Running + Running Late

I’ve been running (4 miles – hot!) and packing and eating. Forgot about blogging!!

Today was a special day…one that comes around maybe 10-12 time a year. The end of a Sunflower Butter jar!!

I filled it with milk, yogurt, oats per the overnight oats recipe plus chia seeds, blueberries, raspberries, a little banana and Cville Cluster! I actually put this together two nights ago and had a smoothie yesterday instead. I can vouch that it was delicious and turned out fine, but it seems a leeeetle bit old.

Time to pack some more. SO excited for my new phone on my travels! What a great way to break it in. I also found a cool alarm feature called Morning Rise (or something similar) where the alarm starts to play pretty music lightly 5 minutes before you wake up. Sweet!

Also downloaded Business Calendar that is really cool and prettier than the stock calendar. I’m using the Simple Calendar Widget too – so pretty!

    The end of the Sunflower Butter jar is always bittersweet – so exciting because it means oats in a jar but also so sad because it’s the end!

    I have yet to try the Trader joe’s Sunflower Butter, but I had a Natrually More jar this morning that I am really excited about. My oats are in there and I’m trying really hard to patiently wait for them. 🙂

    I’m meeting my parents in Bristol,VA tomorrow (halfway point btwn our town & theirs – Richmond!) b/c they’re getting my girls and keeping them for a week! I said all that to say that she’s making a trip to TJ’s for me today to get me some SSB to bring tomorrow. Too bad they’ll be driving through Cville too late tomorrow evening to hit GH! OH, and I had some OIAB this morning after a 5-mile tempo run and the only yogurt I had to use was Pineapple Chobani. Next time I’m getting to the bottom of one of my TJ’s SSB jars, I’m totally going to recreate today’s version. Man, I’m excited already! Have fun in Philly!

    I hate to say it, but I made overnight oats with a banana and didn’t like it. I don’t know why, but it wasn’t appealing. I need to try it again without the banana.

    Wait.. it takes you a month to get to the bottom of a nut butter jar? Or just a sunflower butter jar? I may have a breakdown if it is the former because I swear I go through at least 2 a month.

    I made my very first overnight oats in that same jar last week and loved it. Currently eating overnight oats in a small mason jar @ work. Yummy! Thanks for the idea and safe travels

    Question: Do you refrigerate your sun flower seed butter? I noticed this morning that the Trader Joe’s brand says to refrigerate but the SunButter brand does not (says not necessary/preference on the Web site).

      I do not! I don’t think any nut butters need it unless you don’t want much separation. I like it runny

        Awesome, so I have nothing to fear! Since you said you go through 10-12 jars per year, it sounds like we go through them about the same rate. Glad to know I can safely leave it in the cabinet for a month and it’ll still taste great. I like mine runny, too. 🙂 Thanks for responding, Kath!

    Just bought my first jar of Sunbutter thanks to you, Cait and Allie always raving about it. It’s funny because I thought it was drippy because you put it on your oats but it turns out it’s just really really drippy. 😀 Have a great day Kath!

    Cvile Cluster has become my absolute favorite snack in the world!! I bought the bundle a while back…haven’t tried the pancake mix, but have had the oatmeal & I’m almost through the whole bag of granola. LOVE IT! I was starting to panic b/c it was getting low. Wondering when it would be back on Opensky….so I thought I’d check the site and there it was! I just bought the Groovy Granola & Cville Cluster combo a few minutes ago. Yey!

    Love those mugs, but I wish the were bigger:(
    I’ve been making a big batch of O.N.Oats so I don’t have to make them day after day. I make them in the big yogurt tub and then take out a portion. They seem great days later still. Love them with cacao nibs!

    Hi, Kath! I found your blog a month or two ago through another food blogger’s website and I absolutely love everything you do. I want to become an RD in the future and I can’t tell you how inspired I have been by all of your meals (especially breakfast–favorite meal of the day!). Some of my favorites are overnight oats and all your delicious oatmeal combinations.

    After I started reading your blog, I went to my local Trader Joe’s and bought a jar of sunflower seed butter (it was something I have been meaning to try anyway) and now I’m hooked! I have been slowly eating my way through the jar and I can’t wait for until I reach the end so that I can make overnight oiaj just like this. 🙂
