Prescription Walk

Man, I have felt almost sick today from being so sleepless these past few nights. My nap helped a little, but after snacktime and blogging, I felt kind of sick. I peeked outside at the gorgeous day and decided to go on a walk. “Real” exercise was out of the question – in fact I haven’t officially worked out since Thursday! When I’m sick or really low on sleep, rest always get priority. I have been on my feet a lot, however.

So a walk was just what the doctor ordered

I took Better Homes & Gardens with me and walked for an hour. I felt so much better!!

Once home Matt and I put together a simple dinner – featuring garden greens. Our family is growing tall!

We sauteed the greens along with a slice of bacon

And served them with egg + toast

This would be egg smothered in Dr. Pete’s Praline Mustard Glaze. Best. Sauce. Ever!!!!! [Just went out last week via OpenSky!]

After dinner we sampled the Sabores del Sur that came in the Foodzie Flavor Box from Foodbuzz!

I didn’t really think I was going to love these – I thought they’d be really dry and crispy but they were DOUGHY!! My favorite texture. Barely baked and so moist. And of course the caramel was fabulous. I wish I had more!!

While Matt put together dinner, I made a lentil salad to pack for our lunch a few days this week. I love chilled salads that are bean or grain based with chopped veggies and a few fun mixins

Lemony Lentils

Serves 4

Ingredients

  • 2 cups green lentils, cooked (these hold their shape better than brown or red)
  • 1/2 cucumber, chopped
  • 2 carrots, chopped
  • 5 small radishes, sliced
  • 2 tbsp sun-dried tomatoes in oil
  • 1 tsp herb salt
  • 2 tbsp toasted pecans
  • 1 slice bacon, crisped (optional)
  • 1/3 cup Dr. Pete’s Lemon Pear dressing [also in OpenSky bundle] (Or you could use a mix of dijon mustard, lemon juice, garlic and a bit of mayo

Method

  • Cook lentils
  • Cook bacon, chop
  • Chop veggies
  • Toast pecans
  • Mix together
  • Pour on dressing
  • Portion into tupperware for busy weekday lunches

    It seems like nice weather there! It’s almost too hot for walking here, above 90!

    I just got back from an hour walk to downtown and back. I feel like a new person. I think walking around the bakery is definitely a real “workout.” Especially walking around while snacking off the breadboard :).

    Man those cookies were popped open 2 min. after they arrived on my doorstep. Awesome, huh?

    Sorry to hear you’ve been getting so little sleep you’re feeling sick. Ugh. I currently avg about 5 hrs a night. Sometimes more like 4. And sometimes it’s 3 hrs + 2 hrs later. NOT ideal but I can totally relate to your sentiment!

    So glad you got a nap in, though!

    And those cookies…I JUST opened my Foodzie box from being gone in Aruba for 3 weeks and those cookies were in it and I almost just gave them away to my hubs for fear of dryness…good thing I didnt 🙂

    I totally know what you mean, re: sleep. I started a new job last week and couldn’t get even close to 8 hours to save my life! My mind was racing and I had “no sleep rage.” Feeling better now, though. Hope you do too.

    I love lentil salads! They are the perfect base to any meal and make such great lettuce toppers!

    And walks really do heal all! I always feel great after going for walks when I am feeling tired and stressed!

    You can read a magazine while you walk outside?! That’s like patting your head and rubbing your stomach at the same time. Too difficult for me! (Now I’m trying to pat my head and rub my stomach!)

    I like to pre-make cold salads too because as the days go on the flavors develop more and it gets better and better tasting. It’s like magic 🙂

    I hate missing out on too much sleep. I always get a strange nauseous feeling. No bueno.

    I had alfajores fresh from the bakery in Peru last summer and fell in love. I have seen recipes, but I’m afraid I’d never match them – guess I’ll just have to go back to Peru or order those from Foodzie

    I know exactly how you feel. Ever since having my son, who is 13 months old now, I have been seriously lacking sleep. Like 5-6 hours per night for the past year. Most days I feel really sick and headachy and I’m pretty sure it’s from lack of sleep. I hope you catch up soon! I love reading about your adventures with the bakery. It sounds like a dream come true for you guys!

    I’ve read that one of the most stressful times in people’s lives is starting a new job. Keep taking naps when needed and things will settle into a comfortable groove soon. You have your healthy lifestyle on your side!

    Good call on not doing a strenuous workout- rest should always take priority! And also nice going on batch cooking the lentils- i’m kicking myself for forgetting to cook up a pot of quinoa for this week’s lunches!

    I’m really curious as to how you walk and read at the same time? I think I would keep tripping and bump into things and people… How great to be able to harvest greens from the garden! My crops have started coming too – very exciting. Do you spend a lot of time weeding and taking care of the garden?

      It’s easy with a magazine and photos. You just use side vision to see what’s coming. And I wouldn’t do it in a crowd or on the edge of a cliff 🙂

    Long time reader, first time commenter…
    I tried my first ever grain and bean salad tonight! I cooked quina for the first time and added black beans, read bell peppers, tomatos, cilantro, 1/4 squeeze of lime and some avocado avocado. I topped it with a bit of salsa and greek yogurt. It was AMAZING!

    I love Alfajores. I found a good recipe a few years back. I like being able to bake treats at home, but it’s really testing for my self-restraint to have a full cookie jar!

    I hope your night was very restful and refreshing!! I think change, whether good, bad, or incredibly exciting, does a job on our physical and mental energy levels. I always notice that I’m exhausted after a job change or a move or anything. But then after a week, I’m typically back to my usual self. 😀

    I love bean and grain salads in the summers too. I’ve been making so many of them lately! Right ow my favourite is a black bean + mango one.

    I’m so impressed with your ability to walk outside and read a magazine at the same time! I would inevitably injure myself. I’m such a klutz! 🙂

    I was going to whip up a Lentil salad with sweet potatoes for lunches this week, but might just have to try this one, instead!

    Long walks are just glorious… have you ever considered getting a dog? They make the best walking partners–not to mention the best friends–in the world! The reason I thought of that was because of the bacon in your post and the fact that I’m making bacon-cheese doggie treats for my boy today, and we just got back from a long walk, too.

    Take care of yourself Kath. Sometimes we can go a long time runnin’ on adrenaline, but sooner or later, we have to crash. We are only human. In alot of ways we can get through all the things but then after, when everything is up and running and it’s all settled down, that’s when we hit the wall. In any case, get some rest.

    Hi Kath! If you want more of the alfajores cookies the company who made the ones you tried (Sabores del Sur) attends a weekly artisan food and farmers market that I go to. I’m also a hop skip and jump away from lavender salt if you are ever in need! =)

    hey, kath! for the lentils recipe, did you use 2 cups of dry lentils or cooked lentils? also, what ratios would you recommend for the homemade lemon dressing? thanks 🙂

      2 cups dry!

      For the dressing, I’d do equal parts lemon, olive oil and honey plus a little garlic and a pinch of salt
