The Best!

I’m having the best day!! Out at a middle school doing another one of those audits. (It’s just that time of year 🙂 ) They are fun though because you get to hang out with a different fun group of ladies (and sometimes gents!)

I started out shadowing and now I know the ropes enough to carry my own clipboard 😉

Today Zelma made the most beautiful chef salads!! So colorful. I knew I wanted one for lunch 🙂

I started to get hungry for lunch around 10:30 and broke into some Peeled dried pineapple I got at the Summit. It was awesome. Hard to believe it was dried. And just a bite or two tided my hunger for about an hour. Sometimes you just need a little bit to buy some time.

Speaking if pineapple, I brought in some leftover pineapple chicken from Sunday’s dinner to supplement my lunch. I plopped it upsidedown on top of my salad along with some cooked cabbage and baked beans mixed together. It turned out to be the BEST salad!!!

Plus some juicy frozen strawberries.

Hope the afternoon flies by!

    You know, I haven’t wanted pinapple since I got back from Thailand (it’s just SO good over there and such a disappointment here) but this post made me miss it. Off on a search for Thai pineapple, then…

    And all those salads look so colorful! Inspiration for lunch.

    Never thought of putting cabbage and baked beans together but I like both of them. Will have to try it out.

    I’m thinking of disguising myself as a middle schooler and sneaking one of those salads. I’ve got my High School Musical 3 backpack, my Forever 21 leggings and my Jersey Shore hair bump all ready.

    peeled snacks’ pineapples are great – i love that they don’t have any sulfur. wish they sold them in larger packets.

    Your job sounds like a lot of fun. I’m around middle schoolers a lot because I help out with my middle schools cheer team. Kids have such a fun spirit to them. Your post the other day cracked me up about trends… middle schoolers are definitely into the side ponytails!

    Wow, that does look good! My youngest son always orders the chef salads at school! I love that! I also love the dumping everything on the salad! That is how I eat almost everything. It’s like a built in dressing!

    This might be prying, but I am interested in knowing if your program provides these lunches for you, or you pay for them daily? I am in the process of doing my dietary internship and we get lunches provided everyday and it is SO nice! You too??

    Hi Kath,

    I was reading your bio and found myself in a similar position. I am a PR major right now in college, but have realized that my heart lies in nutrition. What kind of internship are you completing? Is it rotational? Just for one company? What kind of environment do you eventually want to work in?

      I’m doing my official ADA Dietetic Internship through Winthop University and then I will be able to sit for the R.D. exam. We’re opening a Great Harvest Bakery when I’m done! I hope to do a lot of consulting and blogging and writing 🙂
