1/2 cups WW flour, 3/4 cup brown sugar instead of 1 1/4 cup brown sugar, 2 tsp baking soda instead of 1 tsp, and I make 18 regular-sized muffins instead of a loaf.

    I am in love with Barney Butter, what a great contest idea! My favorite way to eat it is on a toasted whole wheat pita. I love how the nut butter gets slightly warm and melted. Also, with strawberry jam added when I am in the mood for something sweeter! Thanks Kath for your amazing blog!

    Nut butter is ALWAYS good on just about ANYTHING! A fun thing to do is mash PB with a banana and 1 tbsp choc chips and spread the mix in between two graham crackers, wrap in aluminum foil and freeze! Soooooo good!

    I like to chop up a banana, combine with almond butter, granola, a little bit of milk and a dab of honey, and nuke for about 30-45 seconds. Perfection!

    My favorite thing to do with peanut butter; put a few spoonfuls on a plate and dip sliced apple, banana or berries into it. What’s also pretty fantastic is spreading it on cinnamon-flavored rice cakes with sliced apple and a dollop of honey.

    I get this honey roasted peanut butter from our little local farmers market. It is just honey roasted peanuts ground up. It is SO good on dark chocolate pieces.

    Favourite way to eat a nut butter? Can’t pick just one!! Mash up a banana with some nut butter and freeze for a couple of hours. OR, a delish wafflewich with banana, AB/PB and jam. OR, melted on a toasted english muffin with banana slices on top. OR, stirred into yogurt.

    I love to eat nut butters mixed together with Greek yogurt and jam on Kashi’s strawberry waffles. Put toppings on waffle, sprinkle with flaxseed and cinnamon, then leave it in the fridge overnight; by morning, you have an AWESOMELY delicious breakfast: the tinted (blueberry fruit conserves) mixture tastes like a creamy, sweet peanut butter Cool Whip… heating optional!

    I like to use a whole wheat tortilla, spread with nut butter, sliced bananas, sprinkled with flax seed meal and a few chocolate chips. Toast/broil in a toaster oven, and wrap it up! It’s a naturally sweet and nutritious breakfast/snack on the go! Thanks for the contest!!!

    I eat it plain on a spoon, on top of graham crackers, on top of ice cream, stirred into yogurt or even cottage cheese… I eat it in sandwiches, on top of toast, and on top of almost any dessert! I find it cuts down the sweetness a bit so it goes on banana bread, brownies, apple crisp, and pretty much anything else!

    My sister says I eat too much of it – I don’t think so.

    I have been wanting to try the Barney Butter from seeing several bloggers use it! I love nut butters on a Kashi waffle toasted, so it melts into the little squares on top. Warm and melty……sooooo ….good!

    I microwave my oats in the morning (student who has a kitchen, but the micro is in my room, easy!), and I always put a tablespoon of delicious, delicious nut butter right in with the oats before they go in the microwave. I like my oats nice and thick and the nut butter adds delicious flavor in addition to perfecting the texture!

    I am dying to try Barney Butter! Why don’t they sell it at all stores?! I have tried putting nut butters on just about everything. However my favorites are the basics…nut butters on bagels or just a PB&J with bananas.

    Hey Kath~ Ive been reading your blog for a few weeks now and really enjoy it! You put some class into everyday meals. I enjoy your recipes and oatmeal creations! My favorite way to have almond butter is on warm cinnamon raisin bread. Yum! Also every once in awhile I’ll substitute it instead of PB in my oatmeal.

    I love melting some semi-sweet chocolate chips in the microwave for about 20 seconds and then dipping in a spoonful of a nut butter (usually peanut butter!) in it and savoring slowly. Chocolate and nut butter is a great combination!

    That spread sure has been getting a lot of publicity. I bet it tastes delicious and I know my chances are pretty low, but wow, how awesome would it be if I was chosen!

    My favorite way to eat any nut butter spread is actually freezing a portion on the spoon and savoring each lick… or sometimes, I’ll mix it into cool whip free! (guilty me).

    First of all, I don’t really like peanut butter (shocking isn’t it?!), but i ADORE almond butter….i just hate how PRICY it is (10 dollars per jar at my grocery!) and most groceries don’t even sell it!

    I do love spreading nut butters (in my case, almond or cashew) on pretzels!!!!

    i really like eating nut butters on carrots. everything always tells me it’s gross. it made me happy the first time i saw you do it. it is so delcious!!!!
    i also really like making nut butter sauces for pasta or pb and banana quesadillas….
    come to think of it, there aren’t any ways i can think of that i don’t like nut butters

    Banana shots!!!
    I cut a banana into 1/2 inch bites. Then I pat each with a dollap of almond butter. On top of that I put a wee dot of manuka honey. YUMmy!! This will be a great after school snack for my future kiddos one day.

