Sleepy Eyed [With No Tail]

I don’t know how many hours I slept last night, but gosh I needed it. I must have had 1,000 dreams, most of which I now can’t even remember.

Overnight oats for breakfast!

Matt tasted my almond butter last night and said immediately it was burned. Ashley’s recipe said 30 minutes and I think I gave them 25, but I think 10-12 minutes would be a lighter roast, and I’m now making the connection between the super dark color and the burnt popcorn taste. Sadness. I will have to toss it.

This morning I opened a jar of Wild Squirrel PB that I bought at Christmastime! Bright Eyed and Bushy Tailed.

Today’s oats contained:

  • 1/3 cup oats
  • 1/2 cup milk
  • 1/3 cup greek yogurt
  • 1/2 tbsp chia seeds
  • Pinch salt
  • pinch cinnamon
  • Half banana
  • Homemade granola
  • PB

And I huge glass of water because I just can’t.get.enough. these days! I’ll be halfway through pregnancy on Friday!!

    Glad you got a good night’s sleep. I wish we could say the same since the Mr’s work called at 2:30am and had him up all morning and expected him to come in at regular hours. BOO! Sorry the nut butter didn’t turn out but it sounds like you’ve got the magic number locked down for next time!

    I love that blue floral print cloth! It’s so pretty. Overnight oats are the best! I can’t wait to start having them again. They are really good on a warm summer morning. 🙂 Have a great Wednesday!

    Those oats look seriously delicious, not to mention the peanut butter 😀
    I tried to make almond butter once too and it came out…just not right, which is a bummer because they don’t sell any AB where i live anymore :/

    That looks like a pretty perfect breakfast as usual – you can’t really go wrong with overnight oats. I’m dying to try your homemade granola recipe already!

    People always give me strange looks when I say, “Bright-eyed and bushy-tailed.” Glad to hear someone else use the phrase 🙂

    Breakfast looks like an especially tasty combination of flavors and textures. I plan to try overnight oats for the first time tomorrow and I am pretty excited about it!

    Sorry to hear about the burnt almonds. I hate wasting food, so I always get really annoyed with myself when I let things burn. And I’m always tempted to eat them anyway, just to avoid throwing away what had been good ingredients — my husband usually steps in and intervenes, making sure it goes in the trashcan!

    i love a quality night of sleep! i slept great last night too, and like you, had too many dreams to even remember them. it was definitely needed since the last couple nights i didn’t sleep enough. your breakfast looks so yummy (as always)!

    What kind of milk do you use? skim? whole? 2%? organic? Just wondering if/how different fat percentages impact oat texture/taste. I tend to lean toward 1% organic but sometimes spring for 2% or skim (or soy!).

      I use a local 2% but I’d get 1% if they made it. I hate skim milk.

    I had the same experience when I made Ashley’s almond butter! I had to roast for way less time, but the second batch was absolutely perfect. Maybe my oven is just way different than hers?

    And I feel you, I’ve felt off all this week too! Super thirsty and hungry and like I can’t sleep enough. The other night I slept an extra 2 hours and was like a whole new preggo. Have you had any sharp round ligament pains? I’ve read that now that I’m (we’re!) halfway it might get worse. This morning as I reached around to turn off my alarm it happened on my right side and HURT. I hope you’re escaping those pains!

    OIAJ for me this morning! But I ran out of Wild Squirrel. Ordered some from you on Open Sky last week. Waiting (not so) patiently for it to come! Curious Cocoa-Nut has been a pregnancy favorite of mine.

    Good Morning Kath. I’m scared to try the overnight oats. Thinking they might be mushy. But I’ll give it a try. Can hurt right?

    But you will be pleased to know, last night was Sweet Karen’s Healthy nachos (as I call them) and OMGYUM! My daughter didn’t mind the kidney beans. I used ground chicken (trying beef next week). I forgot the lime so couldn’t make the guacamole. I used regular Tostitos brand and they were super salty. BUT!!!! The Chobani non-fat greek yogurt was amazing. No way that’s yogurt because it tastes just like sour cream! I was so stoked just thinking what recipes I can replace the sour cream. And lo and behold….. Cheesecake! Ok maybe I won’t make that, but the possibilities are endless.
    So thank you once again for introducing me to new foods. And thanks to Ms Karen for an awesome dinner that will now be put into rotation.

      I also love all of Karen’s recipies! Especially the lasagna where you use cottage cheese instead of ricotta.

    Do Chia seeds change the texture or flavor of a dish at all? I’m intrigued by them, since you use them fairly often, but still a bit hesitant!

    Just curious what the benefit is to making your own almond butter and coconut butter? is there something in the organic store bought brands that you are trying to avoid? Or more cost effective to make your own?

    I just made almond butter and I only roasted the almonds for maybe 10 minutes, at the most! And it was delicious. Your next batch will be perfect!

    Don’t toss the almond butter, use it to make homemade bird food!
    1 1/2 cups of chunky peanut butter (use your almond butter!)
    1 cup of dried cherries
    1 cup of sunflower seed hearts
    1 cup of crushed graham crackers
    1 1/2 cups of oatmeal
    Mix together and slap it on a wire hanger like a popsicle and hang it from one of your trees!

    It can be difficult to make homemade nut butter! You gave it a good try though. It’s hard to get the texture right, too! Your breakfast looks beautiful and I love that bowl!

    First I would like to say I LOVE this blog. Great job! Secondly, do you have a post somewhere about why you use the different kinds of butters and chia seeds and all of the other goodies you add to your oats and salads? I was just wondering what the benefits to everything might be.

      Thanks! I don’t have a post on everything. I eat them because they taste delicious, are satisfying and good sources of protein and fat.
