Reunited

Hey there gorgeous

The Mix:

  • 1/3 cup rolled oats, 1/3 cup milk, 1/3 cup water
  • 1/2 tbsp chia seeds
  • 1/4 cup pumpkin, stirred in at end
  • Cinnamon + vanilla + pinch salt
  • Pumpkin butter
  • Maranatha Almond Butter
  • Toasted pecans
  • Crunchy Coconut Granola

In preparation of my first week of full-time work (3 days of internship orientation and my first 2 days at Salisbury-Rowan Schools) I’ve got a kitchen assembly line in the works. Beans simmering…

I gotta practice what I preach, and the single most important key to eating healthy while juggling a busy schedule is planning ahead and prepping on the weekends.

    Totally agree! It’s all about planning!
    I’m currently cooking 10 chicken breasts in my crockpot in preparation for the week. They will be used in sandwiches and salads for our lunches. And will taste so much better than the usual deli meat.

    planning ahead does make a HUGE difference when you’re crazy busy! i know that’s what me and the husband are going to be doing all day today since the first week back from vacay is always insane 🙂

    Perfect welcome home breakfast Kath! And, as usual, love how prepared you are. I get the “rolled eyes” from my family for being so prepared, but they’re usually the ones suffering when they get hungry and don’t have the time or means of getting a healthy meal/snack. 😉

    I was just talking with someone about that the other day! The best way to eat healthy is ABSOLUTELY planning. It totally eliminates the unhealthy snacking and drive thru eats! Glad you made it home safely…good luck with your week!

    Cooking on weekends is the only way I get through busy weeks. Risotto and soups are my favorite things to make in bulk because you can just divide them into containers and take them to work for lunch.

    Planning ahead is *key*!!! It prevents all that mad rushing around during the week or worse—going hungry or eating on the fly.

    Brrrr! Enjoy your run. I love to excercise outside when it is cold, though. But I’m not sure about THAT cold. Here in Saudi it is freezing when it gets below 60.

    Your eats look fantastic, what a combination of delicious flavors in your breakfast oats. It sure made your coffee happy!

    Planning ahead is the only way I can manage to cook good meals during the week. Otherwise I get lazy and things begin to fall apart.

    Planning ahead works wonders in our house too. We both work full time and have two kids (11 and 13) with busy schedules too. I’m proud of the fact we don’t eat out or eat fast food very often. It will be fun to see how you plan ahead and get more tips along the way!

    The coffee IS laughing. How cool! Thank you for the oatmeal posts. I finally figured out why I couldn’t stand oatmeal and it was all about consistency. If I put something crunchy in it, I LOVE IT. This morning was a creation of steel cut with water/milk, flaxseed, almond butter and chia-walnut-cranberry granola. Because I’m a diabetic, I added a side of scrambled 1egg+1white for extra protein.
    I’ve been eating this about 4xs a week for 3 weeks and my blood sugar levels are showing improvement! THANK YOU!!!

    God, that oatmeal hurts me! Love the look of it. Hubs and I went out for breakfast this morning and I got egg whites and some extras, but that oatmeal could have beat it. Perhaps for dinner… 🙂