    I love nut butters! My favorite way to eat them is slathered on pancakes with a drizzle of maple syrup! Yumm! I have had that for breakfast every day this week!

    I also really love Peanut Butter Chocolate Chip cupcakes with tofu in them from the Tofu 1-2-3 Cookbook.

    Also a new thing I like to do is to mix a spoonful of Nut Butter into my Milk and Cherrios, It doesnt dissolve well but it is yummy to get chunks once in awhile!

    My favorite way to eat nut butter is no way near healthy 🙂 I bake chocolate cookies with a nut butter ball in the middle. When they bake the butter becomes warm and melty. oh my!

    I love your blog! your an oatmeal addict like me! I love to “hide” my nut butter at the bottom corner of my oatmeal bowl and then pour the oatmeal over it. That way when I have my last few bites left I have a nice melty nutty treat before my long day of classes!

    Favorite way to eat nut butter is as a PB + Bacon sandwich. Spread nut butter on bread and toast in toaster oven. Cook 2 slices of turkey bacon and add once the nut butter starts to melt. Heavenly.

    I’m deathly allergic to peanuts, but I can eat almonds with no trouble – the fact that Barney Butter is peanut free is SO AMAZING for those of us that have been out of the ‘butter’ loop for all these years! 🙂 I’m now addicted to Barney Butter, it’s the best thing ever!

    My favorite way to eat nut butter? I can’t choose!! I LOVE any nut butter sooo much- I’ll eat it on basically anything. Some of my favs are
    -Spread on fresh bananas, apples, carrot/celery sticks
    -Simply on a sandwich!
    -Spread on a croissant or buiscut
    -Spread thinly on bread with nutella
    -Nut butter, coconut, and craisin sandwich
    -On graham crackers with chocolate chips or marshmellows/fluff on top
    -On my icecream!
    -On waffles
    -From the jar!
    and last but not least…..
    ON MY OATMEAL!!!

    My mom swears by PB on sliced cucumber. I have yet to try that one.

    I eat it because I am addicted to the stuff…seriously. The funny thing is I used to hate the stuff. I wouldn’t touch it with a ten foot pole, that is until I discovered how good peanut butter and chocolate really was. I can’t go a day without it. Plus, it is an easy way to incorporate healthy fats and non-animal sources of protein into my diet.

    I’ve been a huge fan of Barney Butter from the beginning. Whoever hasn’t tried it, has got to–it’s at Whole Foods and tons of specialty groceries. if yours doesn’t have it, ask for it. My kids and all their friends are addicted to Barney Butter and chocolate chips. Perfect after school… Oh, and my son makes insane Barney Butter cookies with no flour (oatmeal is the binder). Put ice cream in between and it is like an It’s It ice cream sandwich.

    I like nut butter in oatmeal- It is a special combo though 🙂 1/2 cup oatmeal cooked with water- add 1/2 cup light berrie flavored(or vanilla/plain) yougurt, 1/2 cup thawed or fresh berries, 2 Tb of PB= excellence

    There are so many good ways to eat nut butter! Sandwiches, oatmeal, with apples, on pasta, in smoothies, in cookies . . . It’s hard to choose a favorite! But because I’m having a craving, I’m going to say my favorite way is a smoothie with unsweetened vanilla almond milk, 2 frozen bananas, and a big spoonful of almond butter! Yum!

    wow this is insane. looks like the random integer generator has come in handy, lol. I don’t know if you’re still taking entries? it’s before midnight…

    my fave way to eat nut butter with a bowl of steel cut + rolled oats (cooked), greek yogurt, dried cranberries, flax, sliced almonds, and a crumbled weetabix. i put it on the side of the bowl so i can get some with every bite! 🙂

    i also looove me some pb + celery and a good ol’ classic pbj. 🙂

    as a former north carolinian.. yay for kay hagan! and the chance that nc may go blue (or at least be purple). and lucky for me, bay area whole foods already have barney butter. 🙂

    I love peanut butter with anything but one of my favorites is mixing it in with greek yogurt, a little cottage cheese and a package of sugar free hot chocolate. Add chocolate chips and a banana…sooooo good!

    Definitely check out More With Less– it got me through a year of volunteering and living in community (on a very limited food stipend!) Check out the lentil burgers, sweet & sour lentils, German potato soup, and refrigerator bran muffins. It also has some great granola recipes. Lentils, rice, and rolled oats are your friends when cooking on a budget– though you already seem to appreciate that! Good luck with the challenge!
