Rain On My Parade

A delicious packed lunch shot in the rain for the love of natural light!!

[And hopefully no pollution! ]

Today I packed another salad – because it was the easiest thing to pack!! I try to alternate between salad + yogurt or sandwich + fruit/veggie sides type combos.

Today’s salad was exciting thanks to a few more toppings:

Spinach base with carrot, celery, pepper and broccoli (the staples) topped with raisins, some hemp seeds I brought back from One Lucky Duck (yes, they survived that journey!) and a little of Annie’s Goddess dressing, which I like a lot but don’t use often because it takes the right kind of salad (no cheese or hearty toppings) for me to like it.

My protein-rich side dish is an Oikos with some Galaxy Granola – cranberry orange!

And lastly, a Food For Life tortilla for chew to contrast crunch.

Afternoon snack to be consumed around 4PM will be an Alliebar!! My second-to-last because I shared with Emily and Lauri.

    Love seeing what your salad mix is for the day. And do you eat the tortilla plain alongside it or wrap any of the salad up inside? BTW… I love your little umbrella icon! Where do you find your codes??

          I think she explained on her blog that she is keep schtum for the moment, whilst she finishes her degree, because she may *fingers crossed* be setting up her own bakery/business after her finals? Yay!

    Good looking salad for lunch! It’s great how your toppings can really make a plain old salad exciting.

    i have the opposite sentiment.. How is it ONLY Wednesday!? That might have something to do with the fact that I worked all weekend.

    Goddess Dressing is my favorite dressing. Have you tried the Trader Joe’s version? I prefer that.

    Yummy!! all that food goodness has to make up for the rain a little!
    you are such an inspiration to me.
    My last few posts have been all about me trying to find the balance between eating right and doing what I love (Painting!!)
    I have turned to frozen foods and have dubbed myself the frozen food queen!
    Seeing your fresh foods reminds me of how much I used to LOVE preparing and of course EATING fresh food!

    You’re so good about eating salads – I got through ups and downs with them where one week I’ll have it every single day and then the concept of a salad drops off the face of the earth for another month or so. I’m thinking about making warm salads too because we’re still in our drizzly weather – maybe roasted veggies w/ goat cheese or something like that.

    Hah, due to all the secretiveness behind them, I’m sure “Alliebars” will be a hit whenever she decides to somehow market them or release the recipe. Hope the sun comes out for all of us… actually, maybe not, or else I won’t be inspired to finish my work.

    also interested if you have the tortilla plain or if you wrap some salad inside. totally agree with your take on Annie’s Goddess dressing! i cannot use it when there is cheese on my salad! – which is basically ALL THE TIME, so sadly, i rarely use it!

    That dressing is great but it does kind of take the right kind of salad.

    We had the rain yesterday and it really cleaned up a lot of the pollen! Thank goodness! Salads are really the best lunch and it is all about the toppings! Have a great afternoon!

    Hi Kath,
    I just wanted to say thank you for your post about looking at your injury-induced exercise hiatus as a gift of time. I have a serious case of tendonitis in my right achilles, and have been benched from running for 10 days now. I had been SO frustrated and upset, as I was really getting in a great running groove and upping my mileage and speed seriously for the first time since having my baby… this is such a setback! But, your post really spoke to me. As a new mom, I rarely have time for myself, so you have convinced me to look at that hour I would have spent out running as a time to just chill and take care of myself. Right now for example :)… I’m icing my leg and enjoying some blog time. This attitude adjustment is really priceless. Thank you so much.

    Fun fact: All rain is slightly acidic. Normal pH is 5.0, acid rain runs 3.0. Rain would be like vinegar to your salad! Not great to consume though as it definitely has some pollutants! This is what I get for studying atmospheric chemistry! More of a reason for the rain to go away!

    The cranberry orange galaxy granola is by far my favorite out of any granola, so yummy.

    The weather is crappy here also, yuck.

    I never thought to eat the wraps plain. They taste great, but they simply refuse to roll for me without breaking into pieces. What a great idea!
