Blue Apron Salmon Recipe Video!

As part of a series of posts I’m doing this year with Blue Apron, I decided to show you a behind-the-scenes video of a recipe start to finish. My sous chef Blake helped me cook this meal on a bright Tuesday morning. Here’s the fun we had!

Panko-Crusted Mustard Salmon with Roasted Potatoes & Waldorf-Style Salad

The dijon under the panko gave the salmon SO much flavor, and this Waldorf salad is one I would love to make again. The yogurt dressing was so simple!

The second meal included in my box was a Lamb & Beef Tagine with Swiss Chard, Date Molasses & Whole Wheat Couscous. These were the two best Blue Apron meals I’ve had to date! The beef and lamb blend was a nice twist on typical meat meals, and the whole dish was packed with flavor from new-to-me ingredients like date molasses and Ras El Hanout, a North African spice that was so complex it’s impossible to describe. {Read more here!} A mint and cilantro blend were the perfect garnish!

    I love the idea if Blue Apron but part of the fun of cooking (to me at least) is the whole process: picking the recipe, shopping, measuring, etc. But Blue Apron would definitely save time!

    I like the idea of Blue Apron but that’s an awful lot of packaging waste. How was the fresh produce shipped? The little box of sprouts was cute but, again, so much waste! I’m surprised Blue Apron hasn’t utilized some sort of modern, environmentally friendly shrink wrap-like package yet. It could be part of their marketing! “Easy, fun, and eco-friendly cooking delivered right to your door!” or something. I’m hesitant to try something like this…and I’m not some “zero waste home” crusader.

      They’ve actually made a huge amount of progress on the packaging. And you can recycle the whole box. (See here for more info)

    That lamb and beef tagine looks amazing. I had to click over to see the recipe and noticed there was onion, but it’s not pictured in your post. Did you skip it? If so, do you think it made a difference in the flavor?

    I have been using Blue Apron for a month now and I love it! The meals are creative and interesting. Had a little problem one week and their customer service response was above what I expected. I don’t see myself getting tired of this service anytime soon.

      Agree. During bad weather , there were delivery delays
      We learned to use what we had , and , blue apron was good at covering losses.
      I have become a better technician in the kitchen. And I have heard other friends say they are better cooks. Great meals and some good learning opportunity too
