Return Of The [Pump] King

Good morning!

Up for some pumpkin oats!?  It’s been a while!

It’s also been a while since I’ve dug into some BISCOFF SPREAD!!!

The Mix

  • 1/4 cup scottish oats
  • 1/2 cup water
  • 1/2 cup milk
  • 1/2 banana
  • 1 tbsp chia seeds 
  • Pinch salt
  • Pinch ground cloves
  • 1/4 cup pumpkin, stirred in at end
  • Granola
  • Ground flax
  • Walnuts
  • Biscoff amazingness

Karen begins her chemotherapy today, so Matt and I are taking turns staying with her. I’m on afternoon shift, so I’m working this morning, fitting in a workout and then packing up some sandwiches to take to them.

    I had a crumbled Biscoff cookie on my oats this morning – I think it may be the best topper. By the way, I bought my stash of Biscoff cookies at Walgreens. Don’t know if you have Walgreens where you are, or if all stores carry Biscoff, but something to look for.

    And fingers are crossed for Karen!

    I miss pumpkin oats and pumpkin anything! It’s much too expensive canned now, so I switched to pureed carrots + sweet potato. In fact, I puree my own, it’s so darn easy and cheap! Just steam a bunch of carrots and sweet potato, and puree with cinnamon using an immersion blender! 🙂

    I don’t know about Karen – but well wishes and she’s lucky to have you guys.

    On an aside note, I was wondering about the popularity of Chia Seeds – do you add them to your oatmeal or yogurts, etc simply for the nutritional boost – or do they add “plumpness” or extra “flavor”? Thanks.

    Best wishes to Karen! Chemo tip: get popsicles! stock up on food that isn’t acidic, too crunchy, too spicy — chemo really does a job on your mouth — usually creates mouth sores – check with the nurses for a prescription mouthwash that helps tons.

    If you need any Chemo tips just let me know — 3 year Breast Cancer survivor here 🙂

    All good wishes for Karen, hope she gets a wonderful result.
    A friend who went through “chemo” was told by the nurses to sip on “Slushies” during the actual treatment,they are flavoured mushy ice drinks, she said they were very helpful with the side effects of the drugs going into her body…….hope this helps.

    That oatmeal looks so creamy and delicious. Now you have me craving pumpkin.
    My love goes to you, Matt, and Karen. Chemotherapy is a hard thing to go through. I volunteer at a work out center for cancer patients. Moderate exercise can have many benefits so try and encourage Karen to get some.

    So do these oats have the bitter taste of pumpkin? I do like the way pumpkin tastes, but im not sure id like that bitter taste in oatmeal. Thanks.

      I don’t think it tastes bitter personally. A bit gourdy, but not bitter. I think the sweet banana helps balance any savory taste

    Just a quick thank you for introducing me to the Biscoff cookies…after I read this post I went to their website and realized that they just might be the same cookies that I used to get on afternoon United Airlines flights. I loved those biscuits so much that I nearly made excuses to fly just so that I could eat them. Needless to say I was REALLY sad when they stopped serving them. Imagine my delight when I found them in Walgreens…and discovered that they were, in fact, the same cookies! I can barely believe that I haven’t eaten the whole package. I have stopped short of purchasing the spread, but I called their customer service line and was told that they will begin selling it in stores (i.e. without the shipping charge) in a couple of months. Hooray!
