Packed Buffet

Test went well!! I don’t have a clue as to how I did, but I put an answer> for every question and was fairly confidant, so we’ll see.

Kelsey and I jointly packed lunches – although we had to eat separately again! It is so fun to eat someone else’s food 🙂

I assembled sardine sandwiches!! I mashed a can of mustard and dill (sorry, don’t have the brand) sardines into a paste and spread that on some WW sourdough along with pickles and spinach. I thought it was great – I sure hope Kelsey did! She likes sardines, but you never know.

K packed vegetable salads – she is so good at arranging food in beautiful ways! My tupperware was neatly displayed –

Plus a homemade dressing – Here’s the recipe: Taste Taste EXPLOSION!!

I packed a fruit cup with kiwi, strawberry + banana

And she packed an assortment of cheeses (with my Kashis underneath)

Last (but not least!), K packed some sugary almonds and pistachios –

SO – what did I actually eat!? The sandwich, salad and fruit. A slice of cheese and 2 almonds. I am saving the rest for snacktime!

Think I’ll be hungry today!? I’ll let ya know what all gets consumed and what gets saved. Still looking forward to split pea soup late tonight 🙂

After lunch my friend Lauri and I went for a 45 minute walk to enjoy the sunshine while studying for Clinical. Great way to learn!

Better put my computer away before my Foodservice professor gets mad!

    Kath, do you eat the bones of sardines? A friend of mine does, apparently for the calcium. I thought it was odd. I have actually never had sardines and have been too afraid to try. I think the seasoned ones might be ok to start with!

    i just can’t seem to get up the courage to eat sardines, or even try them. don’t they look like little fish? The rest of your lunch sounds great, but I think i’ll pass on the sardine sandwich… 🙂

    Do your professors ban laptops? Some of mine are absolutely against computers in class, but others kind of expect them.

    All you need is an “I Love You” note on your napkin and it would be just like the lunches Mom packed, well minus the Capri Sun and PB&J on Wonder Bread.

    Yum! What a delisious buffet! You guys have the best ideas for quick, simple, healthy lunches. LOVE the ideas!

    I’m sure you’ll do great on the test! Glad to hear you were able to get outside and enjoy the beautiful day. Studying is just that much better in the great outdoors!

    Re. Sardines,
    I absolutely eat the bones – they are so small they would be impossible to remove. They are soft too. Think of it like eating the membranes of an orange? The sardines are in “whole fish” form in the can, but you just mush them with a fork before you see what you’re eating. It’s really like an upgraded tuna salad!! I see a video in the making..

    Actually, no. Only that professor bans them!! I take notes on my computer in my other 3 classes. It’s wonderful since I can make revisions and be all organized!!

    I love that Cabot Seriously Sharp! I grew up in New England and we always called it “lumberjack cheese” because of the plaid wrapper! We don’t really have Cabot in the west- I can find it occasionally, but not as often as I would like! I’m jealous! Hope you enjoyed it!

    We used to have that in elementary school where we would pack a lunch and swap with someone else on a special day. It was so fun! Good thing you 2 have the same food tastes!

    Kath, I have a quick question I’m hoping you can help me with. What exactly are mono- and diglycerides? Are they just fancy words for trans fats? Should they be avoided as well? I’ve seen them on quite a few ingredient lists, but have never truly known what they were. I’ve tried doing some of my own research on them, but most of the information I found is pretty conflicting. Thanks!

    I’m sure you rocked all of your exams today! Eating other people’s food is a lot more fun, I think it’s because they buy things that you typically wouldn’t 🙂

    I so wish I could say that a sardine sandwich sounds good… but I just can’t. 🙂 Maybe it’s one of those things that someone else has to make for you that *knows* what they’re doing, and then you get to try it. Make sure you pass along Kelsey’s verdict on it!

    never tried sardines don’t think I would like but everything else looks yum. That snack bar looks good. I love anything healthy and easily portable.

    Monoglycerides (and di-) are just what they sound like – a glycerol with one fatty acid. They are products of the breakdown of triglycerides. I looked them up in my text books and one said that they are the unit of fats that is absorbed into intestinal cells (so the triglyceride is broken down to be absorbed and then reassembled for storage). That makes them seem normal and natural. But what confused me is that my other (newer) textbook’s only definition for them was that they are used as emulsifers and contribute to the sensory properties of fat but have fewer calories (5 kcal/g instead of 9). So that’s probably why you’d see them on an ingredient list. HTH.
