Piece Of Cake (And Some Oats)

Getting up was a piece of cake this morning – because it was WARM out. We’re already at 60* and expecting a high of 80*! It’s not going to last though 🙁 At least I’m headed to hot Africa next week! Hopefully when I return, so will the spring weather. There weren’t very many people at the gym this morning – guess they all slept in!

Matt got up to go to the gym with me to keep himself on bakery time. I love it when he goes on Mondays because it’s really our only day to workout together these days. And we get to bike there!! (I don’t bike in the dark alone). I didn’t even need a fleece today – just shorts and a long sleeve T. After our bike ride I did 30 minutes on the Stepmill and then upper body weights for my biceps and shoulders. My storeness is mostly recovered from Saturday, but I didn’t do anything strenuous. The bike home was nice!

Ahhhh – great bowl of oats today!

  • 1/3 cup half oats, half 9 grain cereal, 2/3 cup water, 1/3 cup vanilla soy milk, half medium banana, pinch salt, splash vanilla
  • ~1/4 cup cottage cheese, stirred in at end (today’s bowl was on the soupy side)
  • The last of my Koka Moka ProBar 
  • A few walnuts + peanuts
  • Coconut butter
  • 1 tbsp flax
  • Spoonful Barney Butter (the end of my jar – so super dry, which I LOVE because it stays on my spoon!)

Off to Winthrop. I see another picnic in the future! I’ve got 2 huge midterms on Wednesday, so I need to be in study mode for the next 48 hours. Then it’s all downhill till Africa with travel preparations.

    I am very jealous of your nice weather. Friday it was beautiful where I am, but it’s been rainy and barely above freezing since then. I am so ready for spring too!

    It’s so exciting about you going to Africa! I have a friend who’s done 2 missions there and he loves it!!! The first time he went when he came back he couldn’t stand to sleep in his bed for like 2 months he felt so privledged! I don’t think you should go that extreme. 🙂

    I’ve been in the process of moving/unpacking so I haven’t been online as much, but I see you are going to Africa! Where are you traveling? My husbands whole side of the family lives over there. That is way exciting. I can’t wait to make our way over there one day!

    I’m out in CA and there were way less people than usual at my gym this morning, too! I was thinking maybe it’s the time change – losing an hour of sleep plus it was dark when I left my house, and usually it’s getting light by then…

    The oats look yummy as usual!

    Question – did I miss something, or when did you start to decrease your milk to water ratio in your oats? I thought you usually did a half milk, half water ratio? Do you even taste the milk, with that small of an amount?

    Is the white stuff on top of your oatmeal the coconut butter?? I’ve never actually seen it..I actually first thought it was feta cheese which would be an interesting choice. Also, I know it has made appearances before but that orange candle is so cute!! I love it, hope the weather stays nice down there-Lisa D.

    Sunburn isn’t bad at all today! It’s probably turned into a tan by now..

    The hot cereal I’ve been mixing in calls for 2:1 ratio of liquid to grain, so I doubled the water – didn’t decrease the milk at all. Yes, you can still taste it.

    Yes, that’s the coconut butter. It’s kind of chalky, but melts in and gives a coconutty flavor. I don’t think I’d buy another jar (I’m still only about 1/3 through mine from November!) but it’s been fun to have.

    Question for you regarding coconut butter & coconut oil. If someone (like me) is watching their weight and cholesterol level, is it bad to eat these foods? I checked the nutritional content online and it showed they were high in saturated fat, which I heard raises cholesterol level. But it confuses me because I thought these were two healthy foods…I figured I ask you because you eat so healthy and I trust your judgment! Thanks!

    A tsp of coconut butter on oats probably isn’t going to have much impact, but if I were watching cholesterol, I probably would be putting coconut on everything. If you don’t already own coconut butter, I wouldn’t go out and buy some, but coconut in moderation is probably fine within the context of an otherwise low in sat. fat diet.
