January 5, 2010

OYO

All this orienting makes me feel like student – listening to lectures, classrooms, homework…. I’m ready to get out there and get going! One more day to go.

I snacked on a fruition bar around 4:15 during our last talk. It tided over my hunger for the rest of the afternoon quite well. Love those bars.

Finally made it home around 5:45 (after stopping to get gas 👿 ) Lauri and I had big plans to cook dinner together tonight, but we rescheduled for tomorrow night because it made better sense for our schedules. That meant that dinner was OYO (=on your own) but since we have tons of leftovers, it was fun!! No pots to clean

Matt and I lounged on the couch for an hour watching Conan and holding hands 😉 Then we made our dinners

I had a black-eyed pea patty on a freshly baked Flax Oat Bran bun!

With jalapeno, ketchup and mustard

Plus a quasi-salad of spinach, leftover acorn squash and Costco Cinnamon Cranberry Goat Cheese all heated up together so the spinach wilted, the cheese melted and the squash was hot

HE had Sour Cream + Onion Pop Chips and leftover soup!

Tonight was very relaxing. Hope I can keep it up!

    That sandwich looks yummy! I have major jalopeno envy and was wondering how you guys do yours…..canned, jarred, fresh sliced? I’m sort of obsessed with them and ordering cheddar/jalopeno nachos from the bar downstairs seems like a habit I should start tapering off! 🙂

    Love leftovers – especially for OYO dinners. I want to make some of those black eyed pea burgers – I don’t think I’ve ever actually had black eyed peas?! Cranberry goat cheese is one of my favorites.

    We’re living parallel lives! I had my second day of orientation today, too. I’m so impressed by your ability to work out, go to work, eat amazing meals, and blog! Still trying to figure out where the energy to accomplish all of this comes from!

    I love the Sour Cream and Onion Popchips. It must me a guy thing because the second we go the ox of them, Adam grabbed the Sour Cream and Onion ones and I had to wrestle one away from him to try it!

    I just made acorn squash tonight and love it!! I actually used seasoned salt and then added ketchup on it afterwards.

    It’s amazing what you can do with leftovers! People always cringe at the word…but you can make some serious eats with them… Your dinner looks delish!

    Oooh sour cream and onion is one of my favourite flavours! I love pringles that are that flavour 🙂
    I just discovered caremalized red onion and balsamic vinegar flavour crisps..can’t wait to try them!

    If you love the acorn squash with spinach, you will love this recipe from Wegman’s. I haven’t made it myself, but I get it from their “take-out” section in the deli all the time. One of my favorite things to buy at Wegman’s–it is to die for!!

    Butternut Squash with Baby Spinach

    SERVES 8 ACTIVE TIME: 5 min TOTAL TIME: 1 hour 0 min

    2 pkgs (20 oz each) Food You Feel Good About Cleaned & Cut Butternut Squash, cut in 1-inch cubes
    2 large red onions, peeled, chopped (about 4 cups)
    3 Tbsp Wegmans Basting Oil (a mix of Grapeseed Oil, Canola Oil, Dried Thyme, Dried Parsley, and Natural Garlic Flavor)
    Wegmans Sea Salt and Cracked Black Pepper to taste
    1 pkg (6 oz) Food You Feel Good About Fresh Baby Spinach
    3/4 cup Food You Feel Good About Sweetened Dried Cranberries

    Preheat oven to 350 degrees.

    1.Combine squash and onions on large baking sheet; drizzle with basting oil. Season to taste with sea salt and pepper; toss lightly.
    2.Roast 55 min, until tender and brown. Toss squash, spinach, and dried cranberries in large shallow serving dish.

    Calories: 140
    Nutrition Info: Each serving (1 cup) contains 140 calories, 26 g carbohydrate, (4 g fiber), 2 g protein, 5 g fat, (0 g saturated fat), 0 mg cholesterol, and 40 mg sodium.
