Pump + Plump

Body Pump was great. Lauren met me there and she did great this week! She ALSO brought me a jar of SUNFLOWER BUTTER!!!!!!!! WHEEEE!!!!

The Local Food Hub also delivered our local produce to the bakery and brought us blackburries!!! Poppin ‘em like candy!

After Pump (which was killer on the upper body today – feeling rather weak up top!) I showered and biked down to the bakery. I always arrive right at 12 when our lunch rush begins and had to postpone lunch a bit. Finally got to sit down around 1PM to a delicious sandwich-turned-salad!

I topped some garden greens leftover from our employee meeting with the makings of our Tofu & Pesto sandwich

I also brought in a chopped peach from home. I was going to bring him in whole, but I realized he would be majorly squished from my gym clothes, so I chopped him up instead. I much prefer chopped fruit anyways!

This was one of those healthy lunches that leaves you warm + fuzzy inside because it was so delicious + nutrition : )

It’s time to tackle June payroll, taxes, sales tax, and other “close the books” expenses. Not the most fun part of running a business!!

T-4 hours till First Friday Fun!

    While I lived just a little too far away (Northern VA) to make a trip to Charlottesville easy (I’ll make it there sometime!) you inspired me to seek out my local Great Harvest Bakery (Vienna, VA). Went there this morning and picked up Red, White, and Blueberry scones for 4th of July weekend, a carrot raisin muffin, and got offered a free sample of apple-scrapple bread, which I am now eating along side my lunch salad. Yum!! I tried to explain to the two guys behind the counter that I was coming there because I got inspired by your blog…but I am pretty sure they thought I was crazy! Oh well. 🙂

    What time does the bakery open and close during the week?

    I’ve never had pesto! (I don’t think?) I’m addicted to marinara – with cheese – oye.

    Are you getting many customers that stay to eat? Or take take and go?

    Do you eat “in the front” where others can? Or have an employee room to ‘hide-away’! 😉

    Well I think that would be the most fun part of running a business (after nibbling on yummy bread, that is), but that is what you get for “talking to” an accountant!

    Also, the peach and berries look AWESOME!

    Mmmm…those blackberries look perfect! Glad you liked the sunflower butter 😀 The tofu and pesto sandwich was so good! Eating it on a salad was a great idea…..but on Dakota was equally amazing 😉 Speaking of peaches, we just went peach picking today. Yum!

    The blackberries are gorgeous. Between them, the chopped peach (chopped fruit does rock), and the tofu pesto? Sounds like a good food day to me. 🙂 Good luck with the “close the book” expenses. It’s nice to have that sort of work over and done, isn’t it?

    I’m much more likley to eat my fruit servings if I chop them beforehand. I don’t know what it is, maybe that’s easier to eat while reading/working? Either way, it helps to get my fruit in!
