Three cheers for sunshine and sprinkles! I really thought today was going to be cold again, but somehow 52 degrees now feels balmy. PLEASE stay nice weather! We’re going to do a lot of walking today, so I’m very excited about that!

  • 1/3 cup rolled oats
  • 1/3 cup milk
  • 1/2 cup water
  • 1 tbsp chia seeds
  • Half big ripe banana
  • Pinch salt
  • Splash vanilla
  • Honey roasted peanuts
  • Great Harvest jam
  • Sunflower butter
  • Sprinkles!
  • Coconut

    I’m not a big oats fan (sorry!), but I think sprinkles and a groovy bowl might make it as appetizing as yours looks.

    Kath, when you use vanilla, what type of vanilla do you use? Normal baking vanilla extract? Or is there a “real foods” version you recommend? I have heard that vanilla extract (the kind our moms used to make Tollhouse chocolate chip cookies) has some dangerous additives. Can you please, in all your RD glory, talk about this a bit?

      I just use pure vanilla extract with water, alcohol and sugar. Maybe you’ve heard negatives about imitation vanilla, which is much cheaper?

    Looks like a lot of fun. Maybe I’m just boring but I like my oats simple- plain with fresh fruit. Then I actually can taste the fact that it’s oatmeal! Guess that wouldn’t make for such fun photo though.

    Is it super windy down there? It was so bad up here that the porta-potties at my race were knocking over and sliding through the streets like they were on wheels!! Hilarious — as long as you weren’t the poor person stuck in them.
