Packin’ It In

For once I haven’t felt rushed trying to leave the house! I spent the morning cleaning, packing and going to the gym. I got in a good workout: 30 minutes on the Stepmill, 15 on the ET, and 10 upper body weights. Too bad it was raining when I left so I couldn’t bike 🙁

Came home, packed more, showered, lunch.

I cleaned out the fridge!!

Raw tempeh cubes –

On top of romaine, drizzled with lemon, EVOO and honey, snap peas, avocado and raisins. Raisins MAKE salads but I always forget to add them!

SIDEBAR: When I was home last weekend my dad said seriously: “I’ve noticed something on your blog and cannot figure out what it means. EVOO. I searched your blog high and low for an explanation but never found one. You should really provide an explanation to your readers.”

My response: “Did you Google it?!”

NOPE. If you do you get about 100 sites explaining that it’s Extra-Virgin Olive Oil. A term Rachel Ray made popular.

So now it’s documented on the blog too!

With my salad I had Walnut Butter + Blueberry Jelly on Flax Oat Bran

And a pear, which I am saving for later because that salad filled me up.

NOTE: I’m not going to be responding to comments while I’m traveling, so if you have a question please save it for Monday. Or just ask the other readers. I guarantee any question for me could be answer>ed by some of my loyal readers who know every detail of KERF!

    You know how I feel about tempeh 😉 I’m pretty sure it would have kept until you got back…and then for a year or two after that…

    Sounds like you definitely had a productive morning! That walnut butter/blueberry jelly on the flax oat bran looks SO good!

    i have a question that i would love readers to weigh in on regarding lunch with co-workers. my co-workers like to go out to lunch quite a bit, but i prefer to save the dollar bills and calories for a meal that i will truly enjoy. when they go out to lunch i know i miss out on some work talk, but mostly just gossip. they def think i am crazy though for only going out with them like once every other week. how do i explain/handle the situation?

    Kathleen – I totally have dealt this problem too. Here is what happened to me:

    I used to just decline any invite to get lunch and eventually they stopped asking me all togther – NOT what I intended to happen.

    So, now I go on occasion, say only on Fridays. I would suggest you pick 1 or 2 days a week and go with them. The other days bring your (healthy) lunch 🙂

    This is a good balance, and that’s what this lifestyle is all about, right?

    Salad looks good. I think sometimes “clean out the fridge” meals are the most fun because it forces you to be a little creative and put things together that you would have thought to pair.

    Kathleen–I’ve run into that problem, too. I think going every now and then can be helpful. I also sometimes just bring my lunch along (or eat it early) and then order some iced tea or something at the restaurant. That way, I get to sit with everyone, but I still get to eat the food that I want to.

    I grew up in New Orleans. Been gone for 14 years. What I miss most is the French Quarter and the food. If you’ve never had beignets you have to try them. You can get them at the Cafe du Monde across from Jackson Square which is the most photographed spot in the city. Looking forward to hearing about your trip.

    Thats funny about the EVOO. My mom did the same thing. I love Rachel Ray. When I went home for Christmas, I kept saying EVOO. My mom finally gotso fustrated that she asked what I was talking about.

    JohannaB is right. If you’ve never had beignets you should certainly stop by Cafe du Monde. They are def a splurge treat, but classic N.O. fare and OH SO WORTH IT!

    Raisins do make a salad 🙂 My current fav salad topping combo is avocado, raisins, and sunflower seeds…creamy, sweet, salty, chewy, and crunchy all at once!

    I just saw on Ellen that she’s giving the commencement speech at Tulane this weekend!

    I’m sure you mentioned this but goodness how luckylucky to see two of talk tv’s best in the same month – Oprah then Ellen! Enjoy every minutee.

    Have fun on the cruise too! I am jealous…I love cruises, my husband and I have been on quite a few. Although they definitely are not always kind to the waist line between the never ending food and drink. But after reading how dedicated your are to health now, I think you will have no problem.
