Pumpkin Party

Up and at ’em at the gym this morning. I don’t think I can bike there at 5 anymore. It was just too cold. The wind was horrible biking fast.  If the gym was just a little bit closer I would suck it up, but 2.5 miles is just too far! I will definitely continue to bike there during the day, but I think this may have been the last of the early mornings. Luckily I had company this morning so I wasn’t scared in addition to being cold.

Once home I showered and dressed as fast as possible because I was SO excited about my breakfast!!!

This is what pre-made oatmeal looks like when put into a bowl. Nothing some heat and milk can’t take care of!

Today’s mixture involved:

  • Premade oatmeal base (3/4 steel cut, 1/4 rolled, milk)
  • 1/2 cup canned pumpkin
  • 1/3-ish cottage cheese
  • 2% milk for rehydration
  • Coconut
  • Brown sugar
  • Pumpkin pie spice
  • Toasted pumpkin seeds
  • Spoonful AB

I am off to Organic, then studying for most of the day, then GOTR, then the husband is bringing me a picnic dinner (!!), then Micro!

    interesting that you loved it because i made something similar this morning (oats, pumpkin, coconut, plus acouple of cranberries) and i didn’t like it at all. guess i should blame the crans?

    If it’s even close to as cold in the morning there as it is here, you’re a trooper for biking this long!! My pumpkin oatmeal this morning was amazingly delicious too 🙂

    i didn’t bike this morning 🙁 the wind chill was -1ºC and there was a little bit of snow on the grass (the road was clear though)
    i’m a little angry with myself for wussing out but i just really didn’t feel like being blown off my bike by winds. plus i want to be more comfortable biking in this super cold while also watching out for ice patches. oh winter. where did fall go?
    i’m going to keep eating my pumpkin and squash, mentally channelling autumn back! i expected to have at least three more weeks if not a month.
    boo to snow in october.

    Hey Kath– when you pre-make your oatmeal, do you make it more w/water at first b/c you know you’re going to rehydrate it later w/milk??

    Ooh I ran this morning and the wind was coming in huge gusts! I must have looked hilarious in my spandex/shorts combo with my reflective vest and red gloves. I guess I’m lucky it was still dark out 🙂

    Do your pumpkin oats taste sweet. The last and only time I tried to make them it was like eating raw squash for breakfast. I threw it out. ANy advice?

    Hi Kath,

    How long does canned pumpkin keep in tupperware after the can is open? I love it but eat it in half-cup increments and don’t necessarily want it every day, but I also hate wasting stuff. My rule of thumb is 5 days but am curious what you do since you seem to have it a lot but not every day either.

    Had a bowl of your pumpkin recipe oatmeal before a tough hilly ride in Marin yesterday and felt great. Usually I need a luna bar part of the way. Pumpkin oats are my offical pre-ride breakfast now. I love the bowl that the oatmeal was in today, may I ask where did you purchase that one? Its only 54 right now but way too dark to ride at 6 for me.

    I see you liked the Tim Hortons tea. TH is so popular in Canada!

    I was wondering something earlier Kath. Do you ever think you’ll go back to your calorie counting days? Do you feel that you snack more than when you counted calories? I just ask because I find for myself, when I am counting calories I snack less because I am more AWARE of everything I put into my body. Are you much happier now without the counting or do you find sometimes you do it anyways?

    i almost bought pumpkin at the grocery store this week to make pumkin oatmeal but decided not to for some ridiculous reason that i don’t remember. now-it’s a necessity. i need pumpkin oats!

    Tim Horton’s reminds me of my summers as a kid in Canada. Lots of Timbits and Timmy’s coffee.

    I’m curious (and I’m sure you’ve answered this a million times but I will ask again)… what time do you go to bed in order to wake up at 5am?

    (Also… I had pumpkin oats this morning, too! I used 3/4C and it was MEGA creamy… I needed some extra brown sugar to make up for it, oops!)

    rebecca: try freezing some of your canned pumpkin in a freezer-ziplock. I always do that whther I have canned or freshly pureed squash/pumkpkin because then there’s less pressure to eat it.

    Oh yummers, pumpkin tea AND oats?? 🙂

    No, I made it with milk. I still like the cream-cooked texture more. I might make my steel cut without milk next time so I don’t end up having to mix in the rolled to absorb the extra liquid or wait for it to all cook in/out, but I always make my rolled in advance with milk.

    They are definitely not sweet, but I find that the BANANA makes all the difference. Without the banana it is much more squashy. As you saw today, I can eat it both ways (but I did add brown sugar today) but next time try cooking it with a banana and the sweetness improves the pumpkin too.

    I really have no idea. I usually use mine within a 7 days and have never had it go bad on me.

    I believe it’s from Pier 1 two years ago.

    I won’t say I won’t ever go back to counting food-journal style. If I gained weight and wanted to lose again I might, or when I have a baby I might both to ensure I’m eating enough and to lose the baby weight. I just don’t know.

    I don’t know if I snacked more or less. It’s too hard to judge.

    I don’t know if I’m happier or not because counting never bothered me, but I certainly have more time and have enjoyed cooking more without measuring.

    I aim to get in bed at 9 and be asleep by 9:30. I need at least 7 hours to be sane the next day, but 8 is ideal.

    Kath – sorry to ask more about the oatmeal… but when you reheat it, are you doing that on the stove? Or in the microwave? How much extra milk do you put in to rehydrate it?

    Wow what a great idea, I’m going to have to try that as I have some leftover pumpkin puree after making my pumpkin curry. Thanks for the recipe – I’ll try making it with soy milk & agave nectar, as I can’t do dairy or sugar.

    i wish i only had 2.5 miles to bike 😛 almost 8 miles is long.
    do you have a good light + blinky for your bike? that makes riding in the dark much safer.

    When I microwave like this I add it after th oatmeal is hot, and then microwave for only about 30 seconds more. On the stove top, I microwave it for about 30 seconds to get the chill out and pour my hot oats on top. You can taste it, but it’s not overpowering at all. Just start with less.

    I just wanted to tell you you inspired me to try Okios Greek Yogurt. I love mixing stuff in plain yogurt. yum! So Ihad it for a snack today with cinnimon and almonds. It was interesting at first. It reminds me of cream cheese but is was yummy! Thanks for inspiring me to try so many foods! (next I need to find flaxseed)

    Hi Kath- Can you give us a ballpark of how much brown sugar you add to your oatmeal to sweeten it up? I’m sure it depends on what other delicious and sweet fruit, etc you add on any given day but today with the pumpkin for example?

    I just put a half tsp or tsp on top. Not much at all. Just enough to get a little sweetness in each bite (since I eat from left to right!)
