Tears In My Oats

Oh wow, Iron Jawed Angels got even better this morning. And by better I mean worse for them but more emotional for me – I got tears in my oatmeal! What a courageous group of women. Highly recommend the movie!

Breakfast was out-of-this-world good

Finally got pumpkin back in my life! Although I picked up organic pumpkin at EarthFare because Harris Teeter is STILLLL out of pumpkin! I swear I’m going to buy 20 cans when it’s back on the shelves. I really prefer the Libby’s Pure to the organic kind. The organic has a richer taste and is runnier and is a more brownish color.

The Mix:

  • 1/3 cup oats, milk, water, pinch salt
  • 1 tbsp chia seeds 
  • Vanilla + cinnamon, stirred in at end
  • 1/2 cup pumpkin, stirred in at end
  • 1/4 cup cottage cheese, stirred in at end
  • Toppings: Crunchy Coconut Granola, Cacao bliss, coconut and Costoco PB!

My Cacao bliss jar was almost empty so I nuked it and the chocolate coconut butter turned into chocolate FROSTING. YUUUUMM! It gets all hard and waxy in the winter when it’s cold, but with a little heat this stuff is awesome. Hope to have it in my Open Sky store in the coming weeks!!

It’s raining outside, but Emily and I have plans to tackle EIGHT MILES! We knew it was going to rain today, but our schedules conflict so that this was the only day we could do it. A little H2O isn’t gonna hurt me!

    we have the same lame weather — i actually did the switch and did my long run yesterday instead of today. hopefully it will stay dry enough for you two!

    How ironic! We JUST started Iron Jawed Angels in my Women’s Studies class! I thought it was just one of those “lifetime-y” movies, but apparently it’s not!

    i love running in the rain. sometimes. last summer i got caught in a huge thunderstorm on a 10 mile run. it was probably one of my best runs ever, until i got home and discovered that my ipod was fried 🙁

    it will probably rain a bit here too on my run this morning!

    I couldn’t find pumpkin in the grocery store either! Apparently there was a bad harvest this year!

    If you put it in Open Sky, I just might have to get some. I’ve been jealous over that product for a long time, it sounds out of this world!

    I’ve been reading about the pumpkin shortage since before Thanksgiving, but there’s been plenty in my local supermarkets. Maybe no one in Philly likes pumpkin?!!

    Sometimes running in the rain can be fun! I used to pretend I was an army chick in boot camp when I ran in the rain.

    And my grocery is still out of pumpkin too! Gah I can’t take this!

    Good luck on your 8miler! Just imagine (if you get tired and need inspiration) of the amazing feeling you’ll have at the end – works for me everytime!
    Aghg I wish I could get canned pumpkin here in England, it looks so tasty! Can you think of any substitutes that work the same?

    I heard a long time ago there was going to be a pumpkin shortage this year so maybe you will have to wait until next season? That actually happened to me last year so this year I went and bought 15 cans to last me, the cashier gave me a funny look but whatever…

    Libby’s beats every brand in my opinion.
    I have a little of that cacao bliss to try but I’ve never tasted it. It’s good to hear it’s like frosting

    Libby’s is DEFINITELY the best 🙂 I stocked up on a bunch of large cans from wal-mart when I heard there was a shortage of pumpkin. I don’t know how those will last me until next year. I’ll probably have to buy some more if/when I see it again. I haven’t opened a can in a month because I’m trying to ration.

    On a side note – another AWESOME way to make fluffy oats besides banana (I absolutely HATE bananas) is about a 1/4 cup of unsweetened applesauce stirred in at the end. It has saved me from opening up all of my pumpkin and it adds a little sweetness to the mix 🙂

    Iron Jawed Angels is an amazing film. I’m actually going to a speed networking event at the Sewall-Belmont house (headquarters of the National Women’s Party) tomorrow. Alice Paul–what an inspiration. Every woman should watch that movie and then go out and vote in every single election!

    i had to watch iron jawed angels in my ap us history class last year, and it was very moving…i just can’t imagine a time when all that was actually going on. makes you grateful for what we have now…

    Good luck running in the rain….once you get out there it shouldn’t be too bad! Sometimes it’s actually quite fun! Your pumpkin oats look so delicious. I haven’t had pumpkin oats in about a month. I have been craving them but I just haven’t bought pumpkin yet! Need to do that TODAY!

    I miss pumpkin too! I have not been able to find it around here either. I am with you on buying a case of it the next time I see it at the store. I was wondering, what do the chia seeds do to the consistency of the oats? I like flax in it, but I have not tried the chia since I know it is kinda gelatinous when it gets wet. Have fun running!

    Libby’s is so much better than the organic. I am having trouble finding any brand of canned pumpkin right now and have fun out of my frozen stash made from real pumpkins earlier this fall.

    Hey Kath! Love, love, love the entry, as usual. I just wanted to add that I heard about the pumpkin shortage before Thanksgiving as well, so I looked for it in bulk online. I had to go through 3 stores before I finally found a place where it WASN’T on backorder. I ultimately found it at buythecase.net for a fairly okay price…not great. And some of the cans were dented, but I didn’t care. LOL I used those first, and now I have loads and loads of pumpkin in my pantry. Maybe try to find some online?

    Oats look great as usual. I’ve actually never tried chia seeds – what does that add to the taste? nutrition?

    Interesting side fact: Libby’s pumpkin purees are not pumpkin they are actually a type of butternut squash. Which makes sense to me. Butternut squash (at least to me) as better texture and flavor and the vines produce a lot more squashes than your average pumpkin. Honestly they aren’t that different I’m sure pumpkin and winter squash are the same genus and they may even be the same species.

    Kath,
    I just wondered what exactly was wrong with your foot? I have tarsal tunnel syndrome in both of my feet. When I got an MRI, it showed that I have an extra muscle in my foot that is a great contributor to developing this condition if you are an active person. (I used to be a runner, now I can hardly walk three blocks). Now I swim, mainly just using my arms, but I have found this very hard to deal with and was just curious about your struggles. Thanks!

      I had a fused joint in my foot from birth (apparently) called a tarsal coalition. 4 years ago my orthopedic doctor unfused the joint and my tendons and food are still recovering from being immobile for 4-6 weeks.

    Hmmm… Libby’s uses Dickinson pumpkins for their canned pumpkin. They’re pumpkins that can cross-pollinate with butternut squash, but I don’t think that makes them any less of a pumpkin! 😉

    The species is Cucurbita moschata, and if you look it up on Wikipedia you’ll see that butternut squash is a variety of that species. There are also other pumpkins/squashes that are a variety of that species. But I really think they’re two different things!

    I could be wrong though. It happens often, I wouldn’t be surprised! LOL

    Hi Kath!

    I love your blog and have been following it for a while now (first comment!)

    Anyways, I’m studying abroad in Europe right now and living with a host family. My mouth waters every time I read your blog, especially when I see the oatmeal! All they eat here for breakfast is white bread and butter. I’m really craving some whole grains. Are there any European specialties that you’re aware of? I’m dying for some oatmeal but haven’t even seen it in the grocery store!

    I still haven’t been able to find the Bob’s Red Mill coconut granola!! I look every time I’m in Whole Foods!! Looove the pumpkin oats in the white square bowl. So purdy!!
