Souper Busy Night!

GUF!! What a night that was!! PayPal was a madhouse this evening! We are so sorry that we cannot have everyone come the Summit. Maybe next year we can double the space!? We’re excited those of you who were able to snag a ticket in August 🙂

Work was long today – I was missing the sunshine!! Lunch held me over well, but I started to grumble before an appointment so I had a few bites of this LaraBar before, but I didn’t have time to finish it. When the appointment was over at 5:30 I was hungry for another bite, but then I ended up putting it away because I knew I’d spoil my appetite. So glad I did because I was all warmed up for dinner!

Dinner was souper exciting!!

I bought this huge bag of avocados super cheap at Costco and needed a recipe to use them in. I went over to MyRecipes.com, which is a compilation of recipes from many of my favorite magazines like Real Simple and Cooking Light and found this avocado soup, which I actually remember from a magazine earlier this spring!

This was the. easiest. recipe. ever!! (Because I did modify it to leave out the shrimp, which we didn’t have).

My version contained:

  • 2 avocados
  • 2 cups chicken stock (one of the keys)
  • 1 cup navy beans
  • 1/2 cup plain yogurt
  • Pinch salt
  • 1/2 lemon
  • Shake pepper
  • Dash Tabasco

I left out the water because we like thick soups. Garnished with more hot sauce, pepper and GOAT CHEESE!!

It was thick and fabulous. A small portion (about 1.25 cups per serving based on dividing this by 4) but very filling too.

On the side we rocked some Pop Chips. I like to eat soups with things that dip!

This was a new cheddar flavor they sent me to sample, and it was my favorite flava yet!!

After dinner Matt and I went for a walk. We used to go walking every night last summer and the one before that, but now that he has to get in bed so early we miss out. I’m glad we were able to get one in, as I love walking together 🙂 We talked about the future of KERF!

Then the Summit Registration happened and things went downhill. I’ve JUST NOW finished working on stuff. I’m so ready for the weekend and some R&R. I have a short to-do list tomorrow and then I’m hoping to finally be able to read a book.

    Aww I was SO bummed! I couldn’t get home in time enough anyways to run into the paypal issues… just the sold out one!

    Keep us non-ticketers updated on the “unofficial” activities as things get planned – it’d still be cool to do a dinner sat night or run or whatever ideas have been thrown around!

    I second Ryane – even though I didn’t get a ticket I’ll be in Boston, so I’d love to join some of the “unofficial” stuff if possible. I hope you can double the space next year. That would be awesome!

    Wow, that soup looks so thick and delicious! I can’t say I’ve ever heard of avocado soup, but you definitely pulled that recipe off!

    That’s so sweet that the two of you got to spend a loving evening walk together. Walking is such a nice way to relax and have a good chat.

    I went on a walk with my dad today as well! We waited till the sun was almost down, otherwise it’s waaaay too hot! The temperature was perfect and it’s so soothing. Definitely a nice way to end the day.

    I wasn’t home and so I arranged with my Dad for him to buy them. He said that it would bring him to the paypal login and then just bring him to the account but no option to buy anything. I told him to keep trying and it kept happening. I got home at 8:18 p.m. and tried myself and it was sold out. So disappointed, oh well. And to think we are going to be in the area anyway because we are visiting friends moving down there. If there are going to be any impromptu events Saturday or Sunday, please let us know. We are doing the 5 hour drive in any event. Thanks.

    Congrats on your Summit Success thus far!!
    The soup looks great. I can see it turning into a great soup for toppings. You could make a BLT-Avocado soup with right toppings and bread to dip in it. YUM! I’m going to have to try that.

    Late night walks with my husband are one of the best parts of the summer. There is just something so refreshing and romantic about them! Glad you were able to enjoy one last night.

    I just had a random question. My husband and I went to the movies last night and I managed to completely overdo it on the popcorn, and by overdo it I mean almost an entire container. It wasn’t the biggest and I did not add the butter, but with the popcorn I honestly just can’t stop. I was just wondering if there are or have ever been times when you felt you completely overdid it and how you counteracted the next day or so?

    Guys who couldn’t register:
    Although you cannot attend the cocktail party or summit on Saturday, we will be around Saturday night and Sunday and, of course, you are more than welcome to meet up with us. It’s too bad that we are limited to 125 tickets, but the truth is we just don’t have the budget or even one more ticket. We wish everyone could come! Also, parts of the summit will be streamed live on the Summit’s website.
