Taste The Rainbow

My garden says hello

Today’s lunchbox is a "use up the fridge" ordeal that turned out fantastic.

I made a salad out of leftover roasted veggies (I had Matt roast some carrots and peppers when he cooked the fennel and broc!) Served over baby spinach with a drizzle of olive oil

I plan to dump on these TJ’s Baked Beans at lunchtime too!

I might give birth to a watermelon after this week!

Dessert is a little 4% Organic Valley Cottage Cheese with Flax and Butterscotch!

Shooting home AFAP after work and taking off on the road to Asheville! See you there!

    I really want to try TJ’s baked beans…I used to love Heinz’s version but I haven’t had those in a long, long time.

    Have fun in Asheville! I visited there a few times when I was in school in Charleston, and I always LOVED it. Such a great town…it sounds strange (or hippie dippy) to say that a town can have “good vibes,” but that town definitely does!

    I’m not a fan of fennel at all–in fact I can’t eat anything that has it in it! Which is weird because I like black licorice…. ???

    I never thought of putting butterscotch chips in my cottage cheese. I’ll have to try it soon…sounds yummy! You always have such great food combo ideas. My fav of yours (that I’ve tried so far) is tempeh + pumpkin butter. I never would have come up with that on my own but it’s awesome!

    Isn’t it funny how cleaning out the fridge can beget some of the best meals ever? I often wind up with what we call a “snowball salad” because it just keeps getting bigger and bigger and bigger….!

    My Dad was right for telling me to look harder when I would say “but there’s nothing in the fridge!”

    butterscotch chips are so good! though i’m definitely a chocolate-lover, i think butterscotch chips add SO much flavor to everything! i love stirring them in my greek yogurt. oh & i’m jealous of all of your yummy watermelon. must get some this wknd!

    Oh my word…very delicious in every sense of the word. I’ve been eating homemade baked beans these last couple of days and forgot how much I love them. They’re so versatile too and seem to go with everything. 😀

    I cant wait till I can have a garden of my own. I live on the 3rd floor in a condo so I have to keep everything in pots which are nice but I wish I had an actual garden to go along with them!
    Yummy eats as always! You always give me good ideas for snacks and mixes I need to try.

    Love baked beans, especially over pasta instead of using a sauce. And I love leftovers. Here’s a quirk for ya – my boyfriend and I have a song called “Using it Up”, which we sing as we find leftovers in the fridge to eat.
