Put The Spoon In The Coconut

Pile-O-coconut butter to greet me for breakfast this morning! Hilary gave me the end of one of her jars (she’s HOOKED on the stuff!) I haven’t had it in ages – I’ve been meaning to buy more! Apparently it’s on sale at our WF right now.

My oat base is Holly’s Goji berry made in the rice cooker with 1.5 cups water, porridge setting and timer set. I also added cinnamon, salt and vanilla, and stirred in cottage cheese and half a banana. I’m liking the banana more solid in the rice cooker oats since it doesn’t really get whipped in the same as stovetop. Coconut butter + almond butter on top. I haven’t been adding granola or anything grainy on top since I’ve been using a bigger oat portion.

Here’s a glimpse at our new porch furniture that Matt was able to pick up. It took me 30 minutes to unwrap the chairs from all their packaging. Love the colors! Not sure what exact arrangement we’re going to use. The loveseat is just long enough to lay down with a book.

    Your furniture looks great! I love the sun-drenched porch; I hope warm weather gets there for you soon because lounging on the loveseat and curling up in the sunshine with a good book sounds pretty much as perfect as can be 🙂

    Have you ever made your own coconut butter? Absolutely wonderful. And much easier on the wallet, I must admit. Just don’t kill your food processor! Woops …

    Your porch is beautiful! I’ve added one to my dream-house requirements – who doesn’t love all the natural light?!?!

    Love that porch furniture! I had coconut butter in my oats this morning too after a pretty long hiatus (totally forgot about it in the back of the pantry shelf!). I think it rivals nut butter for me. Love that stuff 🙂

    I loooove coconut butter. I even eat it straight out the jar with a knife (when it’s solid). 🙂

    I actually sliced up a banana this morning and dipped the slices in melty coconut butter, then put them on a plate in the freezer and turned them into magic shell banana bites! not as good as I had hoped, but still pretty good. I am consuming that stuff like crack. I think I need to hide it somewhere in my house to make it more complicated to eat. I loved reliving the Jeni’s experience with the photos from last night…. YUM!!

    So, I am not using a slow cooker for my oats, but I have been reading your page from the beginning to get more calorie counting/cooking ideas. <3 You used to add pear to your oatmeal all the time, and I love it!!! Just stopped by to tell you how good it is. And congrats, K&M on your soon-to-be new addition!!!

    Hmmm. Coconut butter. I haven’t watched your video yet, but perhaps you could tell us if it’s different from coconut oil or coconut manna? I’ve never tried anything labeled coconut butter, but love stirring manna (coconut oil + meat) into my oatmeal.

    Your new porch furniture is beautiful and looks comfortable. You sure have great taste! One suggestion though, if you don’t already take your cushions inside when you are not using them you might consider doing it until about May or June. Two reasons–with the cold nights, they might attract critters that will burrow into them (the kind that can slip in through an area less than the size of a dime), and the morning dew can cause some mildew to develop until the days are long and warm enough to quickly evaporate it from the cushions (summer time). Otherwise, you might just be replacing the cushions every year.

    Glad you are feeling some better…the boiled eggs look delicious! Love the “Springy” colors of the new furniture 🙂 Brings back soooooo many memories seeing the orange juice and thinking of how many gallons I must’ve chugged down when pregnant with my first baby.     Totally random, but have you heard anything about oats being beneficial for breast milk production? One of my friends is having issues with her milk supply and all the things she’s been trying recently have not helped much. I seem to recall hearing somewhere that consuming a daily serving or two of oats could help increase the production. Just wondered your thoughts, since you’re a RD-Mom-to-be.
