Superfoods For Mom

I have been multitasking out the wazoo this morning and have gotten so much completed! And just in time for a walk before lunch. It was glorious out there, and I took Fit Pregnancy with me. What a helpful magazine! So many topics I’m interested in. And lots promoting exercise, which made me feel proud because I was out doing it while I was reading about the benefits!

I also got really excited about making a superfoods nutritious lunch! My old eating habits are creeping back, bit by bit. So glad!

I made it home just in time for my stomach to growl and lunch to be assembled in 5 minutes flat.

The entrée was a “quesadilla” made from a whole wheat tortilla, leftover frittata slices and smashed avocado. Something about my pregnancy palate LOVES tortillas with egg and avocado. And to be honest, bread doesn’t taste as good to me as it used to.

Side dishes included the most amazing champagne mango (why didn’t I buy more than one!?) and some organic strawberries.

    Wow, that mango is so bright and colorful! Your lunch looks delicious. I’m impressed that you can walk and read a magazine at the same time – I’m positive I would trip and completely wipe out, haha.

    your superfoods lunch looks sooooo good! and I need to buy some mango, I keep seeing it on blogs and it’s my favorite fruit! Also, I love listening to my Marathon Training Academy podcasts while I’m running! It makes me feel so productive, and awesome for running! haha

    That gingko leaf plate is so pretty. And can you please explain to me what the heck a champagne mango is? I’ve heard a few bloggirls mention them lately, but I’m clueless. How are they different from regular mangoes?

      I don’t really know the technicality of it – it tastes like a regular mango to me! They are a bit smaller though and maybe sweeter?

    I have been craving mangoes bad lately but the ones here right now are very sad looking. I bought one last weekend and thought it might be okay but as soon as I cut it open – all brown! Yuck!

    These photos are amazing! The colors! The plate! I just love it all….
    Champagne mangoes are the BEST! I remember discovering them in Massachusetts in August 2008 (yes, the memory is that strong, haha).

    you are just so creative with leftovers! never would think eggs to be good in leftover form, but i think anything smushed between a tortilla with lots of cheese is bound to be delicious!

    how did you slice up your mango so nicely? every time i try to do it i end up with bizarre little pieces because I can never figure out where the core is and how to make sure i get all the good fruit!

      I use a serrated knife to peel off the skin. Then I slice off the cheeks. And then the edges. I have a video about it, although I no longer use a peeler and use the knife instead (cleaner cuts)

      🙂 I was trying to decide if the cheese or the triangular cut tortilla made it a quesadilla. Hence the quotations! I’m guessing that cheese wins given the word!

    Where did you find it? I need it. Whatever mango you get, will not be the same mango I get, all the way from your area to San Diego (and locally grown mangoes are still a bit away here) but omg I want that mango!

    I loved avocadoes during my first pregnancy. However, I got sick on one during this pregnancy, and can only eat avocadoes in smoothies. They are so good for the baby and I, and I wish I could eat them in other things, and not just smoothies. Oh well 🙂

    We LOVE champagne mangoes! I need to go to Sam’s to see if they have them. I want to devour your lunch, the pictures are gorgeous. I did have mango and strawberries today, but I don’t know if they were as delicious as yours look. We have leftover Mexican tortilla casserole and carne asada tamale casserole that will be topped with homemade guac and avocado. Fit Pregnancy is a very informative magazine. Is bread becoming too filling or does it taste different than it did before? Thanks for being honest about everything, that’s one reason I love your blog!

      It tastes too….savory!? Once I’m eating it it’s good, but it’s the thought of it that is less appealing. It hasn’t been too much of an aversion, as I’ve had a handful of sandwiches in the past few months, but just something about it plain that isn’t ideal

    I’m 7 weeks preg and have been wondering if it’s too early to buy Fit Pregnancy – I’ve always been excited to get to the point where I can read that mag! Would you say it applies to the early parts of first trimester, or advise to wait until I’m farther along to start reading?

    I had almost the exact same lunch today 🙂

    Oh that looks soooooo good! Minus the mango…something about them makes my mouth all dry. I tend to avoid them…love the strawberries though. Can’t wait to go picking!

      I’ve heard that the skin has a chemical in it in the poison ivy family…maybe you are mildly allergic?

    I lived on tortillas, eggs and avocados while pregnant. For some reason they tasted better than ever. I just bought Organic Strawberries yesterday and for once they tasted really good. At this time of year it’s really hit or miss on finding good ones. They still don’t compare to summer strawberries, though!

    GINKGO!! I took a plant identification class in college. We pretty much just walked around campus learning the names (Latin and English) and our profs pet peeve was the misspelling of ginkgo. Your plate always makes me think of that.

    Thank you for this amazing list of superfoods, Kath!
    I’m a mom too, however, with years of working out and getting high protein, I think I had messed up with my digestion. I had regular bloating and indigestion, something that was concerning.
    I, sometime back, came across these really great superfood powders, that not just helped me with my gut problems, but also with the mind and immunity. The only downside is they are quire expensive.

    Hi Kath,
    A nice round-up of superfoods that you can include in easy to prepare meals. Although I am a Dad and not a mom, my wife and I prepare similar meals although I found it sometimes difficult to get the right amounts of superfoods in my diet, which is why I use a superfood powder supplement.
