Sun Break

After a morning in the office, I was THRILLED to be able to come enjoy my lunch break outside!!! I’m set up at the Starbux across the street and using their Internet in 80*. Couldn’t get much better 🙂

The Lunchbox

Smoked salmon (my fatty fish of the week!) with a Laughing Cow and mustard on High Five Fiber –

Flax CRUNCH! Love getting the flax seeds all floating in my mouth and nibbling on them. Gross, but good!

On the side – a bountiful salad.

Red leaf lettuce, celery and carrot

With a homemade dressing: balsamic vinegar (1 tbsp), dijon mustard (1 tsp), and Simply Orange Orange Mango (1 tbsp). SHAKE.

Matt took one look at this lunch and said “My that’s a lot of fiber!” LOL. Guess I should have packed a mushier fruit!?

Call me a Mega Nerd, but I changed out of my dress shoes and into my Champion for Payless slipons for a nice lunch walk as soon as I’m done eating. Complete with no-show socks!

    Did you buy anything from Starbucks because you were using their Internet? I always feel guilty and have to get something when I use a place’s wifi (not Starbucks though, as we don’t have them in Australia anymore!)

      I normally would by my colleagues said they use the patio all the time. I’m an AT&T subscriber so I technically “paid” for the internet already!

    Trust me, there are FAR worse walking shoes you could be wearing. Personally, I love the white cross trainers worn with a mid-length skirt and dark hose. SEXY.

    Those are nice walking shoes. WIth my uniform and dark hose I’ve just put on my cross trainers and gone for a lunch time walk. I look like one of those women in the city who don’t put on their heels til they get to the office.

    That dressing sounds really good! I made a similar one with 1tbsp fresh orange juice, 1 tbsp balsamic vinegar, 2 tbsp olive oil and some mustard/tamari.

    And I can totally agree with the flax seeds in the mouth thing, I love it! – it happens when I put flax in my green smoothies. 😉

    I had those shoes! I wore them on vacation and ended up with plantar fascitiis due to their lack of arch support…which bummed me out because they are so cute and versatile

    ooh, and i got to taste-test the new blue cheese laughing cow flavor yesterday and (1) it was INCREDIBLE and (2) it’d be AMAZING with smoked salmon!!

    Nice! I just got back from an early afternoon walk too… working from home today and had to take advantage of the 70plus degrees here in Chicago! It’s so unusual for this time of year it feels like I’m on vacation!
    (too bad I have 3 hours of class tonight!)

    great call on the salmon. looked awesome. at some point can you address how much planning goes into your weekly eating? you’ve talked about your trips to the store (what looks good, on special), but then what. Do you sit down and get an idea of what you are going to throw together for the week or do you just think about it the night before.
    you rock! love your blog–checking it out is the highlight of my day! 🙂

      I do a meal plan for my dinners in my Google Calendar. Sometimes I plan whole recipes and other days it will say “Leftovers” or “Eat Fridge.” Or sometimes just “Beans + Vegetable.” We do stray from our plan sometimes. For lunches, I just make sure I have bread, salad ingredients, yogurt, cheese/sardines/tempeh/sandwich fillers and fruit and put together it as cravings hit.

    I was wondering if you kicked up your protein intake as you began training for your half-marathon (I know this is a random time to ask). But, like you, I don’t eat a whole lot of meat, but I am considering a half marathon in the near future and I wasn’t sure if I should change anything diet wise.

    Jealous of that weather!

      I haven’t made any intentional increases in protein. I feel that I get enough! I do try to include a good source in my post-run meals. But between dairy and bread and the meats that I do eat, I feel that I have my bases covered.

    I work at the beach (a Navy base) sometimes and unforunately I’ve gotten used to eating at my desk and getting to leave an hour early. I think next week I’m going to have to take advantage of the weather and take a walk on the beach instead.
