Super Bowl Of Good Food

Blog was down, but I was just awoken from sleep by my crazy brother in law yelling from New Orleans, so I guess the Saints won! Here’s the delayed post..

***

Best commercial yet: GOOGLE 🙂 I heart Google.

I’m blogging LIVE from the Super Bowl!! Not wanting to miss the party, I brought my computer so I could chat, type and watch in the final quarter instead of having to do it when I get home. I gotta get up at 5AM regardless!!

We had a busy afternoon of yard work

(Matt painting the mailbox – he’s awesome and worked all day on the house!)

IMG_5416 (640x427)

And me grocery shopping

(SCORE on the 3 giant cans of pumpkin I found!!!!!!!!!!!!!!!!!!!!!)

IMG_5417 (427x640)

I also found the new dessert Oikos and decided to try out the caramel 🙂

IMG_5418 (640x427)

I had just a little bit of time to whip up some of Kelsey’s Pimento Cheese!

These Organic Valley cheeses arrived on my doorstep this past week and I knew they would be perrrrrrrfect for pimento cheese for the Super Bowl! I had a taste of each while I prepped and they were delish. I love sharp white cheddar!

IMG_5421 (640x427)

I followed the recipe exactly except I use greek yogurt instead of sour cream! So easy and always in my fridge 🙂

Grating by hand is hard! But I didn’t want to dirty up the Cuisinart.

IMG_5422 (640x427)

One of my very favorite foods!

IMG_5423 (640x427)

IMG_5441 (640x427)

We threw on our shoes slippers and made our way to Kate + Nate’s for the big party. Both Matt and I LIVE in our Target slippers!!

IMG_5505 (640x427) (2)

This is the biggest party our friends group has ever thrown! EVERYONE was here!

Matt and Gilbert got right to scruffing

IMG_5435 (427x640)

IMG_5427 (640x427)

And I got right to eating!

IMG_5432 (640x427)

I brought over these Old London Bagel Chips they company sent for me to review. Yummy!

IMG_5429 (640x427)

I sipped on two POM + soda mocktails with lime and cherries throughout the night. Having to be up for work tomorrow I didn’t want to drink any alcohol.

IMG_5439 (640x427)

IMG_5437 (640x427)

I nibbled on chips and dip while we waited for everyone to arrive with their pot-luck contributions. I was quite hungry from my run by 5:30!

IMG_5431 (640x427)

IMG_5446 (640x427)

We had lots of variety representin’ tonight!

Beautiful veggies

IMG_5447 (640x427)

Scoop dips

IMG_5452 (640x427)

Kale chips made me ME!

IMG_5461 (640x427)

IMG_5462 (640x427)

Buffalo Chicken dip [I don’t have any of these recipes – sorry!]

IMG_5455 (640x427)

And WANGS made their appearance

IMG_5467 (640x427)

Costco pizzas – which are really good!

IMG_5470 (640x427)

Kate’s famous salads

IMG_5477 (640x427)

IMG_5456 (640x427)

Diana and I clicked away!

IMG_5469 (640x427) IMG_5468 (640x427)

I wasn’t that hungry after nibbling through the dips, but I filled my plate with veggies, a slice of pizza and …more dips!

IMG_5473 (640x427)

IMG_5483 (640x427)

There were many doggies present tonight too – it was quite the full house! Lots of barking from both the dogs and the men!

IMG_5486 (640x427) IMG_5487 (640x427) (2)

For dessert, Diana brought some yummy football chocolate cupcakes

IMG_5488 (640x427)

And Conor brought Zeppole (homemade donuts!) which means “cloud” in Italian

IMG_5443 (427x640)

IMG_5442 (640x427)

Emily and I split a cupcake

IMG_5490 (640x427) (2)

Which I munched with a cloud

IMG_5494 (640x427)

I ended the night with two of Kelsey‘s late-arrival goat cheese balls

IMG_5500 (427x640)

Snacked on the rest of my pimento cheese as we packed it all up to go! I’ve got a fun salad to take for lunch tomorrow 🙂

IMG_5502 (427x640)

I think I’m headed home now to get in bed. Our friends are starting to leave and this girl needs her beauty rest! Hope y’all had a great Super Bowl evening!

PS. You’re going to want to be here early tomorrow morning for a little coupon special <3

I just had Zeppole last night for the first time at a local Italian place. They were covered in powdered sugar and so delish! So funny how you see/notice things once you learn about them. 🙂

lots of yummy super bowl food! Believe it or not, Organic Valley has one of their dairy farms just a few miles from my house in Eugene, OR. When I’m out on my road bike I pass the farm every now and then and am reminded how important it is to eat local, organic foods that are good for the bod.

Ahhhhh I NEED pumpkin (for the food I’m making for my culinary cultures class!!). It was $3 at WFs—Whaat!? So I need to find me some Libby’s at a regular store.

    Love your post title!

I saw the caramel oikos but it was $4.99 for 4 little cans. My wallet was leaking just thinking about it! I need to try it though!

One thing I miss about Superbowl parties is the food. You look like you had a good spread and I’m sure many leftovers will be present in your salad tomorrow 🙂

Loved all the veggies tonight! Healthiest and tastiest superbowl party ever 🙂

For anyone interested in the Buffalo Chicken Dip recipe, you can find a lot of similar recipes by googling just that. I generally cook a pound of chicken and then shred it (with forks). Mix it with two packages of cream cheese, 3/4 cup hot sauce (Franks!), 1 cup Ranch dressing, and a handful of shredded cheddar. Put in a baking dish, cover with more cheese, and bake at 350 or so until melty. Using low or non-fat items keep it still tasty if you so choose 🙂 Before baking, definitely taste so you can adjust to be cooler or hotter! And enjoy…

You’re smart and a good example of self control- I have to get up early for school tomorrow but sitll had a couple of beers at my superbowl party that I went to 🙁 BUT I am being more careful of how much I drink throughout the whole week, bc I know alcohol + empty calories! I’m trying to just drink tea some nights.

Can you tell I’m hormonal? I gravitated to the desserts immediately LOL.

I tried that Oikos Caramel just the other week! The caramel is really good, almost (but not quite) as yummy as a real dulce de leche, although there is a lot of it so it ends up rather sweet! Can’t wait to hear what you thought of it 🙂

And as an Australian, I don’t really care either way about the Super Bowl, but I hope y’all were happy with the result! 🙂

I love the spread… i’m wishing i took pics of all our food but there was A LOT. Somehow I didn’t go into a food coma and filled up on veggies and protein yay me!

Sounds like a fabulous super bowl party! We absolutely adore kale chips here. Aren’t they fun? Sometimes I toss them in a little tahini, nutritional yeast, lemon, olive oil, and salt which creates an absolutely addicting kale chip!

I got caramel Oikos yesterday too. I can’t wait to try it. I had the hardest time deciding between caramel in chocolate. I ultimately decided on caramel because I want to see if I can somewhat replicate the flavor of a Somoas Girl Scout cookie in the yogurt.
