Right To The Point

Yesterday was kind of a blah day. Blah weather. Nothing really fun scheduled and a bunch of work to catch up on after the Easter festivities, zoo trip day, etc.

But I did start my day off on the right foot! Two feet, actually, were jumping high in athletic conditioning (which I have learned is properly called “Plyo Max.”) I really, really hate getting up at 5:30am (Instructor Chris greeted me with a “Good job waking up this morning!” Ha!) but man the high after that class is so good that it’s worth it. Convince me of that next Wednesday night!

Back at home I made this recipe for a whipped raspberry overnight oats for a freelance project I’m working on. Loved the texture!

IMG_7060

It was sort of like overnight oats meets dough boy smoothie.

IMG_7051

I got a great StitchFix box in the mail! All keepers. {The names of the pieces are in my Insta-comments if you’re interested} My stylist has been Layla for a really long time and I LOVE her!

Mazen and I had grilled cheeses for lunch – mine was with ham and a big salad with Whole Foods mango dressing, colorful carrots and avocado. His was with just cheese and an apple with PB on the side.

Foodblog-7125

Afternoon play time together! M loves to get down with his trains and study the way the move.

Foodblog-7130

Dinner last night was pulled out of a hat. We’ve been riding the leftover train since Easter and just stocked up on a few staples to tide us through the week. We have mixed greens but not much else! I found a bag of edamame in the freezer, which we had as an appetizer. Just drizzled in some soy sauce with a pinch of salt.

Foodblog-7138

I found some shrimp in the freezer too, which we sauteed with jerk seasoning and served over salads with mango dressing and avocado.

Right To The Point

Foodblog-6992

I have a nice little giveaway for you guys this morning! Out of Greenpoint, Brooklyn comes a new ceramic knife company committed to sustainability and environmental awareness: Casa Neuhaus. Their knives are gorgeous with a stainless handle and dark ceramic blades made of black zirconium oxide. They are surprisingly lightweight and are super sharp – and they promise to stay that way since ceramic knives rarely need to be sharpened. The knives also come with a storage sheath to keep them safe and secure when not in use (or say, when bringing them to the beach!)

Foodblog-6993

One lucky winner will get a set of 3 ceramic knives including a 3-inch paring knife, a 5-inch utility knife, and a 7-inch chef knife! Enter below to win, and submit a blog comment with your favorite salad dressing recipe! USA only please.

My favorite is pretty basic – olive oil, a couple of cloves of crushed garlic (I just leave those in the bottom to infuse the olive oil) and whatever herbs I have on hand, fresh or dry. Usually rosemary and thyme. I also add a little bit of apple cider vinegar, salt, and pepper to balance out the flavors.

I used to love all kinds of dressings, but these days, it’s simply olive oil and vinegar. We have a great store locally that has a TON of high-end olive oils (some infused, some not) and vinegars (some infused, some not). So that’s what I use!

I have two: one is blood orange juice (fresh squeezed) and champagne vinegar, with finely chopped shallots and olive oil. The other is a more traditional vinaigrette except that it is made with a very good apple balsamic vinegar, dijon mustard, salt, maple syrup, olive oil, and walnut oil (it’s also good with pear-white balsamic).

My favorite dressing is green goddess. Slightly more complicated than a simple vinaigrette, but I love all of the super herby, tangy flavor. Mayo would be traditional, but I like a version that uses greek yogurt instead. Combine that with some sour cream, lemon juice, a couple of anchovies, garlic, salt, pepper, and a big handful of herbs, and there’s nothing better.

    Lemon basil vinaigrette

2 1/2 tablespoons fresh lemon juice
2 tablespoons olive oil (preferably extra-virgin)
    2 garlic cloves, crushed
    1/2 teaspoon grated lemon peel
3 tablespoons thinly sliced fresh basil or 3 teaspoons dried
    2 teaspoons drained capers

Wisk first 4 ingredients together, then stir in basil and capers.

Great on salad greens, cold pasta salads (with some fresh grated parmesan!), and fish.

Oops…I see you wanted salad dressings! 🙂 I love any of the simple Cook Smarts options…a little vinegar, mustard and oil. Yum!

Ooohh…..I don’t know if I have a favorite! I generally load my salads up with so many delicious veggies that dressings can sometimes be too much for me. BUT, since I have to pick, I’d have to go with a balsamic vinaigrette. I think that has the right sweet and savory flavor to compliment all the veggies!

A quick simple honey mustard. Olive oil, Dijon, a splash of honey and salt/pepper to taste.

My favorite salad dressing is classic vinegarette – oil, vinegar, dijon, garlic or shallots, salt and pepper. yum!

Those knives look beautiful. My favorite dressing recipe is avocado or olive oil, coconut aminos, lemon, thyme, salt and pepper. It is fresh crisp and tastes great with any salad especially Asian inspired. 😉

I have to admit I’m a sucker for original Hidden Valley Ranch, made with buttermilk.

Usually a mix of olive oil + vinegar + dijon + honey + salt OR when feeling lazy, I just drizzle olive oil and balsamic straight onto the greens.
