Serious Salads!

Apparently Lauri and I (EarthFare veterans) make some serious salads

:mrgreen: this !

Our morning was filled with two presentations, one on the nutrition research institute up in Kannapolis (really cool stuff going on up there!) and the second on OSHA and pathogen safety.

I had some coffee (black, ’cause I don’t do powdered creamers) when I got there this morning, which I had to chug before going to the first presentation, and then pumpkin spice tea that I brought from home at 11 to warm up.

We broke for lunch at noon and caravaned on foot over to EarthFare. Well, some of us walked. It’s not that cold! And I got some exercize endorphins and vitamin D on my scalp 🙂

I got a wonderful serious salad packed with

Greens
Veggies
Salmon
Blue cheese
Garbanzo salad
Kale salad
A soy nugget
A chicken piece
A handful of berries
A slice of grilled pineapple
Peas
A grapeleaf
A seasame cookie

Hit. The. Spot.

Sipping more hot tea from home brewed in EF water on the walk home!

    I’ve recently started adding more “stuff” to my salads. I used to be strictly lettuce, cucumbers and dressing. Now I like all kinds of things in the mix!

    That is a serious salad – it almost makes me want one (total salad hater)! Sounds like the internship is going well – nice to have that type of camaraderie on a daily basis.

    I love to fill up big salad bowls at places like that….Keeps me full and healthy.

    What an amazing and healthy lunch!! I’m taking it Earthfare is a bit like a buffet? I wish we had more places like that in England – salads here are SO dull 🙁 but we have the best chocolate instead 😀

    My SO is in Rock Hill right now. I’m sending him to EarthFare this week (or next since he’ll be stuck down there for two weeks).

    He’s instructed to eat something there since you always have the best looking lunches outta that place!

    I’m not a fan of the powdered creamers either. Even with all the junk that it’s in it, it’s mostly the taste that turns me off. But the tea sounds nice! 😀

    So last nights din… GLORIOUS. just for the record, i like my meat as rare as the chef’s legally able/willing to serve it, haha. Plus there are supposedly less carcinogens. Holler! to the environment and less toxins in the bod!

    Mmm that salad looks super yummy. I thing I love about looking into becoming a registered dietitian is that you are constantly learning with all of the seminars and conferences and such! Super interesting..at least I hope it was for you!! 🙂

      No other professional bloggers that I know of. One girl recognized me though because she works at the hospital where I will be interning! And I prefer to think of most people’s responses as “cool” and not “crazy”

    My salads always end up chock full of healthy ingredients, and by the end of building one, it’s HUGE! haha I’m so glad that you had a wonderful afternoon. Earthfare is quite a nice store. I hope you have a great rest of the week!

      Admittedly not the most “real food” on the buffet… it’s a chicken nugget that’s made of soy. I don’t really care for chicken nuggets or soy-based foods, but for some reason these taste so good to me and have a great texture. I wouldn’t buy them, but I eat them occasionally.

    Beautiful salad, Kath!

    Can’t wait to follow along on your dietetic intern experiences. I’m a preceptor for the local Dietetic Interns…we have a class starting next week- each intern will rotate with me for one week in wellness/weight management. It’s been 10 years since my intern experience, so I look forward to seeing your thoughts/experiences…hopefully I can learn something that will make me a better preceptor!

    May as well wear a hat—above about northern FL/southern GA, it is impossible for human skin to synthesize any Vitamin D from sun exposure. Due to the angle of the sun hitting the earth at these latitudes during the winter, the UV penetrance is nowhere near strong enough to produce any Vitamin D. So, either head south or take those supplements!!! You need 1000-3000 IU/day, and it is nearly impossible to overdose (you’d need to be getting probably at LEAST 10k IU/day), so load up!!! 🙂
