People Food.

Lunch today was easy to pack…. and I’m sure it will be fun to eat!

No, it’s not dog food. It’s leftover sweet potato lentils!

IMG_2092 (640x427)

Served with a handful of CINNAMON Food Should Taste Good chips!! I had a couple of these while I packed my lunch. They’re light and airy and are a perfect hybrid between a corn chip and a graham cracker. <3

IMG_2099 (640x427)

I’m hoping to use them to scoop up my lentils!

IMG_2098 (640x427)

Lastly, a family of strawberries 🙂

IMG_2096 (640x427)

IMG_2091 (640x427)

And for dessert, nothing goes better than chocolate and mint! (Except cheddar + jam!)

IMG_2104 (640x427)

Tonight I am accompanying my dear husband to the Charlotte Homebrew Club monthly meeting! Since the meeting is at a restaurant right near my hospital, and the uptown YMCA is on the same block, my plan is to head to the gym from 4:30-6 and get in a workout, shower and then meet Matt and Diana + Dan at the restaurant for a quick dinner before the meeting.

To get myself ready for the workout part, I plan to eat this when I leave work!

Love the Fruition bars!! They are packed with chia seeds.

Happy Hump Day to you!

Homebrewing sounds like so much fun, although I would probably only brew ciders since I’m not a big beer fan. Isn’t it wonderful that more fruit is coming into season? I can’t wait for summer to arrive!

Your pictures in the mint are so pretty!

What are some things you do with your mint? I’m gardening this week, and so far, I have chives and dill in my herb box. Your pix make me want to add some mint, but I’m not sure I would use it. 🙂

Looks like a great lunch. Lentils sound amazing. The nutty flavor of lentils with sweet potatoes and cinammon. Defiantely worth a try honestly it does remind me of some of the baby food I used to make my kids about a year ago. Everyone in the family would eat it though.
